These lovely cupcakes are sure to remind you of the lightest pound cake. A hint of mango with rum flavoured cream, a nice light treat.

2 cups flour
1/2 teaspoon baking soda
1/4 teaspoon ginger, powdered
9 tablespoons butter, unsalted, room temperature
1 cup sugar, vanilla scented
2/3 cup sour cream, thick
2 teaspoons vanilla extract, pure
1/2 teaspoon lemon extract, pure
1 teaspoon lemon rind, finely grated
1 large egg, room temperature
2 large egg yolks, room temperature
1/2 cup mango, fresh, sweet, diced
1 pint whipping cream, cold
6 tablespoons sugar, white
1 teaspoon vanilla extract, pure
2 tablespoons rum, dark
1/2 cup coconut, sweet, toasted (garnish)

Steps:

  • Preheat oven to 400°.
  • Butter and flour muffin cups, 16 2 3/4-inches.
  • Mix together flour, baking soda, salt and ginger.
  • In a separate bowl, beat butter on high for 2 minutes.
  • Add sugar to butter gradually, beating a total of 2 minutes longer.
  • Next, add vanilla extract, lemon extract, lemon rind and sour cream together.
  • Add sour cream mixture to butter and sugar, beat 1 minute.
  • Add 1 egg and beat on medium high for 1 minute then add egg yolks and beat 1 minute longer.
  • Scrape down bowl.
  • Add flour just until all flour is absorbed.
  • Gently, mix in diced mango.
  • Fill muffin cups 2/3 full and bake on lower-third level rack for 20 - 23 minutes.
  • Allow cakes to cool in tins for 1 minute before carefully removing and placing on rack to cool completely.
  • While waiting for cakes to cool prepare whipped cream.
  • In a cold bowl add whipping cream, sugar, vanilla extract and dark rum.
  • Beat on high until cream thickens.
  • Split cakes in half, spread with rum cream and sprinkle toasted coconut on top.

This mango cake is stunningly simple to make and perfect for when mangoes are in season. It's also relatively healthy as far as cakes go and not overly sweet. The cake is dense and perfect with tea or coffee. I use Alfonso mangoes, but any variety will do.

2 ripe mangoes, peeled and thinly sliced
⅔ cup white sugar
2 eggs, lightly beaten
½ cup plain Greek yogurt
½ cup sunflower seed oil
1 ⅓ cups all-purpose flour
⅓ cup unsweetened shredded coconut
1 ½ teaspoons baking powder

Steps:

  • Preheat the oven to 350 degrees F (180 degrees C). Line an 8-inch square baking dish with parchment paper, leaving some overhanging on all sides.
  • Arrange mango slices in an overlapping pattern over the bottom of the prepared dish.
  • Combine sugar, eggs, yogurt, and oil in a large bowl and stir until smooth. Fold in flour, coconut, and baking powder until just combined. Spoon batter over the sliced mango, and spread evenly to the edges.
  • Bake in the preheated oven until a toothpick inserted into the center comes out clean, 45 to 50 minutes. Let the cake cool in the dish for 15 minutes before inverting onto a serving plate and carefully peeling off the parchment paper. Allow to cool completely before slicing.

2 ripe mangoes, cut into 1/2-inch cubes
¾ cup fresh blueberries
1 cup sliced fresh strawberries
1 ½ teaspoons lime juice
1 tablespoon honey
½ teaspoon unflavored gelatin
1 tablespoon water
1 cup heavy cream
2 tablespoons confectioners' sugar
½ teaspoon coconut extract
2 ½ cups all-purpose flour
3 ½ teaspoons baking powder
¼ cup white sugar
1 tablespoon grated lime zest
1 tablespoon poppy seeds
1 ½ teaspoons salt
½ cup vegetable shortening
1 egg
1 cup buttermilk

Steps:

  • Preheat an oven to 400 degrees F (200 degrees C). Grease a baking sheet.
  • Combine mango, blueberries, and strawberries in a large bowl. Drizzle with lime juice and honey; mix well. Cover; reserve in refrigerator.
  • Sprinkle the gelatin over the water in a large heatproof glass or metal bowl. Let soak for 5 minutes. Place bowl over a pan of simmering water, stirring often until dissolved. Transfer to a small bowl; refrigerate until cool, about 10 minutes. Beat cream in the large bowl with an electric mixer. When cream begins to thicken, sprinkle in confectioners' sugar and coconut extract. Mix in cooled gelatin all at once. Whip until soft peaks form. Cover and refrigerate.
  • Whisk flour, baking powder, white sugar, lime zest, poppy seeds, and salt in a large bowl. Cut in the shortening with a knife or pastry blender until the mixture resembles coarse crumbs. Beat the egg and buttermilk in a small bowl, lightly stir into flour mixture just until moistened. Turn out onto a floured work surface; knead 3 to 4 times, or until dough just comes together. Roll to 1/2 inch thickness; cut with a 3 inch round biscuit cutter. Place on prepared baking sheet.
  • Bake shortcakes in preheated oven until golden brown, about 15 to 18 minutes. Allow to cool slightly; split each cake in half horizontally.
  • To assemble, arrange fruit on the bottom half of each cake. Spoon or pipe cream evenly over fruit. Top each with remaining biscuit halves.

Line two muffin tins (mine were 6 muffins in each tin) with cupcake liners. Add a tablespoon and a half of the biscuit crumb to each cavity and press it down lightly till the base has an even layer of biscuit crumb. Refrigerate for 20 minutes.
  • Add gelatin and water to a bowl and mix well. Let this bloom for five minutes and then microwave for 20 seconds. Set aside.
  • In a blender, place cream cheese, cream, mango puree, icing sugar and the gelatin mixture. Blend for 3-4 minutes till thick and creamy.
  • Divide this mixture in the muffin tin since its filled to the top. Refrigerate the cheesecakes for 6-8 hours or overnight.
