I got this recipe from my brother-in-law, and it is a super easy side dish that tastes great and goes with just about anything.

1/2 cup butter
1 cup rice
1 (12 ounce) can beef consomme soup
1 (12 ounce) can French onion soup

Steps:

  • Melt butter in microwavable casserole dish.
  • Add rice, consomme' beef, and french onion soups.
  • Cook in microwave for 8 minutes.
  • Stir and cook for another 8 minutes or until tender.

3 tablespoons butter, plus extra for the dish
2 cups water
1/2 teaspoon salt
1 cup long grain brown rice
1 cup chopped onion
2 garlic cloves, minced
1 1/2 lbs spinach, trimmed and chopped (regular or baby)
4 large eggs, beaten
1 cup milk
1 1/2 cups shredded sharp cheddar cheese
1/4 cup chopped fresh parsley
1 1/2 teaspoons salt
1/2 teaspoon pepper
1/4 teaspoon cayenne pepper
1/4 cup sunflower seeds
paprika, for sprinkling

Steps:

  • Preheat oven to 350°; butter a shallow 2-quart casserole.
  • In a saucepan, bring the water and salt to a boil; stir in the rice.
  • Return to a boil, cover, and decrease heat to low; simmer the rice for 35-40 minutes, or until the rice is tender and the liquid is absorbed.
  • In a skillet, melt the butter over medium heat; add in the onion and garlic; saute for about 5 minutes, or until tender.
  • Add in the spinach, a few handfuls at a time, to the onion mixture; cook over medium heat until the spinach is wilted, 3-5 minutes.
  • In a large bowl, thoroughly combine the cooked rice, onion and spinach mixture, eggs, milk, cheese, parsley, salt, pepper, and cayenne.
  • Transfer to the casserole; sprinkle with the sunflower seeds and paprika.
  • Bake, uncovered, for 35 minutes, or until the casserole is set.

3 cups vegetable broth
1 1/2 cups brown rice, uncooked
2 cups onions, chopped
3 tablespoons soy sauce
2 tablespoons butter
1/2 teaspoon thyme
4 cups cauliflower, chopped
4 cups broccoli, chopped
2 red bell peppers, chopped
2 garlic cloves
1 1/2 tablespoons olive oil
1 cup cashews
2 cups reduced-fat cheddar cheese

Steps:

  • Preheat oven to 350.
  • In a 3-quart baking dish combine broth, rice, 1 c onion, soy sauce, butter, and thyme. Cover and bake 65-70 minutes or until rice is tender.
  • In a large skillet saute veggies, garlic, and remaining onion in oil until tender. Spoon over rice mixture.
  • Cover and bake 10 minutes. Sprinkle with cashews and cheese, serve after cheese melts.

1 1/4 cups vegetable broth
3/4 cup water
1 cup brown rice, raw
4 tablespoons flour
1 cup celery, chopped
1/2 cup onion, chopped
19 ounces chopped tomatoes
1 cup peas
1 garlic clove, minced
1 teaspoon thyme
1 teaspoon marjoram
1 teaspoon oregano

Steps:

  • Cook the brown rice with the water and vegetable broth.
  • Meanwwhile saute the celery, onion, and garlic clove.
  • Add tomatoes to the saute and bring to a boil; then simmer.
  • Mix flour and seasonings in a separate bowl and then add to the vegetables.
  • Cook 3 minutes then add the peas.
  • Pour into a baking dish and then cover with the rice.
  • Cook for 20min at 350.
