- Place the ground meats, both bread crumbs, parsley, Parmesan, salt, pepper, nutmeg, egg, and 3/4 cup warm water in a bowl. Combine very lightly with a fork. Using your hands, lightly form the mixture into 2-inch meatballs. You will have 14 to 16 meatballs.
- Pour equal amounts of vegetable oil and olive oil into a large (12-inch) skillet to a depth of 1/4-inch. Heat the oil. Very carefully, in batches, place the meatballs in the oil and brown them well on all sides over medium-low heat, turning carefully with a spatula or a fork. This should take about 10 minutes for each batch. Don't crowd the meatballs. Remove the meatballs to a plate covered with paper towels. Discard the oil but don't clean the pan.
- For the sauce, heat the olive oil in the same pan. Add the onion and saute over medium heat until translucent, 5 to 10 minutes. Add the garlic and cook for 1 more minute. Add the wine and cook on high heat, scraping up all the brown bits in the pan, until almost all the liquid evaporates, about 3 minutes. Stir in the tomatoes, parsley, salt, and pepper.
- Return the meatballs to the sauce, cover, and simmer on the lowest heat for 25 to 30 minutes, until the meatballs are cooked through. Serve hot on cooked spaghetti and pass the grated Parmesan.

- Mix all of the meatball ingredients together and form your meatballs.
- Heat a large frying pan with a little oil and gently, one by one, add in the meatballs.
- After they cook for about 4 minutes, flip the meatballs and cook an additional 4 minutes. Once they're cooked on the outside, they should be a little less delicate. Making sure none are stuck to the bottom, start tossing them in the pan a little more to cook them evenly. Drain most of the fat, leaving a few tablespoons' worth in the pan.
- Add 2 tablespoons of water to deglaze the pan, scraping up any stuck-on pieces. Add the brown sugar, adding a little more water if the pan looks too dry.
- The sauce should start to bubble and look like dark caramel.
- Remove from heat and add in the barbecue sauce. Stir well.

- With an immersion blender, food processor, or blender, process tomatoes until mostly pureed--the texture of chunky salsa. You can also turn the tomatoes out into a bowl and crush them with your hands (don't discard the juices).
- In a large skillet, heat oil over medium heat. Once hot, add the garlic and cook just until it starts to turn lightly golden--watch carefully so it doesn't burn! Add the tomatoes and their juices to the skillet along with water, salt, sugar, oregano, red pepper flakes, and sprig of basil. Cover with splatter screen and bring to a good simmer, turning up the heat if necessary. Simmer, stirring occasionally, for 15 to 20 minutes until sauce is thickened. Taste and add more salt if needed.
- Remove basil sprig.
- Preheat your oven to 400°F. Butter both sides of your French rolls and sprinkle garlic powder over the top. Place on a baking sheet and bake for 3 to 4 minutes until lightly toasted.
- Add a couple tablespoons of sauce to both sides of each French roll and top with 3 to 4 meatballs and 1/4 cup of mozzarella. Bake for an additional 2 to 3 minutes, until cheese is melted.
- Add fresh basil if desired. Serve and enjoy!

- Preheat the oven to 450°F. Drizzle the olive oil into a 9×13-inch baking dish and use your hand to evenly coat the entire surface. Set aside.
- Combine the ground beef, ricotta, eggs, bread crumbs, parsley, oregano, salt, red pepper flakes, and fennel in a large mixing bowl and mix by hand until thoroughly incorporated.

I have been experimenting with many different recipes in search of an easy & delicious meatball. This is my own creation that I accidently created one day when I was out of milk and bread. I substituted Sociable crackers for bread crumbs & sour cream for milk. My husband raved over the final product & it has been a favorite recipe ever since. - Place the marinara in a large, wide stew pot over medium heat. Bring to a gentle simmer, reduce heat to low, and then cover with a lid.
- In a large cast iron or nonstick skillet, heat 2 tablespoons olive oil over medium heat. Add onions and garlic, season with a pinch of salt, pepper, and red chili flakes, and cook until translucent, 2-3 minutes.
- Add the tomato paste and whisk to combine. Cook for an additional minute, then transfer to a small plate to cool to room temperature.
- Add the ground beef, cooled onion mixture, breadcrumbs, parsley, eggs, 1/4 cup Pecorino, 1 1/2 teaspoons salt, and 1 1/2 teaspoons black pepper to a large mixing bowl. Gently fold together. Using about 2 tablespoons as your size guideline, form the mixture into 20-24 equally-sized meatballs.
- In the same pan used to cook the onions, heat 2 tablespoons oil over medium-high heat. Add as many meatballs as you can without crowding the pan. Working in batches, sear the tops and bottoms until a golden-brown crust forms, 30-45 seconds per side. Add more oil to the pan for each batch as needed.
- Place the browned meatballs in the marinara and cover with the sauce so they are completely immersed. Cover the pot and simmer over low heat until the meatballs are cooked through, 25-30 minutes.
- While the meatballs are simmering, preheat the oven to 425°F.
- On two large baking sheets, toss zucchini, yellow squash, eggplant, and red onion with the remaining 2 tablespoons oil, and season with 1/2 teaspoon each of salt and pepper. Place in the oven and roast, tossing once halfway through, until lightly charred and tender, about 15 minutes.
- Divide the roasted vegetables among four dishes and top with equal portions of the meatballs and marinara. Garnish with the remaining Pecorino and serve immediately.
