This is my father-in-laws recipe for chili. I love to make it on a cold winter night. Sometimes I serve it with Corn Chips in the bottom of the bowl, topped with the chili and then top the chili with grated cheddar cheese

- Heat the oil in large pot or Dutch oven over moderate heat. Add the onion, bell pepper and carrots, cover and cook, stirring occasionally until the vegetables are soft, about 10 minutes. Add the cumin and cook, stirring, for 1 minute. Add the ground beef; raise the heat to high and cook, breaking up the meat with a spoon, until the meat is no longer pink. Stir in the tomatoes, water, chipotle and adobo sauce, oregano and salt and pepper. Simmer, partially covered, stirring from time to time, for 30 minutes. Stir in the beans and cook, partially covered, 20 minutes longer. Season, to taste, with salt and pepper.

CHILI CON CARNE

- Serving suggestions: White rice, chopped cilantro, shredded Cheddar, chopped tomatoes, minced fresh or pickled jalapeno peppers
- Pat the meat dry with a paper towel and season with the salt and pepper. Heat 2 tablespoons of the oil in a large stew pot or Dutch oven over medium-high heat. Sear the meat, in small batches, until well browned, adding more oil to the pan as needed. Transfer meat to a bowl and reserve.
- Discard all but 2 tablespoons of oil from the pan. Saute the onions over medium heat for 10 minutes, scraping up the browned bits with a wooden spoon from the bottom of the pan. Add the garlic and saute for 2 minutes more. Stir in the 1/3 cup chili powder, cumin, and oregano and cook for 2 minutes. Add the canned diced tomatoes and whisk in 4 cups of the stock. Add the meat and any accumulated juices back to the pot. Bring to a gentle simmer. Season the chili with the salt and pepper, cover, and cook for 30 minutes.
- In a food processor or blender puree half of the beans with the remaining 1 cup of stock. Add the bean mixture to the chili along with the whole beans. Let simmer, uncovered, 1 hour more or until the meat is tender. Stir in the remaining 2 tablespoons chili powder and season with salt and pepper, to taste. Serve with rice and suggested condiments.
BLACK BEAN CHILI CON CARNE
A flavorful chili from South American Food and Cooking. Prep time does not include soaking beans. Instructions from the original recipe are for cooking in the oven, but I find cooking it in a pot on the stovetop gives you a better idea of when the beans are cooked, as well as how thick or watery the stew is. This is really nice served with Recipe #235092.

- put the beans in a large pan. cover with cold water, bring to a boil and boil vigorously for 10 minutes. drain, tip into a bowl and cover with cold water to soak overnight.
- If using the oven, preheat to 300. cut the steak into small dice.
- heat oil in a large, flameproof casserole or stew pot.
- add the onion, garlic and green chile and cook gently for 5 minutes till soft.
- transfer to a plate.
- increase heat to high, add the meat to the casserole and brown on all sides, then stir in the paprika, ground cumin and ground coriander.
- add the tomatoes, beef stock, dried chili and hot pepper sauce.
- drain the beans and add them to the casserole, with enough water to cover.
- bring to a simmering point, cover and cook in the oven for about 2 1/2 - 3 hours.
- stir occasionally and add extra water as needed, to prevent from drying out.
- season with salt to taste and add the chopped red pepper.
- replace the lid, return to the oven and cook for about 30 minutes more, or till the meat and beans are tender.
- Alternate cooking method: If you don't want to use the oven, you can just put the whole thing in a large pot and simmer it on the stove for a few hours - till beef and beans are tender.
- sprinkle with fresh cilantro and serve over cooked rice.

MANY BEANS CHILI CON CARNE
Taken from the Company's Coming - Stews, Chilies & Chowders Cookbook. Rich,spicy flavor. Filling and satisfying. I could not find canned mixed beans and therefore doubled the red kidney beans as a personal preference. I used baked beans in tomato sauce but think you could also use white beans in tomato sauce (I couldn't buy them here) Enjoy!

- Heat the oil in a casserole dish and fry the onion and peppers for 10 mins over a medium heat until the onion is golden brown. Add the garlic and spices, and fry for 1 min. Pour in the tomatoes, both cans of beans, 50ml water, then add the sugar and season. Simmer, stirring regularly, for 15-20 mins until thickened.
- Meanwhile, cook the rice following pack instructions. Serve the chilli on the rice and scatter over the coriander. Top with a spoonful of soured cream, or guacamole, if you like.

This is my personal creation...it is a perfect blend of spicy, hearty, and just plain Yummy!! This is also a great topper for Taco salads instead of just Taco meat! - 1. Cook ground beef with the red onion & garlic in a large pot until meat is browned and onions are beginning to turn translucent.
- 2. Add all remaining ingredients to pot and simmer over low heat for at least 1 hour.
- 3. At the end of the hour taste the chili and re-season if needed. Continue to cook for another 30-45 minutes if you re-season.
- 4. Serve hot with you're favorite toppings, like: Shredded Cheese, Sour cream, Tortilla chips, or just plain old saltine crackers! Enjoy!

- Melt the butter with the vegetable oil in a large stock pot over medium high heat. Cook the bell peppers, onions and garlic for about 5 minutes.
- Sprinkle the chili powder, cumin, coriander and cinnamon over the vegetables and cook, stirring occasionally for another 5 minutes or until the vegetables begin to soften.
- Add the ground sirloin to the vegetables and break up with a wooden spoon or spatula. Cook until beef is browned and cooked through, about 5-7 minutes.
