MICROWAVE MAGIC NO CRUST INDIVIDUAL PORK (OR BEEF) PIZZAS
This is the final recipe I am entering from the *Microwave* cookbook of the Australian Womens Weekly cookbook series & it's such a unique idea. The recipe is shown as written, but the writers noted that variations are endless as you cater to pers pref of your family. It is meant to be a kid-pleaser & family-friendly recipe & IMO would make a fun weekend cooking nite as ea family member designs their own individual crustless pizza. Times shown include ingredient prep & cooking the pizzas in 2 batches. *Enjoy* !

Steps:
- In a mixing bowl, combine 1st 7 ingredients (grd pork thru soy sauce). Mix well & press into 6 microwave-safe dishes (see note below Re dish sizes).
- Mix tomato paste w/sugar + dried basil & spread evenly over meat mixture in ea of the 6 dishes.
- Divide sliced mushrooms, tomatoes & olives + chopped green pepper among ea soon-to-be pizza.
- Cook 3 pizzas at a time on MED-HIGH for 3 minutes. During this time, divide cheeses into 2 batches, ea with 1/3 cup mozzarella & 1 1/2 tbsp parmesan.
- At the end of the 3 min, rotate dishes & evenly distribute 1 batch of the cheeses over the 3 dishes. Cook another 3 minutes on MED-HIGH or till grd meat is fully cooked & cheeses are melted.
- Repeat cooking process for the 3 remaining pizzas & drain off any oil or juices from all pizzas b4 serving.
- NOTE RE DISH SIZE: The size of your microwave may be relevant here, but I used 5 1/2 in shallow glass bowls when I made these. Oval-shaped individual gratin dishes would work & the writers also mentioned deep saucers up to 6 1/2 in in diameter.
- SERVING SUGGESTION: Serve w/a family favorite salad + garlic bread, breadsticks or even halved & toasted pita pockets spread w/garlic butter. Letting the family vote on this might be another fun option. :-).

BAKED STUFFED POLENTA (POLENTA AL FORNO)
This recipe from the *Italian Cookbook 2* of the Australian Womens Weekly cookbook series admittedly requires extra work, but makes up for it w/a company-worthy outcome that is visually stunning as a main-dish when served w/an Italian salad + garlic bread. The polenta is stuffed w/salami, sun-dried tomatoes, black olives & cheese. It has 2 cooking steps, but all the prep is done in advance of the final cooking step in the oven. I have not made this recipe yet, but did simplify the recipe & prep. I am hopeful that someone among you will be open to an adventure & give it a try. Pls see my notes Re pan sizes + a 2nd stuffing option at the end of the prep. (This recipe serves 6 as a main-dish or 8 generously as a side-dish. Time does not include chilling the polenta under refrigeration for several hrs or overnite). *Enjoy* !

- In a lrg saucepan, bring chicken stock to a boil & gradually whisk in the polenta. Reduce heat to simmer & cook 15 min or till very thick (while continuing to stir).
- Remove pan from heat & stir in butter, 1st measure of Parmesan cheese + parsley.
- Allow to cool slightly. Then press polenta mixture into an oiled 8 x 12-in lamington pan (See notes). Cool to rm temp & refrigerate several hrs (or overnite) till firm.
- Turn polenta out of pan, slice horizontally in half, return bottom half to pan & set top half aside.
- Evenly distribute sliced salami over the half in the pan, overlapping as necessary. Then evenly distribute the chopped tomatoes & black olives over the salami slices.
- Combine Mozzarella cheese, 2nd measure of Parmesan cheese & fresh basil. Spread half of this mixture over the layered salami, tomatoes & black olives.
- Gentle place top half of polenta over the layered ingredients & sprinkle it w/the 2nd half of the cheese & basil mixture.
- Bake in a hot oven (400°F) about 30 min or till heated thru. The top should be lightly browned & crisp, so place under broiler as needed. Allow to cool slightly & serve immediately.
- NOTES RE PAN SIZE: I do not have a lamington pan or a pan 8 x 12-in size. If made in one, the dish would be cut into 6 4x4-in square servings. I do have a 10-in rd glass baking dish that would be equal in size to the pan suggested. In this event, the dish would be cut in 6 wedge-shaped servings.
- 2nd STUFFING OPTION: As an 2nd option if you prefer, use thinly sliced prosciutto as a sub for the salami & keep all else the same.

CHICKEN AND BROCCOLI MICROWAVE MAGIC
A broccoli chicken recipe without the soup. To make it a one dish meal, simply line bottom of the casserole with either 2 cups of cooked pasta or cooked rice. To make it lighter, use Becel instead of butter and Low fat sour cream. You will see how easy it is to make a sauce in your microwave; don't forget to stir every minute or so.

