1-3/4 cups packed brown sugar, divided
1 cup all-purpose flour
5 tablespoons baking cocoa, divided
2 teaspoons baking powder
1/2 teaspoon salt
1/2 cup evaporated milk
2 tablespoons butter, melted
1/2 teaspoon vanilla extract
1/8 teaspoon almond extract
1 package (4.67 ounces) mint Andes candies
1-3/4 cups boiling water
4 teaspoons instant coffee granules
Vanilla ice cream, whipped cream and maraschino cherries

Steps:

  • In a large bowl, combine 1 cup brown sugar, flour, 3 tablespoons cocoa, baking powder and salt. In another bowl, combine the milk, butter and extracts. Stir into dry ingredients just until moistened. Transfer to a 3-qt. slow cooker coated with cooking spray. Sprinkle with candies., Combine the water, coffee granules and remaining brown sugar and cocoa; pour over batter (do not stir). Cover and cook on high for 4 to 4-1/2 hours or until a toothpick inserted in the center of the cake comes out clean. Serve with ice cream, whipped cream and cherries.

1 cup bittersweet chocolate chips
1/4 cup light corn syrup
1/4 cup water
2 tablespoons (1/4 stick) butter
2 tablespoons sugar, divided
1 ounce unsweetened chocolate, chopped
1/2 teaspoon peppermint extract
2 tablespoons sliced fresh mint leaves plus fresh mint sprigs for garnish
1 pint vanilla ice cream
10 chocolate-mint sandwich cookies, coarsely broken
1 pint green mint chocolate chip ice cream
Sweetened whipped cream

Steps:

  • Stir first 4 ingredients and 1 tablespoon sugar in heavy small saucepan over medium-high heat until chocolate is melted and smooth. Bring just to boil. Remove from heat. Add unsweetened chocolate and extract; stir until smooth. Set mint-fudge sauce aside.
  • Toss remaining 1 tablespoon sugar and sliced mint in small bowl. Set mint sugar aside.
  • Place small scoop of vanilla ice cream in each dish. Top with some broken cookies, then scoop of mint ice cream and more cookies. Drizzle 1 to 2 tablespoons warm sauce over each. Top with whipped cream. Garnish with mint sugar and mint sprigs.

3/4 cup sugar
6 tablespoons baking cocoa
1 can (5 ounces) evaporated milk
1/3 cup butter, cubed
3/4 cup miniature marshmallows
1 teaspoon vanilla extract
Vanilla ice cream
Nuts and maraschino cherries, optional

Steps:

  • In a large saucepan, combine sugar and cocoa; stir in milk. Add butter. Bring to a boil over medium heat; cook and stir until sugar is dissolved. Add marshmallows; cook until melted. Remove from the heat stir in vanilla. Serve with ice cream. Top with nuts and cherries if desired.

1/4 cup cocoa
1 3/4 cups very hot water
ice cream

Steps:

  • Heat oven to 350.
  • Mix flour,granulted sugar,2 tbsp cocoa baking powder and salt in ungreased square pan,9x9x2.
  • Mix in milk,oil and vanilla with fork until smooth.
  • Stir in nuts.
  • Spread in pan.
  • Sprinkle brown sugar and1/4 cup cocoa over batter.
  • Pour water evenly over batter.
  • Bake about 40 minutes or until top is dry.
  • Cool 10 minutes.
  • Spoon into dessert dishes and top with ice cream.

I love this recipe because it is so easy to make and yet it always gets 'oohs' when people see the candies and 'aahs' when they taste them! I've gotten several z-mails asking about the candy coating. They are wafers that you melt to then dip candies into to coat them. They are usually sold in the candy section of craft or baking stores. I've seen them in the candy making section of Wal-Mart also. If you look at the ingredients photo on Recipe #104941, you'll see a photo of them. They are a different 'stiffness' than white chocolate chips but some reviews have successfully used those when they can't find the candy coating. Hope that helps!

