4 ounces (1/2 bunch) dandelion greens, coarsely chopped
1 bunch (6 ounces) rapini, tough stems removed and coarsely chopped
6 cups coarsely chopped cabbage (about 1/2 head)
1/4 cup extra-virgin olive oil, plus more for serving
2 ribs celery, chopped
2 cloves garlic, crushed
1 bay leaf
1/4 teaspoon crushed red-pepper flakes
1 ounce pancetta, chopped (about 1/4 cup)
2 cups Cheese Brodo
1 cup Prosciutto Brodo
Chicken Meatballs

Steps:

  • Bring a large pot of salted water to a boil over high heat. Add dandelion greens and cook until wilted, about 3 minutes. Using a slotted spoon or a wire skimmer, transfer greens to a colander to drain. Add rapini to boiling water and cook until soft, 3 to 5 minutes. Using a slotted spoon or a wire skimmer, transfer rapini to a colander to drain. Add cabbage to boiling water and cook until wilted, about 3 minutes. Drain and set greens aside.
  • In a large, heavy-bottomed pot, heat olive oil over medium heat. Add celery, garlic, bay leaf, and red-pepper flakes. Cook, stirring occasionally, until celery and garlic are soft and translucent, about 3 minutes. Add pancetta and cook, stirring occasionally until lightly browned and crisp, about 3 minutes. Stir in greens and both brodos. Let simmer until greens are tender, about 10 minutes; season with salt and pepper. Add meatballs during the last 5 minutes of cooking, if desired.
  • Ladle soup into warmed bowls; drizzle with olive oil and serve immediately.

3 medium carrots (sliced)
1 leek (sliced (white and light green portions only))
2 medium zucchini squash (cut into bite sized pieces)
3 cloves garlic
4 cups fresh spinach leaves
4 cups chicken stock
2 teaspoons dried oregano
1 teaspoon dried thyme
1 teaspoon dried basil
1 teaspoon Mrs. Dash table blend
Salt and pepper to taste
1 ¼ pounds lean ground turkey
1 tablespoon dried oregano
2 teaspoons dried thyme
2 teaspoons garlic powder
Salt and pepper to taste

Steps:

  • Preheat the oven to 400 degrees F.
  • In a large soup pot, saute the carrots, zucchini, sliced leeks, and garlic until vegetables are slightly softened.
  • While the vegetables are sauteing, mix the ground turkey and herbs by hand in a bowl until well blended. Roll the turkey into small meatballs @ 1" diameter (this will make 35-40 meatballs). Bake these in the oven for 15 minutes. Set aside.
  • When the vegetables have softened slightly, add in the chicken stock and the herbs and seasonings. Simmer until the vegetables are softened to your liking. Chop the spinach leaves and stir into the soup until wilted.
  • At this point you can either stir the meatballs into the soup, or you can place several meatballs in a bowl and spoon the vegetable soup on top. Either way, Enjoy!

This traditional soup is easy to make and is packed with nutrition and flavor.

2 tbsp Olive oil
1 medium Yellow or white onion, peeled and diced
4 cloves Fresh garlic, chopped fine
1 tsp Salt
3-4 cups Cooked cannellini beans or another white bean, divided
1 quart Chicken bone broth or chicken broth (Vegetable broth or water may be substituted. )
1 head Escarole or other tender green, washed and chopped
Parmigiano-Reggiano, grated (Optional)

Steps:

  • Pour olive oil into the saucepan or soup pot on the stove and turn the heat to medium.
  • Add onion to the heated olive oil, and sauté until the onion is softened and translucent. This process takes 2-3 minutes.
  • Add chopped garlic, and sauté for an additional minute until fragrant.
  • Add the salt, black pepper, and red pepper flakes.
  • Add half of the beans to the onion and garlic mixture. Mash the beans. (See video.)
  • Add the chopped escarole to the onion, garlic, and mashed bean mixture, and stir well to incorporate the greens.
  • Add the remaining beans and broth to the pot, stir well, and bring the mixture up to a boil. Next, turn the heat to medium, cover the pot, and allow the soup to simmer for 10 minutes.
  • After 10 minutes, turn off the heat. Your soup is ready to serve, and you can ladle it into soup bowls. If you want, you can also grate cheese on top of the soup.
  • This soup will stay fresh, refrigerated for 3-4 days. Or you can freeze it for up to 3 months.

