SPLIT PEA SOUP WITH CRISPY KIELBASA

Split Pea Soup with Crispy Kielbasa image

One of my all-time favorite comfort foods is a bowl of split pea soup, dating back to the days when my mother served us canned pea soup with cut-up hot dogs (very '50s!). Now I prefer a big pot of homemade soup to serve with sautéed kielbasa on top. I love the way the earthy, creamy soup contrasts with the crispy, spicy sausage.

Provided by Ina Garten

Time 1h45m

Yield 6 servings

Number Of Ingredients 13

Good olive oil
2 cups chopped leeks, white and light green parts, spun-dried (2 leeks)
1 1/2 cups chopped yellow onion (1 large)
2 cups (1/2-inch) diced, scrubbed carrots (3 large)
1 tablespoon minced garlic (3 cloves)
1 pound dry green split peas
8 cups good chicken stock, preferably homemade
1 smoked ham hock
8 fresh thyme sprigs, tied with kitchen twine
2 large fresh bay leaves
Kosher salt and freshly ground black pepper
12 ounces smoked kielbasa, halved lengthwise and sliced diagonally in 1/4-inch-thick pieces
Minced fresh parsley, for serving

Steps:

  • Heat 1/4 cup olive oil in a large (11 to 12-inch) pot or Dutch oven, such as Le Creuset, over medium-high heat. Add the leeks, onion, and carrots and cook for 7 to 8 minutes, stirring occasionally, until tender and starting to brown. Stir in the garlic and cook for one minute. Stir in the peas to coat with oil and cook for one minute. Add 8 cups of the chicken stock, 2 cups water, the ham hock, thyme bundle, bay leaves, 2 teaspoons salt, and 1 teaspoon pepper. Bring to a boil, lower the heat, and simmer, partially covered, for 1 1/4 hours, stirring occasionally, until the peas are very tender and falling apart. After 45 minutes, stir more frequently, scraping the bottom of the pot to be sure the soup doesn't burn.
  • Discard the thyme bundle, bay leaves, and ham hock. Transfer 2 cups of the soup to the bowl of a food processor fitted with the steel blade and purée. Return the purée to the pot, adding more chicken stock or water if the soup is too thick.
  • To serve, heat 2 tablespoons olive oil in a medium (10 to 11-inch) sauté pan over medium heat. Add the kielbasa and sauté for 5 to 6 minutes, tossing occasionally, until the kielbasa is browned. Serve the soup hot with the kielbasa and parsley sprinkled on top.
  • Make ahead: Reheat the soup over low heat, adding chicken stock or water to thin.

HEARTY & HEALTHY SPLIT PEA SOUP WITH HAM AND CORNBREAD CROUTONS

Hearty & Healthy Split Pea Soup with Ham and Cornbread Croutons image

Mimi's Split Pea Soup with Cornbread Croutons is an old-timey and satisfying bowl of steamy comfort. This recipe is a good way to use up leftover ham. Add chunks of russet and sweet potatoes and top off the bowl with crunchy cornbread croutons for a filling wintry meal.

Categories     Soups & Stews

Time 1h30m

Yield 6-8 servings

Number Of Ingredients 15

2 Tablespoons olive oil
1 large yellow onion, diced
2 cloves garlic, minced
1-2 teaspoons dried oregano
2 stalks celery, diced (optional)
3 carrots, peeled & diced OR sweet potatoes peeled & cut into chunks or diced
2 medium to large russet potatoes, cut into chunks or diced
1 lb diced ham OR 2 smoked ham hocks or 1 large smoked ham shank
1 pound green or yellow dried split peas
6 cups any combination low-sodium chicken broth and water
½ - 1 cup half-n-half (optional)
Croutons
Day old cornbread cut into large cubes OR day old bauguette cut into large cubes crust on
2 Tablespoons olive oil
3 Tablespoons butter, salted or unsalted

Steps:

