2 tablespoons peanut oil, divided
1 tablespoon Cajun seasoning
10 ounces andouille sausage, sliced into rounds
1 pound boneless skinless chicken breasts, cut into 1 inch pieces
1 onion, diced
1 small green bell pepper, diced
2 stalks celery, diced
3 cloves garlic, minced
1 (16 ounce) can crushed Italian tomatoes
½ teaspoon red pepper flakes
½ teaspoon ground black pepper
1 teaspoon salt
½ teaspoon hot pepper sauce
2 teaspoons Worcestershire sauce
1 teaspoon file powder
1 ¼ cups uncooked white rice
2 ½ cups chicken broth

Steps:

  • Heat 1 tablespoon of peanut oil in a large heavy Dutch oven over medium heat. Season the sausage and chicken pieces with Cajun seasoning. Saute sausage until browned. Remove with slotted spoon, and set aside. Add 1 tablespoon peanut oil, and saute chicken pieces until lightly browned on all sides. Remove with a slotted spoon, and set aside.
  • In the same pot, saute onion, bell pepper, celery and garlic until tender. Stir in crushed tomatoes, and season with red pepper, black pepper, salt, hot pepper sauce, Worcestershire sauce and file powder. Stir in chicken and sausage. Cook for 10 minutes, stirring occasionally.
  • Stir in the rice and chicken broth. Bring to a boil, reduce heat, and simmer for 20 to 25 minutes, or until liquid is absorbed.

10 ounces cream of mushroom soup (condensed)
12 lbs ground beef
3 1/4 cups breadcrumbs (croutons that are Ground up)
3 cups onions (Diced 1/4 inch)
7 large eggs
1 tablespoon salt
1 tablespoon pepper
2 tablespoons garlic powder
1 gallon gravy (ingredients below)
30 ounces cream of mushroom soup (condensed)
12 ounces brown gravy mix (Dry)
3 1/4 quarts water
1 tablespoon steak seasoning (Montreal)

Steps:

  • Make Gravy (add Water, Soup gravy mix and Seasoning) cook till thick stirring Constantly set aside.
  • in a large commercial mixer (with paddle).
  • add all ingredients for patties mix well.
  • weigh and form patties, place on a parchment lined sheet pan.
  • bake in a 350* oven, (till it reaches 165* internal temperature).
  • in a 4" full hotel pan, layer patties and cover with gravy mixture.
  • cover with parchment and foil Return to the oven to heat till everything returns to 165*.
  • Serve Hot or hot hold till service.

1 cup cornstarch (divided)
10 tablespoons water (to mix with Cornstarch)
2 1/2 teaspoons garlic powder (Mix with cornstarch mixture)
5 lbs beef (i use Round or knuckle Sliced and cut into strips)
20 cups stir fry vegetables
10 tablespoons oil (divided)
2 1/2 cups water (for sauce)
1 2/3 cups soy sauce
3/4 cup brown sugar
5 teaspoons ginger (ground)
20 cups cooked rice

Steps:

  • mix 10 tbs cornstarch, garlic, and water till smooth.
  • coat beef with cornstarch mixture.
  • stir fry beef in 5 tbs oil till 140* internal temp, remove from heat and keep warm.
  • stir fry the Veggies in remaining oil for 4 minutes.
  • return beef to pan.
  • mix remaining corn starch, soy sauce, ginger, brown sugar , and remaining water till smooth.
  • add sauce to pan, cook 2 minutes.
  • serve over cooked rice.

4 cups onions (Diced)
5 cups bell peppers (Diced)
3 1/2 cups celery (Diced)
135 ounces stewed tomatoes
10 cups chicken broth
5 cups parboiled rice (uncooked)
2 tablespoons Tabasco sauce
4 lbs shrimp (uncooked peeled and veined)
2 1/2 lbs sausage (Kielbasa cut into 1/2 inch slices)
2 tablespoons thyme
2 tablespoons butter

  • Add Butter to large Pot.
  • Saute' Chicken till done.

1 pound boneless skinless chicken breasts, cut into 1-inch cubes
1/2 pound andouille sausage, diced
1 (28-ounce) can diced tomatoes
1 medium onion, chopped
1 green bell pepper, seeded and chopped
1 stalk celery, chopped
1 cup reduced-sodium chicken broth
2 teaspoons dried oregano
2 teaspoons Cajun or Creole seasoning
1 teaspoon hot sauce
2 bay leaves
1/2 teaspoon dried thyme
1 pound frozen peeled and cooked shrimp, thawed
2 cups cooked rice

Steps:

  • In a slow cooker, combine chicken, sausage, tomatoes, onion, green pepper, celery, and chicken broth. Stir in oregano, Cajun seasoning, hot sauce, bay leaves, and thyme.
  • Cover, and cook on LOW for 7 hours or on HIGH for 3 hours. Stir in the thawed shrimp, cover and cook until the shrimp is heated through, about 5 minutes. Discard bay leaves and spoon mixture over cooked rice.

2 cups chopped fully cooked smoked sausage
1 tablespoon parsley flakes
1/2 teaspoon dried thyme leaves
1/2 teaspoon salt

3/4 pound uncooked peeled deveined medium shrimp, thawed if frozen
4 cups hot cooked rice

Steps:

  • In 3 1/2- to 6-quart slow cooker, mix all ingredients except shrimp and rice.
  • Cover; cook on Low heat setting 7 to 8 hours (or High heat setting 3 to 4 hours).
  • Stir in shrimp. If needed, reduce heat setting to Low; cover and cook on Low heat setting about 1 hour longer or until shrimp are pink and firm. Serve jambalaya with rice. Note: This recipe was tested in slow cookers with heating elements in the side and bottom of the cooker, not in cookers that stand only on a heated base. For slow cookers with just a heated base, follow the manufacturer's directions for layering ingredients and choosing a temperature.

1 tablespoon canola oil
1 celery stalk, diced
1 yellow bell pepper, diced

1 (16 ounce) can chicken broth
1 (16 ounce) can diced tomatoes
2 cups instant brown rice

Steps:

  • Bring a large pot of water to a boil. Boil sausage until hot, 8 to 12 minutes; drain.
  • Heat canola oil in a pot over medium-high heat; saute sausage, celery, bell pepper, and onion in hot oil until vegetables start to soften, about 5 minutes.

1/4 cup steak seasoning
5 cups vegetable oil
1 1/4 cups lemon juice
1/2 cup seasoning salt (Mrs. Knudson's , or 2 oz Johnny's)
2 tablespoons lemon pepper
1/2 cup garlic (minced)
1/2 cup parsley (Dry)
1/2 cup balsamic vinegar
1/2 cup red wine vinegar
1/4 cup sesame oil
12 lbs flank steaks

Steps:

  • to prepare london broil.
  • trim fat and silver skin from steak.
  • score lines in the meat, by lightly cutting diagonally across the grain into both sides.
  • put in a large container, pour marinade over each steak and make sure it is evenly coated.
  • refrigerate at least 12 hours.
  • put steaks on a sheet pan cook in oven at 350* till internal temperatures reach 130*.
  • place steaks on hot grill to mark, flip and turn to mark other side.
  • steaks are done at 140* internal temperature.
  • remove from heat and rest 10 minutes.
  • slice thin 1/8th inch diagonally across the grain for tenderness.