2 garlic cloves, (minced)
1 Tbsp parsley, (dry (or 1/2 bunch fresh, chopped))
1 lb fresh greens* ((spinach, kale, green cabbage))
1 lb meatballs, (thawed if frozen)
4 oz Parmesan cheese (cut into small cubes)
Salt and Pepper ((to taste))

Steps:

  • In a medium soup pot, add the chicken stock, garlic, parsley, 1/2 of the fresh greens, and 1/2 of the Parmesan cubes. Heat over medium high heat, stirring often, scraping the bottom of the pot to catch any Parmesan that might get stuck.
  • Add the remaining greens and cheese as you have room in the pot. Bring to a simmer.
  • Add meatballs and simmer until they are heated through.
  • Taste and add salt and pepper as desired. Serve with crusty bread and extra, fresh grated, Parmesan cheese, if desired.

"Minestra Maritata" translates to married soup. The ingredients blend or "marry" well together, hence the name Minestra Maritata. I'm sure that someone not knowledgeable with the Italian language translated it to "Italian Wedding Soup." It is not a soup Italians serve at weddings. In this recipe, the escarole is cooked separately to remove some of the bitterness and to keep the soup from turning green.

1 roasting chicken, cut into parts (about 3 1/2 pounds)
1 large onion, chopped
4 stalks celery, chopped
3 carrots, peeled and chopped
20 ounces chicken broth (canned or fresh)
2 quarts water
1 lb ground beef
1/2 cup breadcrumbs
1 egg
1/2 teaspoon salt
1/4 teaspoon ground black pepper
1 tablespoon chopped fresh parsley (or 1 teaspoon dried parsley)
1 large onion, diced
4 stalks celery, chopped
3 carrots, peeled and sliced
1 bunch escarole, cleaned and chopped
salt and pepper, to taste
1/4 lb pasta, cooked according to package (small pasta, such as acini de pepe or ditalini)

Steps:

  • Place first 6 ingredients in a large pot. Bring to a boil., then immediately reduce to a simmer and cook until the chicken easily falls off the bones. Remove chicken from the broth and allow to cool. Reserve the broth. When the chicken has cooled enough to handle, remove all of the meat from the bones and chop meat into small pieces.
  • While the soup is cooking, make the meatballs. Mix together the ground beef, bread crumbs, egg, 1/2 teaspoon salt, 1/4 teaspoon black pepper and chopped parsley. Form into small meatballs and place on a baking pan. Bake in a 350 degree oven until fully cooked, approximately 15 minutes.
  • Strain the broth used to cook the chicken. Add the remaining onion, celery, and carrots. Bring to a boil, reduce to a simmer and cook until vegetables are tender.
  • Cook the escarole in a separate small pot of boiling salted water until wilted, about 10 minutes. Drain, squeeze dry and add to the broth. Add the cooked chicken, meatballs and cooked, drained pasta. Season to taste with salt and pepper. Heat well and serve accompanied by Parmesan cheese.

This recipe is called an Italian Wedding Soup, but you'll never find it at an Italian wedding.

3 tablespoons of olive oil
2 cloves garlic , peeled and finely minced
1/4 teaspoon crushed red chili pepper flakes
6 cups homemade beef or chicken broth
1 onion, peeled and cut in half
1 carrot , peeled and diced 1/4 inch
1 celery stalk, diced
4 sweet Italian sausages, casing removed and discarded and sausage broken into small, 1-inch pieces
1 bunch broccoli rabe , washed and roughly chopped
1 head escarole or chicory, washed and roughly chopped
1/2 head savoy cabbage, washed and roughly chopped
1 cup Parmigiano-Reggiano or Pecorino Romano cheese, freshly grated

