ZUCCHINI BITES
Made from zucchini, cheese, eggs and oats, these zucchini bites are a fantastic toddler snack or lunchbox filler.

Steps:
- Preheat oven to 180C / 350F / Gas 4 and prepare two baking sheets with parchment paper or a silicone baking sheet
- Place the zucchini on a clean cloth and squeeze out the liquid into a bowl. (You need to get the zucchini quite dry for the recipe to work)
- Place the zucchini back in the bowl and mix with the remaining ingredients
- Form ½ tbsp balls and flatten into rounds onto the baking sheet. (Mine were around ½ cm / ¼ inch thick and I made 21)
- Bake for approx. 15 mins (until crispy on the sides)

- Preheat the oven 400 degrees F. Line a baking sheet with aluminum foil and spray with cooking spray.
- Slice the zucchini 1/4-inch thick; you should get about 24 slices. Place the slices on the prepared baking sheet and sprinkle with salt. Top each slice with 1/2 teaspoon marinara sauce and 1 teaspoon mozzarella.
- Bake until the cheese is melted and bubbly, about 8 minutes.
ZUCCHINI BITES
This recipe was sent to me by my mum,who thought that her beloved grandchildren might enjoy them! The first time I made them they didn't even get a chance to go cold,as the children and I devoured them.I have since made them to take to our local playgroup end of term party,and once again,children and parents alike loved them.They are so simple and delicious,and a great way to get some extra veggies into your children.Perfect for picnics and lunchbags.I often pack a few in a tub for when we go shopping for child friendly snacks.I should imagine that these would be good served warm with pre dinner drinks or as part of a finger buffet.

Steps:
- Heat the oil in a large pan and sauté onion until translucent. Add the bacon and fry until it starts to colour. Add the carrot and zucchini and cook for about 2 minutes.
- Transfer mixture to a bowl to cool.
- Beat the eggs, cream and cheese together; season to taste.
- Stir the egg mixture into the cooled zucchini mixture. Stir in the flour.
- Grease and flour little muffin/bun tins. Spoon mixture into the holes.
- Bake at 180°C/350°F/Gas 4 for 15-20 minutes.

- Cut zucchini into 3/4-in. slices. Using a melon baller or small spoon, scoop out the insides and discard, leaving the bottom intact. Place zucchini on an ungreased baking sheet; spoon 1/2 teaspoon crumbled blue cheese into each. , Combine Parmesan cheese, basil and pepper; sprinkle half over blue cheese.
