ROAST MAPLE PORK LOIN

Nothing says "holiday meal" to me like a centerpiece-worthy platter of roasted meat and vegetables. The season requires that you have options, because you might be cooking for a crowd or a dinner party. I like to make a little extra of this particular recipe, and use the leftovers for sandwiches. What could be better?

3 1/2 pounds pork loin, boneless
Coarse kosher salt
Freshly ground black pepper
4 cloves garlic
1/4 cup sage
6 ounces thick-cut bacon, diced
8 ounces fresh orange juice, from 1 to 2 oranges
1/4 cup maple syrup
2 tablespoons apple cider vinegar
2 teaspoons chili powder, New Mexico or other high-quality, use more or less to taste
5 tablespoons extra-virgin olive oil, divided
2 pounds Brussels sprouts
1 pound butternut squash
8 sprigs thyme
Lemon wedges, optional

Steps:

  • Season the pork loin with 1 tablespoon of salt and a generous amount of black pepper. Chop the garlic and sage together to make a coarse rub for the pork. Rub it into the pork loin. Cover with plastic and refrigerate for a few hours, preferably overnight. Remove it from the refrigerator 30 minutes before you're going to cook. (Note: Please allow 8 hours for overnight marinating.)
  • Preheat the oven to 425 degrees F. Set a medium sauté pan over medium-high heat. Add the bacon to the pan, and fry until crisp and fully rendered. Transfer the bacon to a paper towel-lined plate with a slotted spoon. Return the pan to the heat.
  • Add the orange juice, maple syrup, apple cider vinegar, and chili powder to the sauté pan with the rendered bacon fat. Simmer the glaze until it thickens and becomes syrupy, about 2-3 minutes. Once the glaze has thickened, drizzle in a tablespoon of olive oil, for added body and glossiness. Set aside.
  • Trim, clean, and halve the Brussels sprouts. Spread them out on a rimmed baking sheet. Set aside.
  • Peel and cut the butternut squash into quarter-moon shapes, ¼-inch thick. Spread out on a second rimmed baking sheet. Set aside.
  • Remove the plastic wrap from the rested pork loin, and discard. Brush the sage/garlic mixture off and place the loin, fat side up, on the third rimmed baking sheet. Drizzle half of the cooled glaze over the pork loin, smearing it in with your hands. Coat the vegetables in the remaining olive oil, scatter a few sprigs of thyme on the trays, and season with salt. Toss with the remaining glaze. Place the trays in the oven and set a timer for 10 minutes.
  • Check the vegetables after 10 minutes; remove from the oven once they're golden brown and slightly soft in the middle. Drop the oven's temperature to 375 F and continue roasting the pork loin until an instant-read thermometer inserted into the thickest end reads 140 degrees F, about 20-30 minutes. Remove from the oven and let rest.
  • Spread the roasted vegetables on a large serving platter. Slice half of the pork loin, and arrange on top of the vegetables. Garnish with the cooked bacon and lemon wedges. Serve immediately.

The original idea for this recipe came from Rachel Ray. LOVE LOVE this snack. It is great to take with you where ever, hikes, long trips, in your desk, or even as a snack when the kids come home from school. Substitute any dried fruit and/or change the nuts to suit your taste. You can even change it around and just make it into granola.

1 cup oats
3/4 cup maple syrup
1 teaspoon cinnamon
2 teaspoons vanilla extract (I like vanilla flavor)
2 cups almonds
1/2 cup dried sweetened cranberries
1/2 cup raisins
1/2 cup shelled pumpkin seeds or 1/2 cup sunflower seeds
1 cup M&M's peanut chocolate candy

Steps:

  • Preheat oven to 375 degrees F.
  • Line cookie sheet with parchment paper, or non stick aluminum foil.
  • Put maple syrup in a sauce pan, on the stove with cinnamon and vanilla over medium low heat. Warm syrup mixture for about 2-3 of minutes then remove from heat.
  • Combine oats, almonds, raisins, cranberries and seeds in a bowl. Mix in maple syrup, and stir until completely coated.
  • Spread the maple coated mixture out on prepared cookie sheet and roast 15 minutes.
  • Remove the mixture from oven and transfer to a bowl, toss the mix to cool it.
  • When mixture has cooled completely, toss with peanut candy.
  • Store in plastic bags, or air tight container!

3 tablespoons butter
1 pound whole almonds
2 tablespoons finely chopped fresh rosemary
2 tablespoons Worcestershire sauce
1 tablespoon kosher salt
1/2 pound dried Turkish apricots, cut into thirds
1 cup dried cranberries

Steps:

  • Preheat an oven to 400 degrees. Place butter on a large baking sheet with sides and melt in oven for 3 to 4 minutes. Remove baking sheet and add almonds, rosemary, Worcestershire sauce, and salt. Stir until almonds are coated with seasonings, then spread almonds in a single layer. Return baking sheet to oven and turn oven down to 325 degrees. Bake for 20 minutes, stirring almonds once or twice to toast evenly. Remove and let cool in pan.
  • When cool, transfer seasoned almonds to a large resealable plastic bag; add dried apricot pieces and dried cranberries. Seal bag and shake to toss contents. Store at room temperature up to 3 days.

  • Combine oats, hazelnuts(or pine nuts), almonds, raisins, craisins and seeds in a bowl. Toss with maple syrup and remove the cinnamon stick and vanilla bean.
  • Spread the maple coated mixture out on a baking sheet and roast 15 minutes. Remove the nuts from oven and transfer to another cold pan, tossing the mix to quick-cool it.
  • Once cool, toss with m&ms and eat, or pack for a hike! Enjoy!

1 tablespoon maple syrup

1 1/2 cups pretzel nuggets, lightly salted

Steps:

  • Preheat oven to 350 degrees F.
  • Melt butter, brown sugar, and maple syrup in large pot over medium heat. Stir in cinnamon and pumpkin pie spice. Add cranberries, almonds, and trail mix and stir to combine. Once ingredients are all combined add pretzels and stir in.
  • Spread mixture on greased cookie sheet. Bake 20 minutes or until mixture is crunchy and lightly browned.

2 cups all-purpose flour
1/2 teaspoon baking soda
1/2 teaspoon salt
1/2 teaspoon freshly grated nutmeg
1/2 teaspoon ground cinnamon
8 tablespoons (1 stick) unsalted butter, softened
1 cup firmly packed dark brown sugar
1 large egg
1/4 cup brewed coffee, cold or milk
1 1/4 cups dark raisins
3 ounces (about 2/3 cup) coarsely chopped walnut pieces
3 or 4 cookie sheets or jelly roll pans, covered with parchment or foil

Steps:

  • In a large bowl, combine the flour, baking soda, salt, and spices; stir well to mix. In the bowl of a standing electric mixer fitted with the paddle attachment, beat together the butter and brown sugar until combined. Beat in the egg until the mixture is smooth. Lower the speed and beat in half the flour mixture, then all the cold coffee. Scrape the bowl and beaters well, then beat in the remaining flour mixture. Stir in the raisins and walnuts. Cover the bowl with plastic wrap and chill the dough for 1 hour.
  • About 20 minutes before you are ready to bake the cookies, set the racks in the upper and lower thirds of the oven and preheat to 400 degrees. Drop teaspoonfuls of the dough 2 or 3 inches apart onto the prepared pans. Bake the cookies for 10 to 12 minutes, or until they spread and become firm. Slide the papers off the pans onto racks. After the cookies have cooled, detach them from the paper and store them between sheets of parchment or waxed paper in a tin or plastic container with a tight-fitting cover.