2 cups semi-sweet chocolate chips (12 ounces)
1 (14 ounce) can sweetened condensed milk, divided
2 teaspoons vanilla extract
6 ounces white candy coating (see note above)
2 -3 teaspoons peppermint extract
3 drops green food coloring

Steps:

  • In a heavy saucepan, melt chocolate chips with 1 cup milk.
  • Remove from the heat; stir in vanilla.
  • Spread half into a waxed paper-lined 8-in. square pan; (I personally prefer to line the pan with foil and grease the foil with butter) chill for 10 minutes or until firm.
  • Meanwhile, in a heavy saucepan over low heat, cook and stir candy coating with remaining milk until coating is melted and mixture is smooth.
  • Stir in peppermint extract and food coloring.
  • Spread over bottom layer; chill for 10 minutes or until firm.
  • Warm remaining chocolate mixture if necessary; spread over mint layer.
  • Chill for 2 hours or until firm.
  • Remove from pan; cut into 1-in. squares.

Absolutely sinful recipe I found in a friend's cookbook. It's one my favorite cake recipes. It also works great for birthdays.

1 (18 ounce) package duncan hines moist deluxe dark fudge cake mix
1/2 gallon brick vanilla ice cream
1 (12 ounce) can evaporated milk
1 1/4 cups sugar
4 unsweetened chocolate squares (1 ounce each)
1/4 cup butter or 1/4 cup margarine
1 1/2 teaspoons vanilla extract
1/4 teaspoon salt
whipped cream, for garnish
maraschino cherry, for garnish (optional)

Steps:

  • Preheat oven to 350°F; grease and flour 13x9x2-inch pan. Prepare, bake and cool cake following package directions.
  • Remove cake from pan. split cake in half horizontally. Place bottom layer back in pan. Cut ice cream into even slices and place evenly over bottom cake layer (use all the ice cream). Place remaining cake layer over ice cream. Cover and freeze.
  • For Fudge Sauce: Combine evaporated milk and sugar in medium saucepan. stir constantly on medium heat until mixture comes to a rolling boil. Boil and stir for 1 minute. Add unsweetened chocolate and stir until melted. Beat over medium heat until smooth. Remove from heat. Stir in butter, vanilla and salt.
  • Cut cake into serving squares. For each serving, place cake square on plate; spoon hot fudge sauce on top.
  • Garnish with whipped cream and maraschino cherry.
  • TIP: Fudge sauce may be prepared ahead of time and refrigerated in tightly sealed jar. Reheat when ready to serve.

My husband went to the Andes mints website and found this recipe. It is so easy and after letting it sit overnight - we couldn't wait to try it this am- it just melts in your mouth! So, good - now I'm going to make their cookies - you put the mint candy in the middle of each ball of dough. Oh, I couldn't find the Andes baking chips at Albertson's yesterday so I bought the box of candies - yummy! 1 (7 ounce) jar marshmallow creme
1 cup butter or 1 cup margarine
1 (10 ounce) package Andes mint baking chips
1 (5 ounce) can evaporated milk (about 2/3 cup)
1 teaspoon vanilla extract

Steps:

  • Lightly grease a foil-lined 9x9x2 inch pan; set aside.
  • Heat sugar, butter or margarine, milk and marshmallow creme in heavy 3-quart saucepan over medium heat until mixture boils, stirring constantly. Boil and stir for 5 minutes.
  • Add Andes Baking Chips and vanilla extract, stirring until chips are melted.
  • Immediately spread into prepared pan. Refrigerate overnight. Cut into 1 inch squares. Store in airtight container in refrigerator. For creamier fudge, let stand at room temperature 1 hour before serving.

This is a slow cooker dessert that will have them coming back for more and then asking for the recipe. Don't let the "mint" part scare you. It's ooey, gooey, fudgy goodness that you spoon straight from the Crock Pot and serve hot with ice cream, whipped cream and a cherry on top.

5 Tbsp cocoa, unsweetened
2 tsp baking powder
1/2 tsp salt
1/2 c evaporated milk

1/2 tsp pure vanilla extract
cooking spray
1 pkg andes creme de menthe thins candy (4.67 oz.)
1-3/4 c boiling water
vanilla ice cream
whipped cream
maraschino cherries

Steps:

  • 1. In large bowl, combine 1 cup brown sugar, flour, 3 tablespoons cocoa, baking powder and salt. In small bowl, combine evaporated milk, butter and vanilla. Stir into dry ingredients just until moistened. Transfer to slow cooker coated with cooking spray. Sprinkle with chocolate mint candy.
  • 2. Combine water and remaining brown sugar and cocoa. Pour over batter. Do not stir. Cover and cook on high for 3-1/2 to 4-1/2 hours, depending on size of slow cooker (larger slow cookers will require less time), or until toothpick inserted in center comes out clean. Serve with ice cream, whipped cream and cherries.
