- Heat oven to 350°F. Place water in large pot over high heat to boil. Cook egg noodles until al dente and strain. Add salsa, sour cream and enchilada sauce to the skillet and gently stir until combined. Grease a 9x9-inch pan with cooking spray and place the noodles in the dish. Then gently pour the sauce and beef mixture over top the noodles. Cover with the cheddar cheese and bake for 30 minutes. If desired, scatter green onions over top the casserole before serving. NOTE: The only thing I would do differently next time is to use a hotter salsa and/or enchilada sauce. I had mild of both on hand and it could have used just a little more heat! I also might have thrown in a 1/4 to 1/2 an onion to cook with the beef, just for another level of flavor. I didn't have any white or yellow onions on hand, so I opted to top my dish with green onions to give it that onion kick. Other than that, it was great!
MEXICAN TORTILLA CASSEROLE

- In a large skillet over medium-high heat, heat 1 tablespoon of the olive oil. Add the tomatoes, onion and garlic, stir and cook for a minute or two to soften the onion. Add 2 teaspoons of the chili powder, 1 teaspoon of the paprika and 1 teaspoon of the cumin. Stir and cook the mixture for another minute or two to release the flavors of the spices. Remove the mixture to a bowl and set aside.
- In the same skillet, heat the remaining 1 tablespoon olive oil. Add the chicken along with the remaining 2 teaspoons chili powder, 1 teaspoon paprika, 1 teaspoon cumin and 1/2 teaspoon salt. Saute the chicken until it's deep golden brown and done in the middle, about 4 to 5 minutes. Add 1 cup water and stir to make a sauce. Bring the sauce to a boil and cook until it's reduced by half, about 3 to 4 minutes. Stir in the beans and set aside.
- To assemble the casserole, pour half a jar (about 1 cup) of salsa verde into the bottom of a 9-by-13-inch casserole dish or disposable foil baking pan. Add a layer of half the tortillas on top of the salsa verde, overlapping the edges. Spoon the rice over the tortillas, spread the tomato mixture over the rice, then sprinkle the corn over the tomatoes. Next, add the chicken and bean mixture, then sprinkle on half the cheese and pour over half the enchilada sauce. Next, add the rest of the tortillas, then pour on the rest of the salsa verde and the rest of the enchilada sauce and sprinkle on the rest of the cheese.
- If you're baking the casserole right away, preheat the oven to 375 degrees F and bake, covered with foil, for 20 minutes. Then remove the foil and continue baking for 15 to 20 minutes, or until hot and bubbly. Serve with sour cream and cilantro.

- In a large skillet brown beef in oil over medium high heat. When meat is browned, drain excess fat from skillet. Add garlic powder, salt and pepper and stir in.
- Add bouillon, onion and mushrooms to skillet and saute until onions are translucent. Remove from heat (very important) and add sour cream. Stir all together and serve over hot cooked egg noodles.

- 1. Brown ground beef in a Dutch oven. Drain fat and return to pan.
- 2. Stir in taco seasoning.
- 3. Add Rotel, tomato paste and spaghetti.
- 4. Cover with 6 cups of water.
- 5. Bring to a boil and then reduce the heat to simmer. Cover and cook until pasta is cooked and water is absorbed, approximately 15 minutes.
- 6. Pour spaghetti into a sprayed 13x9 casserole dish.
- 7. Top with the shredded cheese and bake at 350 until the cheese is melted and bubbly.
- 8. You can also cook this completely on the stove top, just add the cheese after step 3 and cover & simmer until cheese is melted. I prefer the cheese to be melted in the oven until golden and bubbly. Serve with sour cream and cilantro (both optional).

- Preheat oven to 350 degrees F (175 degrees C).
- Bring a large pot of lightly salted water to a boil. Cook elbow macaroni in the boiling water, stirring occasionally until tender yet firm to the bite, 8 to 10 minutes. Drain well.
- Heat a large skillet over medium-high heat. Cook and stir beef in the hot skillet until browned and crumbly, 5 to 7 minutes; drain and discard grease. Add water and taco seasoning mix and simmer until thickened, about 5 minutes.
- Stir refried beans, Cheddar cheese, and green chiles into ground beef; cook and stir until cheese is melted and mixture is smooth, about 5 minutes. Fill shells with beef mixture.

- Cut steak into bite size pieces.
- Cook and stir steak, onion, and garlic in oil in a large saucepan over medium heat until brown.
- Drain off oil.
- Stir in vinegar, water, chili sauce, paprika, chili powder, seasoned salt, soy sauce, and mushrooms into steak mixture.
- Bring to a boil; reduce heat.
- Cover and simmer 1 hour until meat is tender.
- Cool and store in freezer container.

- Set a large, flat-sided skillet or Dutch oven over medium-high heat. Once the pan is hot, add 1 tablespoon of oil, swirling to coat the pan. When the oil is shimmering but not smoking, add the mushrooms. Leave them alone for 30 seconds without stirring, then season with salt and pepper, shaking the pan to toss the mushrooms. Continue cooking, stirring occasionally, until soft and caramelized, 3-4 minutes. Transfer to a medium-sized bowl.
- Season the beef with salt and pepper. Add the remaining tablespoon of oil + 1 tablespoon of the butter to the pan, swirling to coat. Add the beef to the pan in a single layer (cook in batches to avoid overcrowding). Sear for 30 seconds on high heat. Flip the meat with tongs and sear for an additional 30 seconds, then transfer to the bowl with the mushrooms. Repeat with the remaining meat. If the pan ever gets too smoky, take it off the heat for a moment. The meat can be slightly undercooked; it will finish cooking in the sauce at the end.
- Turn the heat down to medium-low. Add the remaining tablespoon of butter along with the onions and a pinch of salt. Stir with a spatula or wood spoon, scraping up the brown bits on the bottom of the pan as they detach and incorporating them back into the onions. Continue stirring until the onions are soft and the brown bits are incorporated, 2-3 minutes.
- Stir in the flour and continue cooking for an additional 2-3 minutes. Whisk in the stock, wine, and juices from the bowl with the beef and mushrooms (a fine-mesh strainer makes this easier, if you have one). Increase the heat to medium-high and bring to a boil, whisking until the sauce thickens slightly, 2-3 minutes.
- Reduce the heat to medium-low. Add a few ladles of hot liquid into the sour cream, whisking to combine, then add the sour cream to the sauce (don't skip this step; the sour cream can curdle if added directly to hot liquid). Add the mushrooms and beef back to the pan; heat until warmed through; 1-2 minutes. Taste and add salt and pepper if needed (or a splash of soy sauce instead of salt).
- Serve Beef Stroganoff over buttered egg noodles, topped with chopped parsley. Leftovers will keep in an airtight container in the refrigerator for up to 5 days.
