REAL MEATBALLS AND SPAGHETTI

Real Meatballs and Spaghetti image

For homemade Italian comfort, make Ina Garten's Real Meatballs and Spaghetti recipe from Barefoot Contessa on Food Network, starring veal, pork and beef.

Provided by Ina Garten

Categories     main-dish

Time 2h

Yield 6 servings

Number Of Ingredients 23

1/2 pound ground veal
1/2 pound ground pork
1 pound ground beef
1 cup fresh white bread crumbs (4 slices, crusts removed)
1/4 cup seasoned dry bread crumbs
2 tablespoons chopped fresh flat-leaf parsley
1/2 cup freshly grated Parmesan cheese
2 teaspoons kosher salt
1/2 teaspoon freshly ground black pepper
1/4 teaspoon ground nutmeg
1 extra-large egg, beaten
Vegetable oil
Olive oil
1 tablespoon good olive oil
1 cup chopped yellow onion (1 onion)
1 1/2 teaspoons minced garlic
1/2 cup good red wine, such as Chianti
1 (28-ounce) can crushed tomatoes, or plum tomatoes in puree, chopped
1 tablespoon chopped fresh flat-leaf parsley
1 1/2 teaspoons kosher salt
1/2 teaspoon freshly ground black pepper
1 1/2 pounds spaghetti, cooked according to package directions
Freshly grated Parmesan

Steps:

  • Place the ground meats, both bread crumbs, parsley, Parmesan, salt, pepper, nutmeg, egg, and 3/4 cup warm water in a bowl. Combine very lightly with a fork. Using your hands, lightly form the mixture into 2-inch meatballs. You will have 14 to 16 meatballs.
  • Pour equal amounts of vegetable oil and olive oil into a large (12-inch) skillet to a depth of 1/4-inch. Heat the oil. Very carefully, in batches, place the meatballs in the oil and brown them well on all sides over medium-low heat, turning carefully with a spatula or a fork. This should take about 10 minutes for each batch. Don't crowd the meatballs. Remove the meatballs to a plate covered with paper towels. Discard the oil but don't clean the pan.
  • For the sauce, heat the olive oil in the same pan. Add the onion and saute over medium heat until translucent, 5 to 10 minutes. Add the garlic and cook for 1 more minute. Add the wine and cook on high heat, scraping up all the brown bits in the pan, until almost all the liquid evaporates, about 3 minutes. Stir in the tomatoes, parsley, salt, and pepper.
  • Return the meatballs to the sauce, cover, and simmer on the lowest heat for 25 to 30 minutes, until the meatballs are cooked through. Serve hot on cooked spaghetti and pass the grated Parmesan.

SWEET BROWN SUGAR BBQ MEATBALLS

Sweet Brown Sugar BBQ Meatballs image

So easy and SO delicious, these sticky glazed meatballs are sweet, savory and just a little spicy. They have a rich, deep flavor thanks to brown sugar and your favorite BBQ sauce.

Provided by The Food in My Beard

Categories     Appetizer

Time 30m

Yield 30

Number Of Ingredients 11

1 lb ground beef
1/2 lb ground pork
1/2 cup Progresso™ Panko Italian style crispy bread crumbs
1/2 cup shredded Parmesan cheese
1 egg
2 cloves garlic, grated
Salt and pepper
1/2 cup brown sugar
1/2 cup barbecue sauce
2 teaspoons chile flakes (or to taste)
Chopped chives (for garnish)

Steps:

  • Mix all of the meatball ingredients together and form your meatballs.
  • Heat a large frying pan with a little oil and gently, one by one, add in the meatballs.
  • After they cook for about 4 minutes, flip the meatballs and cook an additional 4 minutes. Once they're cooked on the outside, they should be a little less delicate. Making sure none are stuck to the bottom, start tossing them in the pan a little more to cook them evenly. Drain most of the fat, leaving a few tablespoons' worth in the pan.
  • Add 2 tablespoons of water to deglaze the pan, scraping up any stuck-on pieces. Add the brown sugar, adding a little more water if the pan looks too dry.
  • The sauce should start to bubble and look like dark caramel.
  • Remove from heat and add in the barbecue sauce. Stir well.
  • Remove from heat and add in the barbecue sauce. Stir well.

THE PERFECT MEATBALL SANDWICH

The Perfect Meatball Sandwich image

This is The Perfect Meatball Sandwich, made on toasted, buttery garlic bread, with an easy homemade marinara sauce and my favorite beef and sausage meatballs.

Provided by Tracy

Categories     Dinner

Time 30m

Number Of Ingredients 15

1 28-ounce can whole San Marzano tomatoes
¼ cup extra-virgin olive oil
7 cloves garlic (peeled and slivered or minced)
¼ cup water
¼ teaspoon salt (or to taste)
1 ½ teaspoon sugar
¼ teaspoon dried oregano
Pinch crushed red pepper flakes
1 large fresh basil sprig (or ¼ teaspoon dried basil)
4 French rolls
Butter
Garlic powder
12 to 16 large meatballs (fully cooked and warmed)
1 cup shredded mozzarella cheese
Fresh basil (optional for topping)

Steps:

  • With an immersion blender, food processor, or blender, process tomatoes until mostly pureed--the texture of chunky salsa. You can also turn the tomatoes out into a bowl and crush them with your hands (don't discard the juices).
  • In a large skillet, heat oil over medium heat. Once hot, add the garlic and cook just until it starts to turn lightly golden--watch carefully so it doesn't burn! Add the tomatoes and their juices to the skillet along with water, salt, sugar, oregano, red pepper flakes, and sprig of basil. Cover with splatter screen and bring to a good simmer, turning up the heat if necessary. Simmer, stirring occasionally, for 15 to 20 minutes until sauce is thickened. Taste and add more salt if needed.
  • Remove basil sprig.
  • Preheat your oven to 400°F. Butter both sides of your French rolls and sprinkle garlic powder over the top. Place on a baking sheet and bake for 3 to 4 minutes until lightly toasted.
  • Add a couple tablespoons of sauce to both sides of each French roll and top with 3 to 4 meatballs and 1/4 cup of mozzarella. Bake for an additional 2 to 3 minutes, until cheese is melted.
  • Add fresh basil if desired. Serve and enjoy!

