STEWED GREEN BEANS AND TOMATOES WITH TRAHANA

Stewed Green Beans and Tomatoes With Trahana image

The stewed green beans with tomatoes are typical of many Greek "olive oil dishes," or "ladera," though my version has about a quarter of the olive oil used in a traditional dish. I have bulked it up by adding trahana to the mix, which turns it into a stew that is suitable as a main dish. It is delicious hot or at room temperature.

Provided by Martha Rose Shulman

Time 1h

Yield Serves 4

Number Of Ingredients 12

3 tablespoons extra virgin olive oil
1 large onion, chopped
2 large garlic cloves, minced
1 pound fresh green beans, ends trimmed
1 (14-ounce) can chopped tomatoes, or 1 1/2 cups grated fresh tomatoes
1/8 to 1/4 teaspoon sugar (to taste)
Salt to taste
2/3 cups sour bulgur trahana
Freshly ground pepper
1/4 cup chopped fresh mint, parsley, or dill
1 to 2 tablespoons fresh lemon juice (optional)
Additional olive oil as desired

Steps:

  • Heat 2 tablespoons of olive oil in a wide, covered skillet or Dutch oven over medium heat and add onion. Cook, stirring, until tender and translucent, 5 to 8 minutes. Add garlic and cook, stirring, for another 30 seconds to a minute, until fragrant. Stir in tomatoes, sugar and salt to taste and cook, stirring often, until tomatoes have cooked down slightly, about 5 minutes. Add green beans and remaining oil and stir together for a minute, then add about 1 1/2 cups water, or enough to just cover the beans. Bring to a simmer, add more salt to taste, cover, reduce heat and simmer 30 minutes, until beans are very tender.
  • Check water level and if necessary add water so that beans are covered. When it begins to simmer, stir in trahana and half the herbs. Cover and simmer, stirring often, until trahana is tender, about 15 minutes. Stir in remaining herbs, add freshly ground pepper, taste and adjust salt. Add lemon juice and more olive oil if desired. Serve hot or at room temperature (traditionally this is allowed to cool and served at room temperature).

FASOLAKIA (GREEK GREEN BEANS)

Fasolakia (Greek Green Beans) image

Fasolakia are Greek green beans stewed with olive oil and tomato, with a few pieces of potato added for good measure. This is a main dish in Greece, not a side dish, and a prime example of plant-based eating! Good crusty bread is essential for mopping up the sauce and I always need to have a healthy chunk of feta on the side. Serve fasolakia warm or at room temperature for best flavor.

Time 50m

Yield 4

Number Of Ingredients 9

¼ cup olive oil
1 small onion, grated
1 ½ pounds fresh green beans, trimmed
4 tomatoes, pureed
2 yellow potatoes, peeled and cut into wedges
½ teaspoon salt, or to taste
ground black pepper to taste
1 pinch white sugar
water to cover

Steps:

  • Heat olive oil in a large saucepan over medium heat and stir in onion. Cook until onion has softened, about 5 minutes. Add green beans and stir to coat in the oil. Cook, stirring occasionally, 2 to 3 minutes. Add pureed tomato, potatoes, salt, pepper, and sugar. Stir well, then add water until beans are barely covered.
  • Bring to a simmer, partially cover with a lid, and cook gently over medium-low heat until green beans and potatoes are soft, 25 to 30 minutes. Uncover towards the end of cooking to reduce sauce if it is too watery.

ALBANIAN STEWED GREEN BEANS AND POTATOES WITH SMOKEY SEITAN

Albanian Stewed Green Beans and Potatoes With Smokey Seitan image

In the heart of the Mediterranean, on the Adriatic and Ionian Seas, Albania is fast becoming one of the world's most interesting getaways. Still relatively unspoiled by globalization, an inspiring mixture of civilizations and cultures - making this European country truly unique. This Stewed Green Bean recipe is a great flavorful way to use green beans! The recipe makes enough for two hungry people, so if you have more people at home double the recipe. The recipe uses three tablespoons of olive oil so if you want to make this lower fat feel free to reduce some of the oil. You can replace the seitan with storebought "beef" or "chicken" chunks, or even veggie crumbles. Taken directly from the Vegan Foodie.

Categories     Greek

Time 1h40m

Yield 2 serving(s)

Number Of Ingredients 13

1 1/2 cups seitan, cut into bite size pieces (can use beef or chicken style chunks from Morningstar or other brand)
2 cups green beans, trimmed and cut in half
1 small red potatoes, cut into bite size pieces
1 medium onion, sliced thinly
3 -4 garlic cloves
1 medium tomatoes, diced (or one half of a large tomato)
1 teaspoon paprika
1/2 teaspoon oregano
1 pinch chili flakes (optional)
2 cups vegetable broth (or water, you may need to add more liquid)
3 tablespoons olive oil plus 1 tablespoon olive oil
1 1/2-2 teaspoons liquid smoke (may need to use more to get the right flavor, so adjust to your taste)
smoked salt, to taste (Optional, if you donà t have smoked salt use regular salt)

Steps:

  • Heat a medium pot over medium heat with 1 tablespoon of olive oil. When hot enough, add the seitan and saute until golden on all sides about 4-5 minutes. Towards the end at the liquid smoke and Smoked Salt. Remove from pot and set aside.
  • Now add about 2-3 tablespoons of Olive Oil to the pot. Add the onions and saute for a good 8 minutes until they are translucent and tender. If your pot has burned pieces from the seitan, deglaze it with a bit of vegetable broth. Add the garlic and saute for a minute until fragrant. Now it's time to add the green beans and potatoes. Saute the green beans and potatoes for about 5 minutes.
  • Now add the tomato, paprika, oregano, chili flakes and season with salt and pepper. Saute for another two minutes. Add the vegetable broth or water and bring to a boil and then to a simmer. After a couple of minutes add the seitan that you have set aside. Simmer the stew for about 45-50 minutes until the green beans and potatoes are tender. If the stew starts to get dry simply add some more broth. Re-season with salt and pepper to taste if necessary. Remember to not go heavy on the salt because the Smokey Seitan is salt already from the smoked salt. Let the stew sit for 15 minutes or you can eat it has soon has it finished cooking.
  • I like to serve these stewed green beans with some rice, bread, and a side salad or vegetable.

My husband made up this recipe and to my surprise it was very delicious. We have this side dish about once a week. Give it a try I am a very picky eater, compared to most. We tried it with an orange pepper once as we didn't have a green pepper and it just wasn't the same, so I would recommend using the green pepper. Enjoy!!!

  • To make the process easier and faster work green beans in small batches.Line up each batch on one side on a cutting board and trim off the ends with a sharp knife.Flip the beans around, line up the tips again, trim off the other side.At this point you can cut trimmed beans in half or leave them as is (which I prefer).Repeat the process with remaining green beans.
  • Bring a large pot of water to boil. Add salt and cook green beans just until slightly crunchy. THe should not be cooked to done as they will still continue to cook in tomato sauce.
