COUSCOUS WITH PINE NUTS AND MINT



Couscous With Pine Nuts and Mint image

2 tablespoons good olive oil
1 tablespoon unsalted butter
1 cup chopped yellow onion
3 cups chicken stock, preferably homemade
1 1/2 cups couscous
Kosher salt and freshly ground black pepper
Kosher salt and freshly ground black pepper
1/2 cup julienned fresh mint leaves, loosely packed
1/3 cup pine nuts, toasted

Steps:

  • Heat the oil and butter in a large saucepan over medium heat. Add the onion and cook over medium-low heat for 6 to 8 minutes, stirring occasionally, until tender but not browned. Add the stock and bring to a boil. Stir in the couscous, 1 teaspoon salt, and 1/2 teaspoon pepper and remove from the heat. Cover the pot tightly and allow the couscous to steam for 10 minutes. Fluff the couscous with a fork and stir in the mint and pine nuts. Taste for seasonings and add about 1 teaspoon salt, depending on the saltiness of the stock, and 1/2 teaspoon pepper. Serve hot.

Steam frozen peas with the couscous to make this quick side dish even quicker.

One 7.6-ounce box couscous
1/2 cup frozen peas, thawed
1/2 cup mint leaves, roughly chopped
2 tablespoons extra-virgin olive oil
Zest and juice from 1/2 lemon
Kosher salt and freshly ground black pepper
Crushed red pepper flakes, for garnish

Steps:

  • Put the couscous and peas in a large bowl and add 1 1/2 cups boiling water. Stir to combine and then cover with plastic wrap. Set aside to steam for 5 minutes.
  • Uncover the bowl, fluff with a fork and set aside to cool, about 10 minutes. Toss in the mint, olive oil, lemon zest and juice, 1 teaspoon salt and 1/4 teaspoon pepper. Season with additional salt and pepper if needed. Sprinkle with red pepper flakes.

3 cups (about 1 1/2 pints) cherry or grape tomatoes, halved
2 kirby cucumbers, seeded, and diced
1 lemon, juiced
3 teaspoons kosher salt
1 1/2 cups instant couscous (a 10-ounce box)
2 cups water
2 wide strips lemon zest
1/4 cup extra-virgin olive oil
Pinch cayenne
1/2 cup torn mint leaves, stems saved
1/2 cup roughly chopped flat leaf parsley, stems saved
3 scallions (white and green), chopped
1/2 cup toasted pine nuts, optional

Steps:

  • Toss the tomatoes, cucumbers, and lemon juice in a bowl with 2 teaspoons of the salt. Set aside.
  • Put the couscous into a large bowl. Bring the water, lemon zest, 3 tablespoons of the oil, the remaining salt, cayenne, and herb stems to a boil over high heat. Pour the liquid over the couscous, stir to separate any clumps. Cover with a lid, plate, or plastic wrap, set aside for 5 minutes. Remove the zest and herb stems and fluff with a fork.
  • Add the tomato mixture, scallions, mint, parsley, and pine nuts. Drizzle the remaining oil over the salad, toss and serve.

1/4 cup lime juice concentrate
1/2 teaspoon salt
1 tablespoon orange olive oil
1 (10-ounce) box couscous
1/3 cup chopped fresh mint leaves
1/4 cup chopped fresh flat-leaf parsley

Steps:

  • In a medium saucepan over medium-high heat, bring chicken stock, lime juice concentrate, salt and orange olive oil to a boil.
  • Stir in couscous, cover and remove from heat. Let stand 5 minutes.
  • When ready to serve, fluff couscous with a fork and stir in mint and parsley.

1 clove garlic, minced
1 lemon, zested
1 scallion, finely chopped
Salt and freshly ground black pepper
1 cup chicken stock
1 tablespoon butter
8 to 10 fresh mint leaves, chopped
1 teaspoon extra-virgin olive oil

Steps:

  • In a bowl, stir together the couscous, garlic, lemon zest, scallions, a pinch of salt and a grind or 2 of pepper. In a pot on high heat, bring the chicken stock and butter to a boil. Immediately pour over the couscous mixture, then quickly cover tightly with a lid or plastic wrap. Let sit for 5 minutes. Add the mint, fluff with a fork and stir in the olive oil. Serve warm.