CLASSIC BEEF MEATBALLS

Classic Beef Meatballs image

Here they are-the top sellers at The Shop and sure to be a big hit at home. Most traditional meatball recipes call for Parmesan or pecorino cheese. While we're big fans of these stronger cheeses, we prefer ricotta. It's our secret weapon. The mild and creamy consistency of this fresh cheese gives the meatballs a unique light texture. Beef has a subtle flavor, and the ricotta is a great way to add fat and moisture to the recipe without the overpowering flavor of a sharper cheese. These are quick to prep, and baking rather than frying makes this a fast comfort food even during the busiest of weeks.

Yield Makes about 2 dozen 1 1/2-inch balls

Number Of Ingredients 11

2 tablespoons olive oil
2 pounds 80% lean ground beef
1 cup ricotta cheese
2 large eggs
1/2 cup bread crumbs
1/4 cup chopped fresh parsley
1 tablespoon chopped fresh oregano or 1 teaspoon dried
2 teaspoons salt
1/4 teaspoon crushed red pepper flakes
1/2 teaspoon ground fennel
4 cups Classic Tomato Sauce

Steps:

  • Preheat the oven to 450°F. Drizzle the olive oil into a 9×13-inch baking dish and use your hand to evenly coat the entire surface. Set aside.
  • Combine the ground beef, ricotta, eggs, bread crumbs, parsley, oregano, salt, red pepper flakes, and fennel in a large mixing bowl and mix by hand until thoroughly incorporated.
  • Roll the mixture into round, golf ball-size meatballs (about 1 1/2 inches), making sure to pack the meat firmly. Place the balls in the prepared baking dish, being careful to line them up snugly and in even rows vertically and horizontally to form a grid. The meatballs should be touching one another.
  • Roast for 20 minutes, or until the meatballs are firm and cooked through. A meat thermometer inserted into the center of a meatball should read 165°F.
  • While the meatballs are roasting, heat the tomato sauce in a small saucepan over medium-high heat, stirring often.
  • When the meatballs are firm and fully cooked, remove them from the oven and drain the excess grease from the pan. Pour the tomato sauce over them. Return the meatballs to the oven and continue roasting for another 15 minutes.

ITALIAN MEATBALLS WITH RED SAUCE AND ROASTED VEGETABLES

Italian Meatballs with Red Sauce and Roasted Vegetables image

Play Italian grandmother with these savory meatballs swimming in red sauce, served with flavorful roasted vegetables.

Provided by Shanna Mallon

Categories     Dinner

Time 1h20m

Number Of Ingredients 17

6 cups simple marinara or jarred marinara sauce
6 tablespoons olive oil, divided (plus more for searing)
1/2 medium sweet onion, chopped
4 medium cloves garlic, minced
2 teaspoons coarse salt, divided
2 teaspoons freshly ground black pepper, divided
Pinch of crushed red pepper flakes
1 tablespoon tomato paste
1 pound ground beef (preferably 80% lean, 20% fat)
1/2 cup dry breadcrumbs (like panko or unseasoned Italian)
2 tablespoons chopped fresh Italian flat leaf parsley
2 large eggs
1 cup grated Pecorino cheese, divided
2 small zucchini, thinly sliced into long strips
2 small yellow squash, thinly sliced into long strips
1 medium eggplant, thinly sliced into long strips
1/2 red onion, cut into 1/4-inch-thick rings

Steps:

  • Place the marinara in a large, wide stew pot over medium heat. Bring to a gentle simmer, reduce heat to low, and then cover with a lid.
  • In a large cast iron or nonstick skillet, heat 2 tablespoons olive oil over medium heat. Add onions and garlic, season with a pinch of salt, pepper, and red chili flakes, and cook until translucent, 2-3 minutes.
  • Add the tomato paste and whisk to combine. Cook for an additional minute, then transfer to a small plate to cool to room temperature.
  • Add the ground beef, cooled onion mixture, breadcrumbs, parsley, eggs, 1/4 cup Pecorino, 1 1/2 teaspoons salt, and 1 1/2 teaspoons black pepper to a large mixing bowl. Gently fold together. Using about 2 tablespoons as your size guideline, form the mixture into 20-24 equally-sized meatballs.
  • In the same pan used to cook the onions, heat 2 tablespoons oil over medium-high heat. Add as many meatballs as you can without crowding the pan. Working in batches, sear the tops and bottoms until a golden-brown crust forms, 30-45 seconds per side. Add more oil to the pan for each batch as needed.
  • Place the browned meatballs in the marinara and cover with the sauce so they are completely immersed. Cover the pot and simmer over low heat until the meatballs are cooked through, 25-30 minutes.
  • While the meatballs are simmering, preheat the oven to 425°F.
  • On two large baking sheets, toss zucchini, yellow squash, eggplant, and red onion with the remaining 2 tablespoons oil, and season with 1/2 teaspoon each of salt and pepper. Place in the oven and roast, tossing once halfway through, until lightly charred and tender, about 15 minutes.
  • Divide the roasted vegetables among four dishes and top with equal portions of the meatballs and marinara. Garnish with the remaining Pecorino and serve immediately.
