- In a large bowl, mix flour and salt; cut in shortening until crumbly. Gradually add ice water, tossing with a fork until dough forms a ball. Divide dough in half. Shape each into a disk; wrap and refrigerate 1 hour or overnight., For filling, in a large skillet or Dutch oven, cook beef over medium heat until no longer pink, 3-5 minutes, breaking into crumbles; drain. Add apples, apricot, brown sugar, raisins, apple juice, vinegar, orange zest and seasonings. Bring to a boil; reduce heat. Simmer until apples are tender, 15-17 minutes. Stir in rum. Remove from heat; cool slightly., Preheat oven to 375°. On a lightly floured surface, roll half of dough to 1/8-in. thickness. Cut 20 circles with a floured 2-3/4-in. round biscuit cutter. Top half the circles with 1 tablespoon filling. Top with remaining circles; press edges with a fork to seal. Cut slits in top. Brush tops with egg; sprinkle with coarse sugar. Repeat with remaining dough and filling., Bake until crust is golden brown and filling is bubbly, 20-25 minutes. Cool on a wire rack.

HOMEMADE MINCEMEAT RECIPE
This traditional Homemade Mincemeat Recipe has all of the warm spicy flavors of the stuff from the grocery store but has 1000 times the flavor. Perfect for pies or as a topping on Fall desserts.

- In a large pan, melt butter.
- Add water, fruits, sugar, spices, and alcohol.
- Bring to boil over medium-high heat, stirring often. Once it boils reduce the heat to low and cook for approximately 30 mins. Continue to stir often.
- The mince is ready when the majority of the liquid has boiled out.
- Let the mince cool completely and then transfer and store in an airtight container.
- The mince should be kept in the refrigerator. The longer you store it the more the flavors will develop.
- The mince will keep for a month if you take some steps. Check on it every week or so and add a tablespoon of rum or brandy and give it a good stir. If you don't take this step the mince will only last a week.
HOLIDAY MINCEMEAT CAKE
I made this cake one year for Christmas when I was short of time and wasn't able to make a pie. It was a big hit. It is a very moist cake best served with just a dusting of icing sugar for garnish.

- Stir the flour, baking powder, baking soda and salt together; set aside.
- Cream the butter, orange rind and vanilla in a large bowl with an electric mixer until light.
- Beat in the sugar.
- Add the eggs, one at a time, beating well after each addition.
- Blend in the mincemeat.
- Add the dry ingredients to the creamed mixture alternately with the milk, beginning and ending with the dry ingredients.
- Stir in the nuts.
- Turn the batter into either a greased 12-cup Bundt or tube pan or a greased 9" x 13" cake pan.
- Preheat the oven to 350 degrees F.
- If using a Bundt pan, bake for 55 to 60 minutes or until done.
- If using a cake pan, bake for 45 to 50 minutes.
- In either case, cool in the pan for 10 minutes.
- Remove from the pan and cool completely.
- Dust with icing sugar before serving.
MINI MINCEMEAT PIE COOKIES WITH RUM
I've never had homemade mincemeat, so that may be a different taste, but really like the jarred mincemeat pie filling! - 1. In small bowl, mix together the pie filling, apple and rum. Roll pie pastry on lightly floured surface to 1/8 inch thickness. Using floured cutter, cut into 4-inch diameter rounds. Re-work scraps of pastry once. Combine egg and water; mix well. Place 1 ounce (1 tablespoon) filling in center of one round. Brush edges with egg wash. top with another round. Seal edges with a fork. Place on parchment paper-lined baking sheet. Repeat with remaining rounds. Brush top of cookies with egg mixture. Cut slit in top to allow steam to escape during baking. Sprinkle lightly with sugar. Bake in preheated 400 degree oven 10 to 12 minutes or until light golden. Remove from baking sheet and let cool completely on wire racks.
- 2. *If using store-bought pie pastry, you may need to roll each sheet thinner to have enough. They make them too thick anyways. Homemade is best, though.

HOMEMADE MINCE PIE WITH CRUMBLY TOPPING

- Preheat oven to 425 degrees F (220 degrees C).
- In a bowl, mix together 1/2 cup of cold butter with 1 1/2 cups flour and the salt with a fork until the mixture is very crumbly. Mix in water, a tablespoon at a time, just until the mixture holds together. Mix again with a fork, then turn out onto a floured pastry cloth. Pat the dough out into a round piece, and roll out into a 10-inch circle. Invert a 9-inch pie dish onto the dough. Flip the dough over, and peel from the pastry cloth; adjust the crust into the plate if necessary. Fold the dough over the edge of the pie dish. Set the crust aside.
- Combine the raisins, apples, grapefruit peel, orange juice, and apple cider in a saucepan, and bring to a simmer over medium heat. Cook, stirring occasionally, until the apple pieces are soft, about 15 minutes. Stir in 3/4 cup of sugar, the cinnamon, cloves, and half a crushed graham cracker, and mix well.
- Mix together 1/3 cup of sugar, 3/4 cup of flour, 6 tablespoons of butter, and half a crushed graham cracker in a bowl, stirring until the mixture looks like fine crumbs. Pour the mince filling into the prepared pie crust, and sprinkle evenly with the streusel topping.
- Bake in the preheated oven for 15 minutes, and reduce oven temperature to 350 degrees F (175 degrees C); bake until the topping is lightly browned, about 30 more minutes. Allow to cool before serving.

