I had this recipe years ago and managed to lose it, but found a friend at work that had it and I am back in the brittle business. It is extremely easy and quick to make. Since most people have the ingredients in their pantry and freezers, it is a recipe that can be made up in a few minutes if unexpected guest show up.

1 cup sugar
1/2 cup white Karo
1 dash salt
1 cup shelled raw peanuts (pecans, walnuts, sunflower seed, etc.)
1 tablespoon margarine
1 1/2 teaspoons baking soda
1 teaspoon vanilla

Steps:

  • Line baking sheet with wax paper.
  • Spray wax paper with Pam.
  • Combine sugar, salt and Karo in a 3 quart microwave safe glass bowl.
  • Stir in peanuts.
  • Microwave on high until light brown (8 to 10 minutes) stirring at least 2 times during cooking.
  • Remove from microwave and stir in remaining ingredients adding baking soda last (mix will be foamy).
  • Stir quickly and pour onto wax paper.
  • Spread thin for brittle candy.
  • Note: You can use any type nuts you prefer or even sunflower seeds (which is my favorite).

  • Mix sugar and corn syrup together and cook on high for 4 minutes.
  • Add peanuts mix well and cook on high for 3 minutes.
  • Add butter and vanilla and cook on high for 2 minutes.
  • Add baking soda and mix well, mixture will foam.
  • Spread on well butter foil.
  • when completely cooled break in to pieces.
  • Store in air tight container.
  • NOTE: Any type of nut can be used in place of the peanuts.

1 1/2 cups dry roasted salted peanuts (use dry roasted peanuts only!)
1 tablespoon butter
1 1/2 teaspoons vanilla

Steps:

  • Combine sugar and corn syrup in a 3-qt heat-resistant plastic microsafe bowl.
  • Microwave on high for 5 minutes.
  • Stir in peanuts; microwave on high for 2-3 mins longer, or until peanuts and syrup are lightly browned.
  • Add butter, vanilla and baking soda.
  • Mix until light and foamy (be careful, syrup is HOT!).
  • Pour quickly onto a buttered cookie sheet, and spread to desired thickness.
  • When cool, break into pieces.

Microwave peanut brittle is an easy 15 minute candy perfect for the holidays. It's a family favorite recipe at every Christmas!

1 cup granulated sugar
1/2 cup light corn syrup + 2 Tbsp
1 1/4 cup roasted salted peanuts
1 1/2 tsp. butter
1 1/2 tsp. vanilla extract
1 tsp. baking soda

Steps:

  • In a glass 1.5 qt casserole or mixing bowl, stir the corn syrup and granulated sugar together and microwave for 3.5 minutes. Stir in the peanuts and microwave for 3 more minutes until light brown. Add the butter and vanilla to the mixture and stir until well combined. Microwave for an additional 1.5 minutes.
  • You will need to work quickly for the next step, so be sure to have your buttered cookie sheet ready to go. Add the baking soda to the mixture and gently stir until light and foamy. Quickly pour the foamy mixture onto the greased cookie sheet.
  • Do NOT use a spoon to spread the mixture around. Instead, gently rotate the pan to spread the mixture around until it is about 1/2 inch thick. Work quickly, because it will began hardening very fast.
  • Let the peanut brittle cool for at least 1/2 hour or until it is hard and smooth to the touch. When it is cooled, break the candy into small pieces and store in an air-tight container.

1/8 teaspoon salt
1 1/2 cups cashews or 1 1/2 cups mixed nuts

  • Spray cookie sheet and metal spatula with the cooking spray.

1 1/2 cups unsalted dry-roasted peanuts (about 7 1/2 ounces)
1 cup sugar
1/2 cup light corn syrup
Pinch of salt
1 tablespoon butter

  • Butter large baking sheet. In microwave-proof bowl, combine peanuts, sugar, corn syrup and salt. Microwave on High until mixture bubbles vigorously, about 6 minutes.
