Lebanese green beans are a warm, spiced green bean dish mixing tomatoes, green beans, cinnamon and cumin.

Steps:
- Heat 3 Tablespoons olive oil in a large saute pan over medium high heat. Add the onion and sauté for 3-4 minutes. Add garlic and continue to sauté for 2 minutes {if you are using meat, it can be added here and sautéed for an addition 4 minutes}.
- Add the green beans, cumin, cinnamon and diced tomatoes and mix together. Bring to a boil, then cover and turn the heat down to low. Simmer for 40-45 minutes, or until green beans {and meat if using it} are tender, stirring occasionally. Adjust seasonings to taste as well as salt and pepper.
- Serve warm over rice or quinoa with a side of pita bread and yogurt.

- Add in the garlic, red pepper flakes, Seven Spice, and salt. Stir, cooking, until fragrant, about 1-2 minutes.

Steps:
- Heat olive oil in large skillet over medium-high heat. Add beef cubes and cook, stirring frequently, until browned on all sides. Transfer to Crock-Pot cooker with 1 tablespoon olive oil drizzled on top.
- Stir in tomatoes, green beans, onions, cinnamon, allspice, sugar, and any other seasonings you desire. Cover. Cook on LOW 8 HOURS or HIGH 4 HOURS.
- Uncover, let stand for 15 minutes for flavors to absorb.
- Serve with either basmati rice, or couscous.
MIDDLE EASTERN GREEN BEANS AND TOMATOES
Green beans and tomatoes are a terrific combination which I found out when my BF and I ordered this dish at a middle eastern restaurant a few years ago. It can be found in Italian cuisine as well but I prefer the middle eastern (Lebanese) variety. This is a meatless version which I adapted from a recipe off the internet and like to serve over rice or couscous, making a light meal or more substantial side dish. The idea is to cook until the beans are in between soft and crisp so they have a nice consistency that goes well with the tomatoes. If you have no problem with inauthenticity, sprinkle with parmesan cheese too and you'll get the best of both worlds.

- Begin cooking rice.
- Meanwhile, heat olive oil over medium heat and saute onions about 5 minutes.
- Add green beans and saute about 8-10 minutes.
- Add garlic and saute 1 minute.
- Add tomatoes, salt, pepper, allspice and sugar and bring to boil. At this point if you feel the mixture is too dry you can add up to 1/4 cup of water.
- Cover and cook 15-20 minutes.
- Serve over warm rice with parsley sprinkled on top if desired.

- Cut the lamb into 1 inch pieces, dry, salt, pepper, and very lightly coat with flour. Cook in a pot on very high heat in a small amount of olive oil until browned. do this in 2 batches, making sure to brown everything really nicely. Remove the meat from the pan and set aside.
- Add the onion to the pan, scraping the pan to release any brown bits. If there is any stubborn brown bits that are beginning to burn, splash a little water into the pan and they should come off easily. Cook the onions until they are beginning to brown.
