Recreate the Northern New York roadside stand staple in your own kitchen! This sauce is a key ingredient for an Upstate New York Michigan, which is a red hot (usually a Glazier hot dog) on a New England Style Roll, with meat sauce, mustard, and onions.

1 29-ounce can of tomato sauce
2 pounds hamburger
4 tsp. chili powder
2 tsp. dried onion
2 tsp. garlic powder
3-4 Tablespoons hot sauce, such as Frank's
2 tsp. black pepper
2 tsp. cumin

Steps:

  • Mix all ingredients together, except meat.
  • Add meat raw and mash with a potato masher while the sauce is cooking. It is important to mash the meat while it is raw, to get the consistency right! Michigan sauce, traditionally, is a very thick sauce that doesn't have meat chunks.
  • Simmer 2-3 hours, stirring and mashing with the potato masher occasionally.

1 tablespoon butter
1 onion, chopped
2 tablespoons white vinegar
2 tablespoons brown sugar
3 tablespoons lemon juice
½ tablespoon prepared mustard
3 tablespoons Worcestershire sauce
1 pound lean ground beef
1 cup ketchup
1 (8 ounce) can tomato sauce
1 (6 ounce) can tomato paste
salt and pepper to taste

Steps:

  • Melt butter in a saucepan over medium heat. Saute the onion in butter until soft. Stir in the vinegar, brown sugar, lemon juice, mustard, Worcestershire sauce, ketchup, tomato sauce, and tomato paste. Stir to blend.
  • When the mixture begins to simmer, add the raw ground beef breaking it into pieces with a wooden spoon. Simmer for 20 to 30 minutes. Serve over steamed hot dogs. Of course you can add some raw onions if you want.

1 lb ground beef
1 medium onion
3 tablespoons brown sugar
3 tablespoons apple cider vinegar
4 tablespoons chili powder
1 tablespoon yellow mustard
1 (8 ounce) can tomato sauce
1 cup water
1 teaspoon garlic powder
1 teaspoon crushed red pepper flakes
1 teaspoon salt
1 teaspoon pepper

Steps:

  • Finely chop onions and saute in a little olive oil until tender.
  • Add ground beef and cook until browned. Separate meat so it is broken into very fine pieces of meat.
  • Add rest of ingredients, mix, and cook over low heat on the stove 1 hour or more.
  • This could be cooked in a crockpot on low for six hours.
  • Serve as a topping on hot dogs.

1/2 cup water
1/4 cup barbecue sauce
2 tablespoons minced dried onion flakes
2 -4 teaspoons chili powder
1 teaspoon ground cumin
1/2 teaspoon garlic powder
1/4 teaspoon hot pepper sauce

Steps:

  • In a large saucepan, cook ground beef until browned.
  • Drain off fat.
  • Stir in tomato sauce, water, barbecue sauce, dried onion, chili powder, cumin, garlic powder and hot pepper sauce.
  • Bring to boiling; reduce heat.
  • Simmer, covered, for 30 minutes.
  • Uncover; simmer 5 to 10 minutes or to desired consistency.
  • Makes about 5 cups sauce, enough for 15 hot dogs.

2 teaspoons cumin powder
2 teaspoons garlic powder

Steps:

  • Mix tomato sauce, hot sauce and seasonings in a large saucepan.
  • Add raw ground beef and mash with potato masher while cooking.
  • Cook on medium heat for 30 minutes until beef is browned, then simmer on low for 2-3 hours.
  • (Sauce will be very thick) Serve Michican Sauce over steamed hot dogs in a steamed bun and top with chopped raw onions.

I moved to Texas from Michigan some years ago, and really loved the hot sauce that comes with the tortilla chips at any Mexican restaurant down here. This is a take from a recipe a work-friend gave me. It's great, this is also what I use on my Cilantro Salmon. Recipe can also be easily doubled if you're having guests. Also, recipe is really to taste. Once you get to the last steps, use as much or as little cilantro, salt and lime juice as you like. If you prefer less garlic, use less.

2 (14 1/2 ounce) cans fire-roasted diced tomatoes
1/2 yellow onion, rough chopped
5 -7 garlic cloves, peeled
3 -5 fresh jalapenos, whole
fresh serranos, whole
2 limes
1/2 bunch cilantro, rough chopped
salt

Steps:

  • Heat oven to 425 degrees. Place garlic cloves and peppers on baking sheet, place in oven and roast until garlic and peppers are brown and skin is blistering. Cut tops of peppers off.
  • Meanwhile, put in a blender or food processor the tomatoes (I like Muir Glen brand) and onions. Blend, until onion is well minced, but do not make it too smooth yet. When peppers and garlic are done, put in blender with tomato mixture. (If you want a milder sauce, wait until peppers are cool enough to handle and de-seed before putting in blender) Blend until smooth. Add cilantro, using more or less, to taste. Chop in blender. Squeeze juice of 1 whole lime, add salt to taste, and mix in blender. Taste sauce, if needs more salt or lime, just add more!

1 (28 ounce) can tomato juice (good quality)
6 tablespoons chili powder
4 medium onions, very finely diced
1 cup water
1 1/2 teaspoons garlic powder
1 teaspoon Tabasco sauce
1 teaspoon salt
1 teaspoon black pepper

Steps:

  • Brown beef and onions in the cup of water.
  • Add all other ingredients and bring to a boil.
  • Reduce to a simmer, uncovered, stirring occasionally, until thick-usually about 3 hours.

⅔ cup finely chopped onion, divided
1 (15 ounce) can tomato sauce
⅓ cup ketchup

1 tablespoon cider vinegar

1 teaspoon hot sauce (such as Frank's® RedHot®)
salt and freshly ground black pepper to taste
1 tablespoon water, or as needed
10 hot dog buns
10 all beef hot dogs
5 teaspoons prepared yellow mustard

Steps:

  • Brown ground beef and 1/3 cup onion in a large skillet over medium heat, until the meat is no longer pink, 5 to 7 minutes. Drain, and return the skillet to the stove.
  • Stir tomato sauce and ketchup into the ground beef mixture. Add chili powder, vinegar, garlic powder, hot sauce, salt, and pepper; stir until well combined. Reduce heat to low and simmer uncovered until sauce has thickened, 8 to 10 minutes. If sauce gets too thick, add water to thin it out.
  • Meanwhile steam or simmer hot dogs in hot water until hot.
  • Assemble hot dogs: Place a hot dog in a bun and spoon 2 to 3 tablespoons sauce on top. Sprinkle with remaining onions and drizzle with yellow mustard.
