This is my father-in-laws recipe for chili. I love to make it on a cold winter night. Sometimes I serve it with Corn Chips in the bottom of the bowl, topped with the chili and then top the chili with grated cheddar cheese

2 lbs ground beef
1 large onion, chopped
2 garlic cloves, minced
1 (15 ounce) can tomato sauce
1 (6 ounce) can tomato paste
1 (15 ounce) can tomatoes
1 (15 ounce) can diced tomatoes with green chilies
1 (12 ounce) bottle dark beer
1 teaspoon ground cumin
1 teaspoon paprika
2 teaspoons chili powder
1 teaspoon oregano
1 teaspoon salt
1/2 teaspoon pepper
1 teaspoon Worcestershire sauce
1 (28 ounce) can chili beans

Steps:

  • Saute meat, onions and garlic until done.
  • Add remaining ingredients and simmer for 2 hours.
  • The beer is optional but does add a good flavor and, of course, the alcohol is cooked out during cooking.

Steps:

  • Brown the beef and drain the fat off.
  • Crumble the cooked beef into pea size pieces.
  • In a large pot, combine the beef plus the remaining ingredients and bring to a simmer over low heat.
  • Cook stirring every 15 minutes for 2-3 hours.

1 tablespoon olive oil
1 onion, diced (1 cup)
1 red bell pepper, diced (1 cup)
2 carrots, diced (1/2 cup)
2 teaspoons ground cumin
1 pound extra-lean ground beef (90 percent lean)
One 28-ounce can crushed tomatoes
2 cups water
1 chipotle chile in adobo sauce, seeded and minced
2 teaspoons adobo sauce from the can of chipotles
1/2 teaspoon dried oregano
Salt and freshly ground black pepper
One 15.5-ounce can black beans, drained and rinsed
One 15.5-ounce can kidney beans, drained and rinsed
One 15.5-ounce can pinto beans, drained and rinsed

Steps:

  • Heat the oil in large pot or Dutch oven over moderate heat. Add the onion, bell pepper and carrots, cover and cook, stirring occasionally until the vegetables are soft, about 10 minutes. Add the cumin and cook, stirring, for 1 minute. Add the ground beef; raise the heat to high and cook, breaking up the meat with a spoon, until the meat is no longer pink. Stir in the tomatoes, water, chipotle and adobo sauce, oregano and salt and pepper. Simmer, partially covered, stirring from time to time, for 30 minutes. Stir in the beans and cook, partially covered, 20 minutes longer. Season, to taste, with salt and pepper.

2 1/2 pounds beef stew meat or beef chuck, cut into 1-inch cubes
2 1/2 pounds pork stew meat or shoulder, cut into 1- inch cubes
1 tablespoon kosher salt
Freshly ground black pepper
1/3 to 1/2 cup corn oil
2 large Spanish onions, chopped
10 large cloves garlic, minced
1/3 cup chili powder, plus 2 tablespoons
1 tablespoon ground cumin
2 teaspoons dried oregano
1 (15-ounce) can diced tomatoes
5 cups low-sodium chicken broth
2 (15 1/2-ounce) cans pinto beans, drained and rinsed

Steps:

  • Serving suggestions: White rice, chopped cilantro, shredded Cheddar, chopped tomatoes, minced fresh or pickled jalapeno peppers
  • Pat the meat dry with a paper towel and season with the salt and pepper. Heat 2 tablespoons of the oil in a large stew pot or Dutch oven over medium-high heat. Sear the meat, in small batches, until well browned, adding more oil to the pan as needed. Transfer meat to a bowl and reserve.
  • Discard all but 2 tablespoons of oil from the pan. Saute the onions over medium heat for 10 minutes, scraping up the browned bits with a wooden spoon from the bottom of the pan. Add the garlic and saute for 2 minutes more. Stir in the 1/3 cup chili powder, cumin, and oregano and cook for 2 minutes. Add the canned diced tomatoes and whisk in 4 cups of the stock. Add the meat and any accumulated juices back to the pot. Bring to a gentle simmer. Season the chili with the salt and pepper, cover, and cook for 30 minutes.
  • In a food processor or blender puree half of the beans with the remaining 1 cup of stock. Add the bean mixture to the chili along with the whole beans. Let simmer, uncovered, 1 hour more or until the meat is tender. Stir in the remaining 2 tablespoons chili powder and season with salt and pepper, to taste. Serve with rice and suggested condiments.