Steps:

  • Gather the ingredients.
  • In a large, deep stockpot, heat the olive oil and garlic over medium heat until the garlic is just fragrant and very lightly colored, about 1 minute. Add the crushed red pepper and simmer for about 30 seconds.
  • Add the broth, onion, carrot, celery and sausage pieces, cover, lower the heat to low and simmer for about 20 to 30 minutes. (If you happen to have any leftover Parmigiano-Reggiano rinds, these would be a great addition to enrich your broth! Throw them in together with the onion, carrot, and celery.)
  • Meanwhile, blanch the chopped greens in abundant salted boiling water, 1 to 2 minutes, then drain well. This eliminates the excess bitterness.
  • Remove the onion, carrot, and celery from the broth and discard (discard any cheese rinds at this point also, if you're using them). Transfer the blanched greens into the broth and let simmer for another 20 to 30 minutes, or until the greens are tender and the broth is rich and savory.
  • Serve with freshly grated cheese sprinkled on top and slices of grilled or toasted crusty bread. A white wine, such as a Fiano or Greco di Tufo, would be a good pairing.

750g (1-1/2 lbs) of pork ribs
350g (3/4 lb) salt pork (or, if you can find it, lardo)
3-4 large mild Italian sausages (about 500g/1 lb.)
1 large salami
Salt and pepper
Aromatics to flavor the broth (see Notes)
Unsmoked pork rind (optional)
A prosciutto bone (optional)
1 head of escarole. trimmed and roughly chopped
1 head of chicory, trimmed and roughly chopped
1 small head of green cabbage, trimmed and sliced thin
1 bunch of broccoli rabe, trimmed and roughly chopped
150g (8 oz) of Parmesan, caciocavallo and/or another hard cheese, cut into cubes (see Notes)
Salt and pepper

Steps:

  • Blanch the salt pork for a few minutes in unsalted water to remove the excess saltiness.
  • Add the salt pork and other meats to a large pot and cover by at least 5cm/2 inches with water. Francesconi says that the water should cover the meats by 'four fingers', if you want to measure that way...
  • Salt the water lightly and bring the pot to a simmer, skimming carefully to remove the scum that will rise to the top. Then add your aromatics. Continue simmering for about 2-1/2 or 3 hours, until the meats are very tender and the broth is flavorful.
  • Let the soup cool, if possible overnight in the fridge. The fat will have risen to the top of the pot and solidify. Remove most (but not all) of the fat, then bring the pot back to the simmer. Fish out the meats and aromatics with a slotted spoon. Discard the aromatics.
  • Pull the pork off the ribs and cut up the other meats into bite-sized chunks and set aside, with a ladleful of the broth to keep it moist.
  • Fill another large pot with water, salt very lightly and bring to the boil. Chop or slice your vegetables and throw them into the boiling water.
  • As soon as the water comes back to the boil, drain them in a colander, rinse with cold water and then, using a spatula or wooden spoon (or even your hands) press out as much water as you can.
  • Add these blanched vegetables to the broth along with the cubed cheese. Mix and bring it all to a simmer. Let the pot cook gently for about 30 minutes, or until the vegetables are very soft. About 10 minutes or so before the vegetables are done, add back the meats.
  • Serve hot, with crusty bread and, for those who like it, some additional grated Parmesan cheese on the side.

  • Pour 1 tablespoon olive oil onto a medium-sized, unlined baking sheet. Using your hands spread the oil all over the bottom of the pan. Alternatively, spray lightly with cooking spray. Set aside.
  • In a large bowl, beat together the egg, garlic, parsley, basil, lemon zest, salt, and pepper. Add the turkey, breadcrumbs, and Parmesan cheese and mix with your hands until well combined.   • Meanwhile, in a large, heavy-bottomed pot, bring the chicken broth to a gentle boil. Add the pasta and cook over medium heat until just al dente, about 5 minutes. Lower the heat to a low simmer. Tip: Don't let the broth come to a rapid boil while cooking the pasta or too much of the liquid will evaporate.
