MINI GREEK PITA PIZZAS
These cute mini Greek pita pizzas are the perfect healthy snack or meal for the whole family and can be customized with whatever toppings you desire! You can also serve them up to guests as a quick and easy appetizer! {Vegetarian & low calorie}

Steps:
- Preheat oven to 400 degrees F. Place 6 mini whole-wheat pitas or three sandwich thin halves on a baking sheet. Brush some olive oil evenly over each pita.
- Bake in the oven for 10 minutes or until lightly browned and crispy.
- Remove from oven and spread a thin layer of hummus over each round, going close to the edge.
- Top each round with equal amounts of diced tomato, cucumber, olives, red onion and feta. Serve immediately.

- In a small bowl, combine the ricotta cheese and garlic powder. Spread evenly over each pita bread.
- Top each pita bread with spinach, sliced tomatoes, feta cheese and basil.
- Bake for 12 to 15 minutes or until bread is lightly browned.

- Heat oil in a large nonstick skillet; cook the beef, onion and garlic over medium heat until meat is no longer pink, 5-6 minutes; drain. Stir in tomato sauce and rosemary; bring to a boil. Reduce heat; simmer, uncovered, until thickened, 6-9 minutes., Place pita halves, cut side up, on a baking sheet. Top with meat mixture, tomato, spinach and olives. Sprinkle with cheeses. Bake at 400° until cheeses are melted, 4-6 minutes.