Steps:
- Melt butter in microwave dish. Add shallot and microwave until tender, about 2 minutes.
- Mix in flour and slowly stir in chicken broth.
- Microwave 2 minutes.
- Stir in the milk and microwave 4 minutes until sauce begins to thicken stopping after 2 minutes to stir.
- Add curry, salt and pepper to taste.
- Microwave 1 more minute. Stir in sour cream.
- Place cooked chicken on bottom of casserole. Add broccoli over the chicken. Pour sauce evenly over the broccoli. Combine cheeses, and sprinkle half over the casserole.
- Loosely cover casserole an microwave for 8 minutes.
- Remove from microwave and sprinkle with remaining cheese.
- Allow to set for 5 minutes, until cheese melts.
- Tip: If you want a golden topping set under broiler for a few minutes.
- If you add rice or pasta to this dish you should microwave an extra 4 minutes.

BBQ PORK PIZZA
From Family Circle (May 05). Could be served with coleslaw. Super easy, versatile and quick. I haven't tried it cold, but that would be an idea!

- Heat oven to 400°F.
- Separated onion into rings.
- Heat a medium non-stick skillet over medium heat.
- Add onion rings and cook 3 minutes to soften slightly.
- Meanwhile, heat container of BBQ pork in microwave as package directs for 2 minutes.
- Lay pizza crust on pizza pan or cookie sheet.
- Spread with softened onions, BBQ pork, and top with cheddar cheese and jalapeño peppers.
- Bake at 400°F for 12 minutes or until pork is heated through and cheese is melted.
- Cut into wedges and serve hot.

AWESOME RIBS FOR PORK OR BEEF
This is an awesome and easy-to-make rib recipe. I always thought it was my mother's creation, but a few years ago I found a very similar version in a 1950s Better Homes and Gardens Cookbook. We'll never know who made it first. My mother was a home economist, and a goddess of recipes -- I should post more of her gems. Anyway, I usually make this with pork ribs (almost any cut), but also discovered that it was great for beef ribs. That was when I lived in Syria and pork was hard to get. The first time I ordered ribs from the Syrian butcher, he proudly and kindly cut out the ribs. Bummer. By the way, don't be put off by the number of steps. This is really easy to make.

- Cut ribs into individual ribs, and place all the pieces in large roasting pan.
- Scatter the thickly sliced onions over the ribs.
- Sprinkle lemon juice over the ribs.
- Bake for one hour in an oven that has been pre-heated to 350 degrees.
- Pour off ALL the fat and juice that has accumulated.
- In the meantime, make the sauce.
- To make the sauce, combine the last five ingredients in a saucepan, and cook (boil) for 20-25 minutes. Stir frequently. You want the sauce to cook down and thicken up.
- Dip cooked ribs into the sauce, and place in roasting pan. It's best if you make a single layer of ribs at this stage so, if necessary, use more than one pan.
- Dip cooked onions into sauce, and scatter over ribs.
- At this stage, you can refrigerate the concoction (covered with cling wrap) for a day or two -- so the flavours can really meld.
- Cook ribs a second time-for 30-60 minutes-in an oven that has been pre-heated to 325°F If you have refrigerated the concoction, take out of the fridge at least two hours before the second cooking. Thanks to Heystopthatnow for alerting me to the fact that I had omitted a cooking time for this step.
- Before the second cooking, baste the ribs. Then baste them again every 10 minutes. You want the ribs to be saucy.
- Serve with corn cobs, baked potatoes and salad. Garlic bread is nice, too.
TORTA DE PLATANO MADURO (RIPE PLANTAIN CAKE)
This is a Venezuelan recipe from the Latin American cookbook in the Time Life Cookbook series. Traditionally it accompanies meat dishes and can be served hot or cold. I make it every now and then when I want something different!

- In a heavy 8 to 10 inch skillet, melt 3 tablespoons of butter over moderate heat.
- When the foam subsides, drop in the sliced plantains and cook, turning frequently, until the slices are golden brown or both sides.
- Transfer the plantains to a double thickness of paper towels to drain.
- In a small bowl, mix the grated cheese, sugar and cinnamon and set aside.
- In a large bowl, beat the egg whites with a whisk or a rotary or electric beater until they are stiff enough to form unwavering peaks on the beater.
- In a separate bowl, beat the egg yolks until they are thick and lemon colored, then with a spatula fold the whites into the yolks.
- Preheat the oven to 350 degrees F.
- Grease the bottom and sides of a deep 1 quart baking dish or mold, then sprinkle in 1 tablespoon of flour or bread crumbs, tipping the dish to spread the flour or crumbs as evenly as possible.
- Turn the dish over and rap it sharply to remove any excess. Ladle about a quarter of the egg mixture into the dish, and spread it with the back of a spoon.
- Cover with a layer of plantains--using about one third of the slices.
- Sprinkle with 2/3 cup of the cheese mixture and dot with 1 tablespoon of butter.
- Repeat the layers two more times, ending with the egg mixture.
- Dot with the last tablespoon of butter and place in the middle of the oven.
- Bake for 35 minutes.
- Serve hot directly from the baking dish, or let the cake cool for 5 minutes or so and unmold it onto a platter in the following fashion:
- Run a knife around the edge of the dish and dip the bottom in hot water for a few seconds.
- Cover the dish with an inverted platter and, grasping dish and platter together, turn them over.
