Time 4h45m

Yield 8 servings

Number Of Ingredients 7

3/4 cup cinnamon candies, such as Red Hots
1/2 cup light brown sugar
4 large Granny Smith apples, peeled, cored and each cut into eighths
1 stick (8 tablespoons) salted butter
One 16-ounce store-bought pound cake, cut into 8 slices
Vanilla ice cream, for serving
Mint leaves, for garnish

Steps:

  • Combine the candies, brown sugar and 2 1/2 cups water in a large saucepan and place over medium-high heat. Cook, stirring, until the candies and sugar have fully melted, about 10 minutes.
  • Add the apples and bring to a boil. Cook until the apples are tender but not mushy, about 5 minutes. Remove the apples with a slotted spoon and transfer to a heatproof dish. Allow the syrup to boil for an additional 5 minutes to thicken and intensify. Pour the syrup over the apples and allow to cool. Transfer to the fridge and chill for at least 4 hours.
  • When ready to serve, warm a griddle over medium heat. Butter the griddle and toast the slices of pound cake for about 2 minutes per side, adding more butter as needed.
  • To plate, place a piece of pound cake on each plate. Top with a scoop of ice cream and 4 apple slices. Drizzle with additional syrup and garnish with the mint.

Butter, cinnamon and sugar. What better ingredients for apples and pastry.

Provided by Food24

Categories     Bake

Time 1h5m

Yield 8 servings

Number Of Ingredients 12

3/4 cup milk lukewarm
1 Tbs sugar
2 tsp dried instant yeast
1 eggs yolk only
1/8 cup butter melted
2 cup flour
1/2 tsp salt
1/2 cup butter softened
6 Tbs sugar
3 tsp cinnamon ground
4 Tbs almonds ground
2 Granny Smith apples grated

Steps:

  • Preheat the oven to 190ºC.In a jug, add the milk, sugar and yeast, set aside to foam. Add the egg yolk and butter and mix to combine. In a large bowl combine the flour and salt. Pour the milk mixture over the dry ingredients and stir with a wooden spoon until the dough comes together. Transfer the dough to a lightly floured surface and knead it for five minutes until smooth. Place the dough into a clean, oiled bowl, cover with cling film, and leave it for about an hour or until it has doubled in size. While the dough rises, whisk together the butter, sugar, cinnamon and ground almonds for the filling. Set aside.Knock back the dough with your fist, then on a floured surface, roll the dough to a rectangle of about 50x60cm in size.Leaving a 2cm boarder, spoon the cinnamon filling over the rolled out dough (keep about 1 tbsp of the filling for the end). Then scatter over the apple.Roll up the dough and using a sharp knife, cut the log in half length-wise..Plait the two pieces together, trying to keep the open layers exposed so the cut ends remain on top. Pinch the ends together to form a wreath.Transfer it to a sheet pan lined with baking paper. Brush the wreath with the remaining tablespoon of filling. Cover with a damp tea-towel and set aside for 15-20 minutes to allow it to slightly rise.Bake the wreath for 25-30 minutes. Serve warm.Recipe reprinted with permission of FoodMonger.