A flavorful chili from South American Food and Cooking. Prep time does not include soaking beans. Instructions from the original recipe are for cooking in the oven, but I find cooking it in a pot on the stovetop gives you a better idea of when the beans are cooked, as well as how thick or watery the stew is. This is really nice served with Recipe #235092.

1 1/4 cups dried black beans
1 1/4 lbs braising steak
2 tablespoons vegetable oil
2 onions, chopped
1 garlic clove, crushed
1 fresh green chile, seeded and finely chopped
1 tablespoon paprika
2 teaspoons cumin
2 teaspoons coriander
1 (14 ounce) can chopped tomatoes
1 1/4 cups beef stock
1 dried red chili, crumbled
1 teaspoon hot pepper sauce
1 fresh red bell pepper, seeded and chopped
salt
cilantro (garnish)
cooked rice

Steps:

  • put the beans in a large pan. cover with cold water, bring to a boil and boil vigorously for 10 minutes. drain, tip into a bowl and cover with cold water to soak overnight.
  • If using the oven, preheat to 300. cut the steak into small dice.
  • heat oil in a large, flameproof casserole or stew pot.
  • add the onion, garlic and green chile and cook gently for 5 minutes till soft.
  • transfer to a plate.
  • increase heat to high, add the meat to the casserole and brown on all sides, then stir in the paprika, ground cumin and ground coriander.
  • add the tomatoes, beef stock, dried chili and hot pepper sauce.
  • drain the beans and add them to the casserole, with enough water to cover.
  • bring to a simmering point, cover and cook in the oven for about 2 1/2 - 3 hours.
  • stir occasionally and add extra water as needed, to prevent from drying out.
  • season with salt to taste and add the chopped red pepper.
  • replace the lid, return to the oven and cook for about 30 minutes more, or till the meat and beans are tender.
  • Alternate cooking method: If you don't want to use the oven, you can just put the whole thing in a large pot and simmer it on the stove for a few hours - till beef and beans are tender.
  • sprinkle with fresh cilantro and serve over cooked rice.

I could not find canned mixed beans and therefore doubled the red kidney beans as a personal preference. I used baked beans in tomato sauce but think you could also use white beans in tomato sauce (I couldn't buy them here) Enjoy!

1½ tbsp rapeseed oil
1 onion , sliced
2 peppers , sliced
2 garlic cloves , crushed
1 tbsp ground cumin
1 tbsp ground coriander
2 tsp hot smoked paprika
400g can chopped tomatoes
400g can mixed beans , drained
400g can black beans , drained
pinch of sugar
250g brown rice
½ small bunch coriander , chopped
soured cream or guacamole, to serve (optional)

Steps:

  • Heat the oil in a casserole dish and fry the onion and peppers for 10 mins over a medium heat until the onion is golden brown. Add the garlic and spices, and fry for 1 min. Pour in the tomatoes, both cans of beans, 50ml water, then add the sugar and season. Simmer, stirring regularly, for 15-20 mins until thickened.
  • Meanwhile, cook the rice following pack instructions. Serve the chilli on the rice and scatter over the coriander. Top with a spoonful of soured cream, or guacamole, if you like.

This is my personal creation...it is a perfect blend of spicy, hearty, and just plain Yummy!! This is also a great topper for Taco salads instead of just Taco meat! Also excellent topped with colby/jack cheese and sour cream served with Tortilla chips! Play around with it and make it our own!! Hope you love it!

1 lb lean ground beef
1 medium red onion diced
3 clove garlic finely minced
1 can(s) tomato sauce
1 can(s) petite diced tomatoes
1 can(s) diced tomatoes with greeen chiles
1 can(s) dark red kidney beans
1 can(s) chili beans
1 can(s) black beans (rinsed & drained)
2 Tbsp chili powder
1 Tbsp cumin
1 Tbsp paprika
2 tsp salt
1 tsp pepper
1 Tbsp whorchestire sauce
1/4 c ketchup

Steps:

  • 1. Cook ground beef with the red onion & garlic in a large pot until meat is browned and onions are beginning to turn translucent.
  • 2. Add all remaining ingredients to pot and simmer over low heat for at least 1 hour.
  • 3. At the end of the hour taste the chili and re-season if needed. Continue to cook for another 30-45 minutes if you re-season.
  • 4. Serve hot with you're favorite toppings, like: Shredded Cheese, Sour cream, Tortilla chips, or just plain old saltine crackers! Enjoy!
