Mini burgers with bacon, layered on a bamboo skewer with lettuce, tomatoes and pickles! Who can resist your favorite foods on a stick - not me! These burger bites make the perfect low-carb appetizer to please everyone from age six to age sixty, just set out some ketchup and mustard for dipping and watch them disappear!

Steps:
- Using your hands, gently mix together the beef, bacon, mustard, salt, onion powder and pepper.
- Form into 30 (golf ball size) meatballs.
- Heat a grill or grill pan to high heat and grill 3 minutes on each side, or until your desired doneness.
- Place on skewers with lettuce, pickles and tomatoes and serve with ketchup and mustard for dipping.

- Divide a tube of refrigerated French bread dough into 12 pieces; roll into balls and place in oiled mini-muffin cups. Brush with a beaten egg and sprinkle with sesame seeds. Bake at 350 degrees F until golden, about 15 minutes. Remove from the pan and let cool. Form 1 pound ground beef into twelve 2-inch patties, place on a foil-lined baking sheet and bake 15 minutes. Split the buns; fill with the patties, sliced cheddar cheese, pickles, ketchup and mustard.

- Shape beef into twelve 1-in. patties. Place on a microwave-safe plate lined with paper towels. Cover with another paper towel; microwave on high for 1 minute until meat is no longer pink. Cut each slice of cheese into fourths; set aside., Using a 1-in. round cookie cutter, cut out 6 circles from each slice of bread. Spread half the bread circles with dressing. - Set oven to 350 degrees F. Combine burger ingredients in a large bowl and mix until combined.
- Using a mini ice cream scooper, scoop out about 1/2 oz of burger meat onto a greased baking dish and flatten each slightly using your hand. (If you use a 1/2 oz scoop, you should get about 30 mini burgers. If your using a 1 oz. scoop, you will get about 15 burgers.)
- Bake for 8-10 minutes or until pink juices are clear. In the meantime, mix up your burger sauce by combining all ingredients in a small bowl.
- When cooked through, remove from oven and add a cheese squares onto each burger. Bake another minute or so until cheese is melted.
- Skewer burgers onto skewer starting with lettuce, then tomato, then burger and finished with a pickle. Lay flat on a plate and drizzle with sauce. Serve immediately.

BACON CHEESEBURGER BITES

- Heat a skillet with a lid over medium heat. Add the bacon and cook, turning occasionally, until crisp, about 12 minutes.
- Meanwhile, mix together the ground beef, salt and pepper, Worcestershire sauce and garlic in a small bowl until well combined. Divide the mixture into 6 equal mini patties. Set aside.
- Remove the bacon from the skillet and set aside. Add the burger bites and cook until well browned all over and cooked through, 4 to 5 minutes per side. Add 2 of the quartered pieces of cheese to the top of each bite and cover the skillet with the lid. Allow the cheese to melt, 1 minute. Remove the bites to a plate.
- Tear each bacon piece into bite-size pieces. Start building up the bites by placing a piece of bacon on top of each patty, then a couple of folded leaves of spinach, a couple of pickles, a dollop of your favorite burger condiment, and a half a tomato, securing it all with a toothpick or small skewer. Repeat with the remaining ingredients until all the bites are built, and serve.
THE BEST "MINI BURGERS" YOU WILL EVER TASTE
These mini burgers are so good! The recipe comes from the Neely's. Everyone I have made these for starts craving them and wants more and more. Try these as the recipe is written for the best results and then change it up if desired. I have to tell you, I don't like mustard and I love cheese. This uses dijon mustard and does not have cheese. I even tried them with the cheese and didn't like them as well. Hope you enjoy!

- Mix hamburger, onion powder and salt and pepper to taste. Form into several mini burgers.
- Put burgers on grill or skillet. Add red onion slices around burgers to allow them to cook in the hamburgers juices.
- While burgers cook, mix mayo, dijon mustard, cayenne pepper and salt and pepper to taste.
- Remove burgers and onions when done. Drain grease from skillet. Toast buns in the skillet until they are the desired toastiness.
- Put mayo mix on bottom bun. Put burger on top of mix and top with onion and top bun.

- Bake waffle fries according to package directions. In a large skillet, cook onions in butter and oil over medium heat for 10 minutes. I love these cute little bite-sized burgers. They are excellent for parties, and football gatherings and always go down a storm with the men folk! Great for children's parties too! These can be prepared up to a day before hand, then assembled and grilled.

- For the patties:.
- Combine mince,onion,mustard and sauces in a bowl.
- Take two teaspoonfuls and shape into a ball, and then flatten slightly to form a patty. Repeat with all of the mixture.
- Cut 4 1/2 cm rounds from each slice of bread, 4 out of each slice. Brush with melted butter and bake in a moderate oven for approx 15 minutes, until lightly browned and crisp.

- Preheat oven to 350 degrees F (175 degrees C). Line a medium baking sheet with aluminum foil.
- In a medium skillet over medium high heat, stir together ground beef, dry onion soup mix and dry minced onion. Cook until beef is evenly brown. Remove from heat, drain and stir in mayonnaise and Cheddar cheese.

MINI BURGER BUNS RECIPE BY TASTY

- Add the lukewarm water to a 2-cup liquid measuring cup or medium bowl. Add the yeast and sugar and stir to combine. Let sit for 5-10 minutes, until frothy and doubled in volume.
- In a large bowl, whisk together the flour and salt. Add the butter, egg, and the yeast mixture and stir with a rubber spatula into a shaggy dough.
- Turn the dough out onto a clean surface and knead until smooth and soft, about 4 minutes. Place the dough in a clean large bowl lightly greased with nonstick spray and cover with a towel. Let rest until in a warm place until doubled in size, about 1 hour.
- Preheat the oven to 400°F ( 200°C). Line a baking sheet with parchment paper.
- Lightly grease a clean surface and place the dough on top. Pat down with your hands to about ¼-inch thick. Use a ¾-inch (2-cm) round cutter to cut out small circles. Place on the prepared baking sheet.
- Brush the tops of the buns with melted butter, then bake for 7-10 minutes, or until the tops are golden brown.
- Remove the buns from the oven and brush with more melted butter while they are still warm. Let cool for at least 5 minutes before serving.
