This is a family favorite. There are only a few ingredients, but the flavor is great. I usually double the sauce because everyone loves to pour it over the stuffing.

4 pork chops, 1-inch thick
1/2 cup ketchup
2 tablespoons brown sugar
2 teaspoons mustard
1/4 teaspoon chili powder
1 (6 ounce) package seasoned stuffing mix, prepared

Steps:

  • Cut pocket in porkchops. Stuff with stuffing mix.
  • Mix 1/2 cup ketchup, brown sugar, mustard, and chili powder. Brush 1/2 of the mixture over porkchops.
  • Cover with waxed paper. Microwave at medium power for 35 to 40 minutes. Rotate 1/2 turn after 15 minutes. Let stand for 5 minutes. Brush with remaining glaze.

2 tablespoons butter
1 cup dry bread crumbs
½ cup chopped Granny Smith apples
2 tablespoons hot water
2 tablespoons white sugar
2 tablespoons chopped raisins
2 tablespoons dried minced onion
½ teaspoon salt
¼ teaspoon ground black pepper
¼ tablespoon dried sage
8 thin boneless pork chops, trimmed
1 (8 ounce) package dry brown gravy mix

Steps:

  • Place butter in a microwave-safe measuring cup. Cover with plastic wrap, leaving room for ventilation. Melt butter in the microwave on high, about 1 minute.
  • Combine bread crumbs, apples, water, sugar, raisins, onion, salt, pepper, and sage in a bowl to make stuffing.
  • Place 4 pork chops on the bottom of a microwave-safe baking pan. Divide the stuffing among the chops; cover with the remaining 4 chops. Sprinkle 1/2 of gravy mix on top; add the rest into bottom of the pan. Cover with waxed paper.
  • Microwave on the Roast setting until pork is no longer pink in the center, 18 to 20 minutes. An instant-read thermometer inserted into the center should read 145 degrees F (63 degrees C). Let stand 5 minutes before serving.

Kosher salt
1/4 cup sugar
4 bone-in, thick-cut pork chops (6 to 8 ounces each)
1/2 medium head escarole
2 cloves garlic
4 tablespoons extra-virgin olive oil, plus more for brushing
Freshly ground pepper
4 slices provolone cheese (about 2 ounces)
4 fresh sage leaves, chopped
1 (19-ounce) can cannellini beans, drained and rinsed

Steps:

  • Dissolve 1/4 cup salt and the sugar in 3 cups warm water in a large bowl. Insert a paring knife into the curved side of each pork chop to make a deep pocket, about 2 inches wide. Soak the chops in the brine, about 5 minutes. Meanwhile, finely chop the escarole and garlic. Toss with 2 tablespoons olive oil, and salt and pepper to taste. Remove the chops from the brine and pat dry. Fold each cheese slice and tuck into the pocket of a pork chop, then stuff with the escarole mixture. Brush the pork with olive oil, sprinkle with the sage and season with salt and pepper. Heat the remaining 2 tablespoons olive oil in a large skillet over medium-high heat. Sear the pork in batches, turning once, until golden brown, 3 to 4 minutes. Transfer to a plate. Add the beans and 1/3 cup water to the skillet, scraping up any browned bits; season with salt and pepper. Return the pork to the skillet, cover and cook over medium heat until no longer pink, 5 to 7 more minutes. Serve the pork with the beans.

3 tablespoons unsalted butter
1 medium onion, finely chopped
1/2 cup breadcrumbs
Pinch salt
Pinch pepper
Pinch garlic powder
1 large egg, lightly beaten
2 tablespoons chopped fresh parsley
4 bone-in pork chops, about 1 1/2-inch thick
1 cup all-purpose flour
1/4 cup vegetable oil

Steps:

  • Preheat the oven to 325 degrees F.
  • Melt the butter in a large skillet over medium-high heat. Add the onions and saute until translucent, about 7 minutes. Remove the pan from the heat and stir in the breadcrumbs, salt, pepper and garlic powder. Stir in the beaten egg and parsley.
  • To cut pockets into the pork chops, insert the point of a small sharp knife horizontally into the fat-covered edge. Move the knife back and forth to create a deep pocket about 1 1/2 inches wide.
  • Fill the pocket of each chop with the breadcrumb mixture. Secure the openings with toothpicks.
  • Place the flour in a shallow bowl. Dredge the stuffed chops lightly in the flour, shaking off the excess. Wipe out the skillet used previously for the stuffing and place it over medium-high heat. Add the oil and, when hot, add the chops. Sear over medium heat until lightly browned, about 3 minutes per side.
  • Place a rack in a roasting or baking pan and add water, being careful not to cover the rack with water. Place the chops on the rack and cover the roaster with the lid or aluminum foil. Bake the chops for 1 hour. Let rest, remove the toothpicks and serve.

  • 1. Cut pocket in pork chops. Stuff with stuffing.

  • 3. Brush 1/2 of the mixture over pork chops.

  • Place pork chops in an ungreased 11x7-in. microwave-safe dish. , In a large bowl, combine the next nine ingredients. Pour over the chops. Cover with plastic wrap; peel back one corner to vent. Microwave on high for 11-13 minutes or until juices run clear. Remove chops; set aside and keep warm. , In a small bowl, combine cornstarch and cold water until smooth. Stir into barbecue sauce. Microwave for 30-45 seconds or until thickened. Serve sauce over chops.

1/2 cup chopped granny smith apple
2 tablespoons chopped golden raisins

2 tablespoons instant minced onion
1/4 teaspoon pepper
1/4 teaspoon sage
2 tablespoons hot water
8 thin boneless pork loin chops (or 4 butterfly cut)
1 (8 ounce) package brown gravy mix

Steps:

  • Melt butter on high 1 min in a glass measuring cup covered with plastic leave room to vent.
  • In a medium bowl combine everything except chops and gravy.
  • Trim fat from chops. Place 4 on bottom of microwave proof baking dish. Divide stuffing onto the 4 chops, then cover stuffing with the 4 remaining chops.
  • Sprinkle 1/2 of dry brown gravy mix over the top of the chops, sprinkle the rest into the cooking dish. it will combine with the cooking juices.
  • Cover with wax paper and cook on power level 7 or 70 (roast) for 18-20 minute Let stand 5 minutes before serving.
  • If you don't like raisins, just add extra apples. You can also use this stuffing in your thanksgiving turkey--very delicious!
