MINT RICE
This mint and feta cheese rice is simple delicious. Perfect as a side dish.

Steps:
- Heat olive oil in a medium sized Dutch oven over medium-high heat. Add chopped onions and minced garlic and sauté for about 5 minutes until translucent and soft.
- Add rice and cook for one minute. Add broth and bring to a boil.
- Reduce the heat to a simmer and cook for about 20 minutes or until all the liquids have dissolved.
- Meanwhile finely mince fresh mint and cut the Feta cheese into ¼ inch cubes.
- Remove the rice from the oven and use a fork to fluff the rice. Add minced mint and Feta cheese and combine well. - Serve and Enjoy.

- In a large saucepan over medium heat, saute the cinnamon, cloves and cumin seeds in oil until aromatic, about 1-2 minutes. Add rice; cook and stir until lightly browned. Add water and mint. Bring to a boil. Reduce heat; cover and simmer for 15-20 minutes or until rice is tender., Meanwhile, in a large skillet, saute onion and cinnamon in oil until onion is tender. Add the curry, garlic and ginger; cook 1 minute longer. Add the garbanzo beans, water, tomato sauce, lemon juice and salt; bring to a boil. Reduce heat; simmer, uncovered, for 4-6 minutes or until slightly thickened. Discard cinnamon; stir in cilantro., Fluff rice with a fork. Discard cinnamon and cloves. Serve with garbanzo curry.

MINTED BASMATI RICE PILAF

Steps:
- Preheat oven to 350 degrees.
- Examine the rice for foreign objects, but do not wash.
- Heat the olive oil in the bottom of a heavy casserole until it begins to bubble. Add the onion and saute until translucent. Add the rice and stir to coat well with oil before adding the bay leaf, salt, pepper and the hot broth. Quickly bring to a boil, place a tight fitting lid on the pot and place into the oven.
- Cook the rice for 18 to 20 minutes before removing from the oven. Stir in the butter and the chopped mint and serve.
MINTED RICE PILAF

- Place mint stems, chicken broth and water in a 2 1/2-quart souffle dish or casserole with tight-fitting lid. Cook, covered, at 100 percent power in a 650- to 700-watt oven for 10 minutes. If using plastic, prick to release steam.
- Remove from oven and uncover. Strain liquid and allow liquid to cool to room temperature. Reserve.
- Place onion and oil in the 2 1/2-quart souffle dish or casserole. Cover and cook at 100 percent power for 4 minutes.
- Remove from oven and uncover. Stir in rice. Cook, uncovered, at 100 percent power for 1 minute 30 seconds.
- Remove from oven. Stir in reserved liquid. Re-cover and cook at 100 percent power for 10 minutes.
- Remove from oven and uncover. Stir in 2 tablespoons of the chopped mint leaves. Re-cover and cook for 8 minutes longer.
- Remove from oven and uncover. Stir in remaining chopped mint, salt and pepper. Serve hot.

MINUTE RICE FIVE SPICE CASSEROLE
Back around 1950, my grandmother found the recipe off the back of the Minute Rice box. Since then, it has become a family favorite, that we all request at some point in time. It is rather easy, and we usually serve it with cole slaw as the side dish. Plus, it makes wonderful leftovers!

Steps:
- Brown meat in oil, add onions and cook until tender.
- Stir in seasonings, soup, tomatoes, and Minute rice.
- Simmer 5 minutes.
- Stir occasionally.
- Spoon into 1 1/2 quart baking dish. (But I only use a cast iron skillet, since it is both oven and stove top friendly. Plus, my Grandmother always made it in a cast iron skillet, and I did learn from her. She was the best cook for comfort foods.).
- Criss cross with cheese and broil until cheese melts.
- Garnish with olives if desired.
- Instead of olives, we sometimes use jalepenos.
- Also, this recipe works well when you cook it in a cast iron skillet- you only dirty one dish that way!
PRAWNS WITH MINTED PEAS AND RICE
This is a risotto-like recipe that's easy to follow. The secret to a great taste, in my opinion, is in the quality of the prawns you use and the freshness of the mint.

- If using frozen prawns, start by letting them sit in a bowl of warm water.
- Cook rice according to packet instructions.
- While the rice cooks, shell and de-vein the prawns (if necessary).
- Split the leek lengthways, and then slice thinly.
- Tip the leeks into a colander, wash and shake dry.
- Pick the mint leaves off the stalks and finely shred, making about two tablespoonfuls.
- When the rice is nearly ready, melt 25g butter in a large frying pan and stir in the leeks and half the mint.
- Add the peas and chicken stock.
- Cook briskly for two or three minutes, until the peas are cooked but before all the stock has evaporated.
- Add the prawns and cook for two to three minutes until they are pink and cooked through.
- Stir in the rest of the mint.
- Adjust flavour to taste with salt, pepper, lemon juice and tabasco sauce, adding the knob of butter or a touch more water if it seems dry.
- Place the rice in a dish, put the prawn mixture on top and serve.
