SPICY ROASTED CHICKEN LEGS

Steps:
- Preheat the oven to 450 degrees F. Line baking sheets with foil.
- Melt the butter in a saucepan. Add the lemon juice, salt, black pepper, cayenne and garlic, and stir. Set aside.
- Rinse and pat the chicken legs dry. With metal tongs, dip them one by one into the butter mixture and place on the prepared baking sheets.
- Once all of the chicken legs are coated and on the baking sheet, take a pastry brush and give them one last coating of the butter mixture.
- Place them into the oven for 30 to 35 minutes, basting a couple of times during roasting. If they need a bit more color, turn on the broiler for a couple minutes and watch them closely.
- Remove them when they are nice and golden brown and fully cooked.
SPICY ROASTED CASHEW RECIPES

- Preheat your oven to 325 degrees F and line a baking sheet with parchment paper.
- Combine honey and chili powder, microwaving for a few seconds to liquify the honey. Add raw cashews and toss to coat.
- Spread the cashews on the baking sheet in a single layer, then roast for 10-15 minutes, being sure to stir at least once. When the nuts look just a little darkened, remove them from the oven.
- Stir together sugar and salt while the nuts cool for 5 minutes, then toss in the sugar-salt mixture.
SPICY CASHEWS

- Place a medium-size saute pan over medium heat. Add olive oil and cashews and toss to coat. Add chili powder, salt, and pepper and toss until warmed through. Remove from heat and serve. They will crisp as they sit.

- Place the nuts on an ungreased baking sheet and bake for about 10 minutes until they are warmed through. Meanwhile, combine the rosemary, pepper, sugar, salt and butter in a large bowl. Toss the warm nuts with the rosemary mixture until the nuts are completely coated. Serve warm.
