Microwave Apple Banana Muffins Fakeout image

2 single serve, almost sugar free muffins! Although they are not traditional, they are very warm and comforty when you just wish you could cheat a bit on the diet. Feel free to substitute splenda for the optional brown sugar or a mixture of spices for the pumpkin pie spice. Prep time is mostly allowing ingredients to absorb. Measurements were approximated.

Number Of Ingredients 7

2/3 cup instant oats
1 banana (ripe, mashed)
1/2 cup applesauce (or 1 Mott's Snack Cup)
1 egg
2 teaspoons oil
1 tablespoon pumpkin pie spice
brown sugar

Steps:

  • Combine banana, apple sauce, oil and egg with a fork until smooth.
  • Add oats, sugar (OPTIONAL) and spices and allow to soak for up to 20 minutes.
  • Add baking soda.
  • Microwave on HIGH for 1-2 minutes in a mug or ceramic cup (I used a tea cup). Cooking times will vary depending on strength of microwave, so watch it to make sure it does not over flow.
  • Allow to cool for about 5 minutes.

This recipe makes a light tasty muffin that stays moist. They're flavorful whether served plain, with butter and jam or dipped in cinnamon-sugar right out of the oven. -Alice Muradliyan, Covina, California

Number Of Ingredients 12

3/4 cup old-fashioned oats
1/2 cup all-purpose flour
3 tablespoons sugar
1 teaspoon baking powder
1/4 teaspoon salt
1/4 teaspoon ground allspice
1/4 teaspoon ground cinnamon
1 egg
1/3 cup milk
1 tablespoon vegetable oil
1/2 cup grated peeled tart apple
1/4 cup mashed ripe banana

Steps:

  • In a small bowl, combine the first seven ingredients. In another bowl, beat the egg, milk and oil. Stir into dry ingredients just until moistened. Fold in apple and banana., Fill greased muffin cups about three-fourths full. Bake at 375° for 25-30 minutes or until a toothpick comes out clean. Cool for 5 minutes before removing from pan to a wire rack.

  • Put the butter in a large microwave-safe bowl and melt in the microwave. (Or melt the butter in a saucepan on the stove and transfer to a large bowl.)