MINCE PIES (WITH HOMEMADE MINCEMEAT)
Unlike what the name implies, these little tarts are not made with meat. They are actually filled with spiced, slightly boozy dried fruit and encased in a tender sweet pastry. An absolutely must-have at Christmas time in the UK! We can get mincemeat in jars in the supermarket but I've provided a recipe for homemade mincemeat in case you can't buy it ready-made. Just be aware that you need to 'mature' the filling in the jar for at least 2 weeks so plan accordingly!

- For the filling, mix all the filling ingredients in a large bowl. Cover and let sit overnight to absorb all the liquid then spoon and pack into sterilised jars. Let it sit for at least 2 weeks (but longer is better) before using. (You can also just buy two 14oz jars of 'mincemeat' if you can find it).
- For the pastry:.
- Cream the butter and sugar in a medium bowl until smooth. Add the egg yolks and stir them in until smooth. Add the flour and salt, stir briefly then use your hands to gently knead into a uniform dough. Divide into two balls, flatten into disks and cover with plastic wrap then chill for an hour.
- Preheat the oven to 350°F.
- To assemble:.
- Remove one disk of pastry from fridge and unwrap. Roll out on a piece of floured baking paper until very thin - about 1/8-inch thick. Use a circular cutter to cut out twelve 3-inch circles. Place the circles into a mini tart/tartlette pan. Spoon in a heaped teaspoonful of filling. Re-roll the scraps of dough and cut out 12 stars to place ontop of each tartlet.
- Bake for 10-15 minutes until golden and bubbling. Remove from the pan to a wire rack to cool completely.
- Repeat the rolling, cutting and filling of the pies using the remaining pastry.
- Store in an airtight container.

I wanted to start a new tradition with my family. I love mincemeat, and this cake is a way to share that enjoyment with my friends and family. Since I was a working mother, I also wanted to create a dessert that was convenient. I am now asked for the recipe every time I make it.

- Heat oven to 350 deg. Spray oven-safe 11-inch skillet or a 9 X 13 cake pan with nonstick cooking spray.
- Prepare cake mix according to package directions, except reduce the water by 1/4 cup. After mixing, fold in the mincemeat and nuts.
- Bake 35 to 40 min. Cake is done with toothpick inserted in center of cake comes out clean.
- Let cool 5 min. Run a knife around edge of pan and invert onto serving plate.
- Sauce: Combine butter, sugar and eggnog in small saucepan. Bring to a boil. Boil for 2 min. Remove from heat stir in rum or rum extract and a dash of nutmeg. Serve warm.
MINI MINCE PIES
These Mini Mince Pies feature our homemade mincemeat recipe that is chock full of apples, raisins, dried fruit, spices, and a splash of alcohol. A delicious version of this classic holiday pie!

- Make a batch of our Homemade Mincemeat and allow it to cool.
- Once the Mincemeat is cool, make your Pie Crust. You can find our recipe here.
- Roll out the pie crust. (You'll want it on the thin side.)
- Cut out circles that will fit into your muffin/cupcake tin. We used a 2 1/2 inch biscuit cutter.
- Press the pie crust circles into the muffin/cupcake tin.
- Brush a whisked egg white onto the inside of the mini pies. This will help keep the mincemeat from soaking into the pie crust.
- Fill the crust with the Homemade Mincemeat.
- Cut out stars from the Pie Crust and cover the mincemeat with the pie crust decoration.
- Brush a whisked egg yolk over the stars.
- Bake in an oven pre-heated to 400 degrees for 15-20 minutes or until the pie crust is golden brown.
- Allow to cool before serving.

- Combine the next 4 ingredients together and whisk.

- Place all of the ingredients in a large Dutch oven, except for 2 tablespoons rum and 2 tablespoons brandy. Bring to a boil over medium-high heat. Simmer the mincemeat stirring often for about 30 minutes. At the end of 30 minutes, the liquid should almost be completely evaporated. Remove from the heat and stir in the 2 tablespoons each of rum and brandy. Let the mincemeat cool completely and then transfer to a covered container and place in the refrigerator. Let it stand overnight before using in the pie recipe. Mincemeat can be made ahead and stored in the refrigerator for up to a month.
- Place the flour, salt, and sugar in the bowl of a food processor, pulse to combine. Add the cubed butter on top of the flour and pulse repeatedly in short bursts until the mixture looks crumbly. Add the vanilla and egg and pulse until the mixture forms a ball to one side of the bowl. Remove the dough and flatten into a circle. Cover with plastic wrap and let rest 30 minutes before use.
- Preheat the oven to 400°F. Roll the dough on a lightly floured work surface using a floured rolling pin. Cut 7-inch rounds from the dough and fit the rounds inside the pie tins. Fill each pie with mincemeat. Gather the dough and re-roll to 1/4-inch thickness. Use a lattice cutter to cut the pastry, dust the pastry intermittently with flour so that the lattice design doesn’t stick together. Cut a piece of pastry to fit the top of each pie, using a bench scraper or spatula to lift the lattice top onto the pie. Press the top edge of the lattice crusts down onto the pies and cut away the excess. Brush pies with egg wash. Bake the pies for 12-15 minutes, or until the pastry turns golden brown. Let pies cool before serving.