  • Over medium-high heat, add olive oil. Once hot add onions & garlic and celery & carrots (if using). Stir and saute until the onion is translucent. Add oregano. Stir. Add ham, stir, and saute until the meat just begins to brown on the edges.5-7 minutes.
  • Add potatoes, sweet potatoes (if using) and ½ pound of split peas. If you're using ham hocks or a ham shank in place of diced ham, add to the pot. Cover with chicken stock/water. Bring to a boil, reduce to simmer, and cook uncovered for 45 minutes. Skim off the foam that rises to the top of the soup or stir the foam back into the soup Stir the pot every once in a while to prevent vegetables from sticking to the bottom of the pot.
  • At the end of cooking time, add the remaining split peas. Stir and continue to simmer uncovered for another 45 minutes or until all the vegetables are soft.
  • Remove ham hocks or shank. Stir. If the soup is too thick, add more chicken broth/water. If it's too thin, continue to simmer longer to the desired thickness. Remove meat from the hocks or shank and add back to the soup.
  • Leave the potatoes in chunks or mash them with a potato masher or use an immersion blender to make a creamy soup. Add half-n-half if using. Stir. Check for seasoning.
  • Ladle soup into deep bowls. Add croutons, sour cream or Greek yogurt, and sprinkle with ground black pepper.
  • For Croutons
  • Heat olive oil and butter in a 10" skillet over medium, medium-high heat. Once the butter begins to brown, add the cornbread cubes and brown on all sides - less than 5 minutes total. Remove from skillet and drain on paper towels.

SPLIT PEA SOUP WITH HAM

Split Pea Soup with Ham image

Split pea soup is an easy and cozy one-pot meal-and it's the perfect way to use leftover ham.

Categories     Easter     spring     winter     comfort food     dinner     main dish     soup

Time 1h40m

Yield 6-8 servings

Number Of Ingredients 13

3 tbsp. olive oil
2 c. diced ham (about 12 oz.)
1 yellow onion, chopped
3 carrots, peeled and sliced
2 celery stalks, sliced
3 garlic cloves, chopped
1 lb. dried green split peas
8 c. chicken stock
2 tsp. dried thyme
1 bay leaf, optional
1/2 tsp. salt, plus more to taste
1/2 tsp. ground black pepper, plus more to taste
Chopped fresh parsley, optional

Steps:

  • Heat a large Dutch oven or pot over medium heat. Add the olive oil and ham. Cook, stirring occasionally, until the ham pieces are golden brown, 8 to 10 minutes. Increase the heat to medium-high; add the onion, carrot, and celery and continue to cook until the vegetables are slightly softened, about 5 more minutes. Add the garlic and cook 1 more minute.
  • Meanwhile, place the split peas in a colander. Rinse them well and pick through and discard any tiny pebbles or debris.
  • Add the chicken stock, dried thyme and bay leaf, if using. Bring to a simmer, then reduce the heat to medium-low and cook, uncovered, stirring occasionally, for 1 hour and 30 minutes until the peas "split" open in the pot and are very tender. (If the pot stops simmering during cooking, increase the heat to medium until it returns to a simmer, then reduce the heat back to medium-low). Add 1/2 to 1 cup of water to reach desired consistency.
  • Season with the salt and black pepper. Serve topped with chopped parsley, if preferred.

MIMI'S VEGETABLE SOUP

Mimi's Vegetable Soup image

This is one of my all time favorites - my mom's (Mimi's) recipe for vegetable soup. What I like about this recipe is you can add a variety of fresh seasonal vegetables in addition to the "standards". And you can use canned or frozen vegetables as well. Personnally, I like fresh organic vegetables in this soup, but I've also used the canned for convenience, and the added liquid from the canned veggies adds some more flavor. I've tried this in my crock pot, but I like cooking it better on the stove - no sticking to the bottom that way. This recipe makes a pretty big pot of soup, so eat some now and freeze some for later. Add additional liquid as necessary to get the consistency you like for your soup. Enjoy!
