½ cup butter
½ cup vegetable oil
4 tablespoons unsweetened cocoa powder
1 cup water
2 cups all-purpose flour
2 cups white sugar
2 eggs
½ cup buttermilk
1 teaspoon vanilla extract
½ cup butter
6 tablespoons heavy cream
4 tablespoons unsweetened cocoa powder
1 (16 ounce) package confectioners' sugar
1 teaspoon vanilla extract

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease and flour a 9x13 inch pan. In a saucepan, combine 1/2 cup butter, oil, 4 tablespoons cocoa, and 1 cup water. Boil for 1 minute.
  • In a large bowl, mix flour and white sugar. Beat in chocolate mixture. Beat in eggs, buttermilk and 1 teaspoon vanilla. Pour batter into prepared pan.
  • Bake in the preheated oven for 25 minutes, or until a toothpick inserted into the center of the cake comes out clean. Allow to cool.
  • To make the Frosting: In saucepan, combine 1/2 cup butter, 6 tablespoons cream, and 4 tablespoons cocoa. Boil for 1 minute. Place confectioners' sugar in a large bowl. Pour in chocolate mixture and beat until desired consistency is achieved. Beat in vanilla.

This recipe is great. It makes a very light (not compact) carrot bread/cake and is so simple to make!! I substituted light muscovado sugar for the brown sugar and cake was darker than usual but just as yummy.

1 1/2 cups all-purpose flour
1 teaspoon baking soda
2 teaspoons baking powder
2 teaspoons cinnamon
1/2 teaspoon salt
1 cup vegetable oil
1 1/2 cups brown sugar, firmly packed
3 eggs
1/2 cup chopped walnuts
1/2 cup canned crushed pineapple in juice, drained
1/2 cup raisins
1 cup finely shredded carrot

Steps:

  • Sift first five ingredients into a mixing bowl.
  • In a separate bowl, whisk together the oil, sugar and eggs.
  • Stir the liquid mixture into the flour; mix well.
  • Add the next four ingredients; stir again.
  • Grease and flour a 9-inch square pan or four mini-loaf pans. (Fill the pans 2/3 full with batter).
  • Bake at 350* for about 40 minutes. (Mini loaves take about 30 minutes.).
  • Yield: one 9-inch square, or four 3" x 6" mini-loaves.

This a three-layer chocolate cake that is yummy. It has a whipped cream filling and a butter frosting on the top and sides. What a wonderful combination. You may use my Recipe #208958 (1 1/2 batches to make the 4 cups) or your own.

1 cup butter (softened)
2 1/2 cups sugar
4 eggs
1 1/2 teaspoons vanilla
2 3/4 cups flour
1 cup baking cocoa
1/2 teaspoon baking powder
1/2 teaspoon salt
2 cups water
1 cup whipping cream
1/4 cup confectioners' sugar
1 teaspoon vanilla
4 cups butter frosting (of your choice)

Steps:

  • In a mixing bowl cream butter and sugar.
  • Add eggs, one at a time, beating well after each addition.
  • Beat on high speed till light and fluffy.
  • Stir in vanilla.
  • Combine dry ingredients and add to creamed mixture alternately with water.
  • Pour into three greased and floured 9" pans.
  • Bake at 350 degrees for 25-30 minutes or till done.
  • Cool for 10 minutes before removing from pans; cool completely before frosting.
  • FROSTING:.
  • In a mixing bowl beat the whipping till stiff peaks form; beat in confectioners sugar; add vanilla.
  • ASSEMBLY:.
  • Place bottom cake layer on a serving plate; spread with half of the whipped cream filling.
  • Repeat and then place the top layer on.
  • Frost top and sides of cake with butter frosting.
  • Store in refrigerator because of the whipped cream.

This is a fantastic cake starting with a cake mix and so easy to do. I bake it in a angel food pan and it comes out great. Frost it with a butter frosting or cooked frosting and sprinkle with coconut and you will have a beauty of a cake. This is nice and dark and the white frosting makes it look so yummy.

1 (18 ounce) package devil's food cake mix (I use Duncan Hines)
1 (3 ounce) package chocolate fudge instant pudding mix
4 eggs
3/4 cup water
1/2 cup sour cream
1/4 cup canola oil

Steps:

  • Combine all the ingredients in a large mixing bowl.
  • Blend and scrape bowl; then beat at medium speed for 4 minutes.
  • Pour into greased and floured 10" tube pan.
  • Bake at 350° for 55-60 minutes or till done. Do not underbake.
  • Cool in pan for 15 minutes.
  • Remove from pan and finish cooling on rack.
  • Frost if desired or sprinkle confectioners sugar over it.
