WHOLE-WHEAT APPLE CAKE
Using whole-milk yogurt yields the best results for this cake. You will need a spring form pan.

- Preheat oven to 350 degrees. In a medium bowl, combine the apples, 1/2 cup light-brown sugar, ground cinnamon, and ground cloves, and set aside. Sift together the flours, baking soda, baking powder, and salt into a medium bowl, and set aside. Butter a 9-inch spring-form pan, and set aside.
- In the bowl of an electric mixer fitted with the paddle attachment, cream the butter and granulated sugar until light and fluffy, about 4 minutes. Add the eggs, one at a time, until well combined. Add the vanilla extract, and combine. Add the reserved flour mixture and yogurt, and stir just until well combined. Fold in 2/3 of the reserved apple mixture. Spoon half the batter into prepared pan. Sprinkle remaining apples evenly over batter. Top with remaining batter, and smooth with a spatula. Sprinkle top with remaining 1/4 cup brown sugar. Bake until golden brown and a cake tester comes out clean, 1 hour 10 minutes to 1 hour 20 minutes. Cover with foil after 45 minutes of baking. Cool 20 minutes before releasing from the pan.
APPLE SNACK CAKE
This is a simple yet delicious apple cake. A short list of ingredients make it a snap to put together. Don't let the small amount of batter scare you, it does rise up and fill the pan nicely. I think it would be great with cool whip or ice cream and served warm. Enjoy!

- Preheat oven to 350 degrees.
- Spray a 8" round baking pan with cooking spray.
- Chop up your apples.
- Beat the eggs in a small bowl until fluffy.
- Combine sugar, flour, baking powder and cinnamon in a bowl. Whisk together.
- Combine wet and dry ingredients together.
- Sprinkle 1/2 apples in bottom of pan.
- Pour over batter. It will be thick and you'll have to work it around the pan with a spatula.
- Sprinkle remaining apples on top and sort of press them down into batter.
- Bake for approximately 25 minutes or until golden.

- Place Whole Wheat flour, the Light Brown Sugar and the all-purpose flour in a large mixing bowl and blend well.
- Cut the butter into the flour mixture until it resembles coarse crumbs. Remove one cup and reserve for the topping.
- Stir the baking powder, salt and the one-half teaspoon of cinnamon into the remaining mixture.
- In a separate bowl, lightly beat the milk with the egg and vanilla extract.
- Pour into the dry mixture and stir, by hand, until just moistened.
- Grease a nine-inch, round, microwave-safe pie plate and fill with the batter.
- Arrange peeled apple slices in a single, even layer over the batter.
- To the topping, add the chopped nuts and one teaspoon of cinnamon and sprinkle evenly over the apple slices. Mixture should cover the apples entirely.
- Microwave uncovered, on the medium heat setting for nine minutes, rotating dish every three minutes.
- Cook on high three to five minutes longer (rotating once), or until the cake springs back when lightly pressed in its center and no uncooked batter remains on the bottom of the dish.
- Allow cake to stand at room temperature for five minutes.

- Preheat oven to 350F. Line a 7x11 inch baking pan with foil or parchment paper, leaving a slight overhang.
- Peel and finely dice the apple. Melt 1 teaspoon butter over medium heat in a small skillet. Add the apple and cook for one minute, tossing to coat with the butter.
