I joined a crockpot recipe group and this is one of the recipes that was sent to me in an email. This couldnt be simpler!

2 tablespoons flour
5 ounces evaporated milk
2 cups ham, diced
12 ounces frozen chopped broccoli
1/4 cup onion, minced
1 cup swiss cheese, grated
2 cups water
1 cup half-and-half

Steps:

  • In a small bowl mix together well the flour and evaporated milk.
  • To the crockpot, add ham, broccoli, onion, swiss cheese, water and flour/milk mixture.
  • Set crockpot to low and cook for 7 hours.
  • Before serving, stir in half-and-half and heat thru. Serve immediately.

This quick, week-night dinner is a nice alternative to mac and cheese with ham. It comes together easily and is comforting and filling.

14 ounces whole wheat rotini pasta
1 (10 ounce) package frozen broccoli
1 tablespoon olive oil
2 cups diced fully cooked ham
1 (15 ounce) jar Alfredo sauce
½ cup 2% milk
ground black pepper to taste
1 cup shredded Colby-Monterey Jack cheese

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease a 9x13-inch baking dish.
  • Bring a large pot of lightly salted water to a boil; cook the pasta in the boiling water, stirring occasionally, until tender but not mushy, about 10 minutes. Drain.
  • Thaw the broccoli in a microwave oven until you can break it apart into small pieces.
  • Heat the olive oil in a large skillet over medium heat; cook and stir the diced ham in the hot oil until the edges start to brown, about 10 minutes. Stir in the broccoli and cook and stir until any excess water has cooked away and the ham and broccoli are hot. Pour in the jar of Alfredo sauce and the milk; stir to blend, sprinkle with pepper, and add the cooked pasta. Stir everything together to coat the pasta with sauce and bring to a simmer.
  • Spread the bubbling pasta mixture into the prepared baking dish, top with shredded Colby-Monterey jack cheese, and bake in the preheated oven until the casserole is hot and the cheese is melted and starting to brown, about 30 minutes.

3/4 cup finely chopped fully cooked ham
1/2 cup water
1/4 cup frozen cut green beans
1 tablespoon chopped onion
2 tablespoons all-purpose flour
1 cup fat-free milk
1/3 cup reduced-fat process cheese (Velveeta), cubed

Steps:

  • In a large saucepan, combine the first five ingredients; cover and cook over medium heat until vegetables are tender, about 5 minutes (do not drain). Combine flour and milk until smooth; gradually add to the vegetable mixture. Bring to a boil; boil for 1-2 minutes, stirring constantly. Remove from the heat. , Stir in cheese; cover and let stand until melted, about 5 minutes. Stir before serving.

2 c ham cut in cubes
2 c brocolli florets in small pieces
1 c milk
1 c half and half
2 c shredded swiss chesse
2 Tbsp flour
1/4 c water
dash pepper
1 beef bouillon cube

Steps:

  • 1. Cook ham (about 15 minutes) in 2-3 cups of water, enough to cover ham plus a little more. Reserve 1 1/2 cup of this broth after boiling.
  • 2. add the beef boullion cube and stir to disolve. set the cubed ham aside.
  • 3. Combine the brocolli and the 1 1/2 cups broth and cook brocolli until tender.
  • 4. Add ham, milk, half and half to the broth and brocolli
  • 5. Mix the flour with the 1/4 cup water till smooth then add to the soup mixture.. stir until thickened.
  • 6. Add the shredded cheese and stir until melted.

4 eggs, beaten
½ teaspoon ground black pepper
1 teaspoon smoked paprika

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Press the pie crust ito a 9-inch pie plate; set aside.
  • Place broccoli in a glass bowl. Cover bowl with plastic wrap. Cook broccoli in microwave in 1-minute intervals until evenly heated through, about 5 minutes total; set aside.
  • Melt butter in a large saucepan over medium heat. Saute onion and garlic in melted butter until slightly translucent, about 5 minutes.
  • Stir ham and broccoli into the onion mixture and transfer to the pie crust.
  • Beat Cheddar cheese, milk, eggs, and black pepper together in a bowl; pour over the ham mixture. Sprinkle paprika over the entire quiche.
  • Bake in the preheated oven until a knife inserted into the center of the quiche comes out clean, 30 to 45 minutes.

2 cups diced cooked ham
1 (10 ounce) package frozen corn, thawed
1 large baking potato, cut into 1/2 inch pieces
1 medium red bell pepper, diced
1/2 teaspoon dried thyme
2 cups small broccoli florets
1/2 cup milk

Steps:

  • Combine soup, ham, corn, potato, bell pepper and thyme in slow-cooker; mix well.
  • Cover; cook on LOW 6-8 Hours or on HIGH 3-4 hours.
  • Stir in broccoli and milk. Cover; cook on HIGH 15 minutes or until broccoli is crisp-tender.
  • Note: I added the milk early and bumped up the amount of milk to 1 Cup.