10-MINUTE COUSCOUS SALAD



10-minute couscous salad image

100g couscous
200ml hot low salt vegetable stock (from a cube is fine)
2 spring onions
1 red pepper
½ cucumber
50g feta cheese, cubed
2tbsp pesto
2tbsp pine nuts

Steps:

  • Tip the couscous into a large bowl and pour over the stock. Cover, then leave for 10 mins until fluffy and all the stock has been absorbed. Meanwhile, slice the onions and pepper, and dice the cucumber. Add these to the couscous, fork through the pesto, crumble in the feta, then sprinkle over pine nuts to serve.

1 tablespoon loose-leaf gunpowder green tea
3 cups plus 3 tablespoons cool water
1/4 to 1/2 cup sugar
1 large handful of fresh mint, rinsed and picked over
4 tablespoons pine nuts, dry roasted (optional)

Steps:

  • In a stove-top teapot, add the tea leaves and cover with the 3 tablespoons of water. Bring to a quick boil and immediately pour off the water, being carefully that no tea leaves escape. (This gets rid of the some of the bitterness, and allows the tea to seep longer with mint.)
  • Add the sugar to the wet grounds and cover with the remaining 3 cups of water. Over medium heat, with the lid open or off, bring to a boil.
  • Pour half of the liquid into a bowl or Pyrex measuring cup; reserve. Stuff the mint into the teapot, pressing it against the bottom of the pot with a spoon to gently and slightly crush the leaves. Return the reserved liquid to the teapot.
  • Simmer over low heat for a few minutes to let the mint infuse. Pour a glassful into a clear drinking glass and then back into the pot, from as high as possible without spilling to aerate the tea and blend the flavors. Repeat this two or three more times, as the color of tea changes from clear to a cloudy caramel.
  • Begin tasting for sweetness and flavor. Add more sugar if desired, or let it simmer another few minutes to make it stronger. Continue to pour glassfuls in and out of the pot until satisfied with both the sweetness and strength of the tea.
  • Serve in small clear tea glasses. Do not pour tea into them from the teapot, but from the glass used for mixing and testing (this will help trap any sediment).
  • If adding pine nuts, sprinkle into the glasses of tea before serving.

1 large aubergine, cut into chunky batons
1 lb courgette, cut into chunky batons
1 large red onion, cut into 8 wedges
12 garlic cloves, in their skins
10 basil leaves, torn roughly
1 sprig chopped fresh parsley
4 -6 tablespoons olive oil
1 red pepper, grilled, skinned, quartered and de-seeded
1 yellow pepper, grilled, skinned, quartered and de-seeded
4 field mushrooms, sliced
15 -20 black olives, pitted
8 ounces couscous
1 pint water, boiled
1/4 pint olive oil
2 lemons, juice and zest of
1 yellow pepper, de-seeded and chopped finely
4 spring onions, chopped finely
4 -6 tablespoons chopped of fresh mint
sea salt
black pepper

Steps:

  • Roasted vegetables:.
  • Put the prepared aubergine, courgettes, onion and garlic into a large bowl with the basil and rosemary. Sprinkle with half the olive oil and toss well. Leave to stand at room temperature for 3 - 4 hours.
  • Pre-heat the oven to 220c/425F/gas 7.
  • Spread the vegetables onto a baking tray or trays, in a single layer, and drizzle with the remaining olive oil.
  • Roast for 15 minutes, then add the peppers, mushrooms and olives, and toss.
  • Return to the oven and roast for a further 10 - 15 minutes until the vegetables are tender, turning once more before the end of the cooking time.
  • Minted Couscous:.
  • Put the couscous into a large bowl, and pour the boiling water over it. Stir for a couple of minutes until the water has absorbed and the couscous is tender, about 6 - 7 minutes.
  • Add the olive oil, lemon juice and zest, and mix them in thoroughly.
  • Stir in the chopped pepper, spring onions and mint. Season with salt and pepper, and serve with the roasted vegetables.
