Steps:
- To make the meatballs: Whisk the first 7 ingredients in a large bowl to blend. Stir in the cheese and bread crumbs. Mix in the beef, veal, and pork. Using about 2 tablespoons of meat for each, shape the meat mixture into 1 1/4 to 1 1/2-inch-diameter meatballs. Place on a baking sheet.
- Heat the oil in heavy large frying pan over medium-high heat. Working in 2 to 3 batches, add the meatballs and saute until browned on all sides, about 5 minutes. Using a slotted spoon, transfer the meatballs to a plate. Pour off any excess oil. Return all the meatballs to the pan. Add the Marinara Sauce. Simmer over medium-low until the sauce thickens slightly and the flavors blend, about 10 minutes. Season the sauce, to taste, with salt and pepper. (The meatball mixture can be made 1 day ahead. Cool, then cover and refrigerate. Rewarm over medium heat before continuing.)
- To make the sandwiches: Spoon the hot meatballs with some sauce over the bottoms of the rolls. Place 1/2 slice provolone on top of meatballs and sprinkle with the Parmesan. Spread more sauce over the roll tops, then fold the tops of the rolls over and serve.
- In a large casserole pot, heat the oil over a medium-high flame. Add the onions and garlic and saute until the onions are translucent, about 10 minutes. Add the celery, carrots, and 1/2 teaspoon of each salt and pepper. Saute until all the vegetables are soft, about 10 minutes. Add the tomatoes and bay leaves, and simmer uncovered over low heat until the sauce thickens, about 1 hour. Remove and discard the bay leaves. Season the sauce with more salt and pepper, to taste. (The sauce can be made 1 day ahead. Cool, then cover and refrigerate. Rewarm over medium heat before using.)

- Soak the bread in the milk in a medium bowl for 5 minutes. Squeeze out excess milk and tear the bread into bite-size pieces. Return the bread to the bowl. Mix the bread with the ground beef, pork, onion, allspice, egg, 1 teaspoon salt and a few grinds of pepper. Form into small balls about the size of a heaping tablespoon.
- Spray the basket of a 3.5-quart air fryer with cooking spray and preheat to 360 degrees F.
- Fill the basket with the meatballs and cook, shaking the tray halfway through, until browned, tender and cooked through, about 10 minutes. Serve with lingonberry jam.

- Mix together the beef and 2 cups of tomatoes, bread crumbs, eggs, salt, pepper, oregano, and onion. Form into 24 good size meatballs. wrap each meatball with a bacon slice overlapping bacon carefully.
- Place the meatballs in a large flat baking dish so that the over lapping bacon is on bottom.
- Bake at 350°F for 45 minutes, or until the bacon is crisp.
- Remove from oven and pour off the fat.
- Combine the sour cream and the remaining 2 cups of tomatoes.
- Pour over the meatballs and return to the oven. Turn off the heat. Serve with rice once the sauce is hot.

- Preheat the oven to 375 degrees F. Line the bottom of a sheet pan with parchment paper.
- Flatten each roll into a 6-inch round. Onto each flattened roll, add a half slice of provolone, 1 tablespoon of marinara sauce, a meatball and, finally, a slice of the deli peppers.
- Fold opposite sides of each roll up and over the meatball, pinching them together. Continue folding and pinching the sides together until the meatball and filling are completely encased in the dough. Place seam-side down onto the prepared sheet pan.

- Mix the meat with the breadcrumbs, milk, garlic, salt and pepper, and knead the mixture together with you hands. Roll into heaping tablespoon-sized rolls.
- Heat the olive oil in a large skillet over medium heat. Add the onions and cook for 1 minute. Add the meatballs between the onions and brown for 1 minute. (You might have to do this in two batches, depending on the size of your skillet.)
- Pour in the jar of marinara and shake the skillet gently to mix. Put on a lid and allow to simmer for 20 minutes.
- When ready to serve, cut each dinner roll in half. Place a handful of grated mozzarella on the top and bottom of each roll. Spoon a meatball with the sauce onto the bottom bun; top with the top bun. Serve immediately!

- In large bowl, lightly combine ground beef with corn chips, milk, egg and 1 t salt.
- Cover and refrigerate 1 hour.
- Shape into 15 meatballs, using 2 Rounded Tablespoons meat mixture for each.
- Lightly roll meatballs in 2 T Flour, coating completely.
- In large frying-pan, cook meatballs in hot butter, half at a time, stirring until evenly browned.

MINI MEATBALLS
I don't remember where I found this recipe - I've made it so often, I've memorized it. The trick to these meatballs is to only plan to use half of them - that's all I ever have left by the time I'm ready to put them in something else. It's the only time I've ever had ground beef melt in my mouth.
