3 large sweet onions, sliced
seasoning salt (to taste) or white salt (to taste)
fresh ground black pepper (to taste)
2 cups shredded swiss cheese, divided
1 (10 ounce) can cream of chicken soup, undiluted
2/3 cup half-and-half or 2/3 cup milk
1 teaspoon soy sauce (or to taste)
8 slices French bread, buttered on both sides

Steps:

  • Grease a 2-quart baking dish.
  • In a large skillet melt butter over medium-high heat; add in onions and saute until translucent and slightly brown, then season with salt to taste.
  • In the prepared baking dish layer onions then two-thirds of cheeses sprinkling pepper between layers.
  • In a saucepan heat soup with half and half and soy sauce; stir to blend.
  • Pour over onions and stir gently.
  • Top with bread slices.
  • Bake uncovered at 350 degrees F for 15 minutes.
  • Push bread under sauce then sprinkle with remaining cheese; bake 15 minutes longer.

1 lb Birds Eye frozen small whole onions
1 tablespoon butter
1 tablespoon flour
1/2 cup milk
4 ounces extra-sharp cheddar cheese
4 ounces Velveeta cheese
1 ounce blue cheese
1 tablespoon parmesan cheese
1 teaspoon salt
1 teaspoon pepper
2 tablespoons hot sauce

Steps:

  • Preheat oven to 350.
  • Defrost Onions.
  • Melt butter then stir in flour, salt and pepper.
  • Cook 2 minutes.
  • Add milk, all cheeses and hot sauce.
  • Stir until cheeses are melted.
  • Add onions.
  • Pour mixture into a greased casserole dish.
  • Bake covered for 30 minutes, remove cover and bake another 20 minutes.

1/4 cup all-purpose flour

  • Place Vidalia slices in lightly greased 2 quart casserole dish and set aside.
  • Melt butter in a heavy saucepan over low heat. Add flour, stirring well until smooth. Cook for 1 minute while stirring.

  • Add cheese and salt, stirring until the cheese melts and sauce is smooth.

2 small onions, thinly sliced
1 teaspoon fresh thyme, chopped
Kosher salt and freshly ground pepper
1 tablespoon apple cider vinegar
2 8-ounce tubes refrigerated crescent roll dough, separated into 16 triangles
4 ounces Swiss cheese, shredded

Steps:

  • Preheat the oven to 375˚ F. Melt the butter in a 12-inch cast-iron skillet over medium heat. Add the onions, thyme, 1 teaspoon salt and a few grinds of pepper. Cook, stirring occasionally, until the onions are very soft and a deep golden brown, 10 to 15 minutes. Stir in the vinegar and cook, scraping up any browned bits, until evaporated, 1 to 2 minutes. Use a slotted spoon to remove the onions to a paper towel-lined plate and wipe the skillet clean.
  • On the wide end of each dough triangle, spoon a scant tablespoonful of caramelized onions and sprinkle with about 1 tablespoon Swiss cheese. Starting at the wide end, gently roll up the dough around the filling; place in the skillet. There will be some space between each roll, but the rolls will puff up and come together when baked.
  • Transfer the skillet to the oven and bake until the rolls are golden and puffy, 25 to 30 minutes. Let cool slightly before serving.

1 cup crispy fried onions, for garnish
1/4 cup (67 grams) unsalted butter
1 small yellow onion, finely chopped
Kosher salt
Freshly ground black pepper
1/2 teaspoon sweet paprika
6 tablespoon (48 grams) all-purpose flour
2 1/2 cups (600 grams) whole milk
8 oz (225 grams) Gruyère cheese, shredded
1/3 cup freshly chopped chives

Steps:

  • In a medium bowl, whisk together the flour, nutmeg, a few turns of pepper and salt. In a separate bowl, combine the eggs and milk. Stir the egg mixture into the dry mixture. Cover and refrigerate for 30 minutes.
  • Bring a large pot of salted water to a boil. Working in batches, use a rubber spatula to press the batter through a large slotted spoon or spätzle maker and boil for 2 to 3 minutes, until the spätzle float to the top. If you find the batter is too thick to press through the slotted spoon, hold the slotted spoon closer to the surface of the boiling water so that the steam softens it a bit. Transfer the spätzle to a strainer, toss in a bit of olive oil so they don't all stick together, and set aside while you make the sauce.
  • Transfer the spaetzle directly into the cheese sauce. Top with more chives and crispy fried onions and loads of black pepper and serve. Enjoy!
  • To make the sauce: melt the butter in a large pot over medium heat. Cook onion with a pinch of salt until soft and translucent, 5 to 7 minutes. Add a few turns of black pepper and the paprika. Stir in the flour and cook for 1 minute. Add milk a third at a time, stirring continuously and allow to thicken after each addition. Add cheese and stir until melted. Add chives and stir. Taste and adjust seasonings as needed.

half a ball light mozzarella , roughly chopped
85g cheddar , grated
2 tbsp olives , halved (we like Kalamata)
50g roasted red pepper from a jar, drained and roughly chopped
1 garlic clove , crushed

leaves from few thyme sprigs

Steps:

  • Heat oven to 220C/fan 200C/gas 7. Halve each onion through the middle. Microwave in pairs for 4 mins on High until soft. Remove the middles of the onions, leaving about 3 outer layers in place, like little bowls.
  • Whizz the onion middles in a food processor until pulpy. Mix with the mozzarella, half the cheddar, the olives, peppers, garlic, crumbs and most of the thyme, then season well. Spoon the filling into the onion cases and transfer to a baking dish. Sprinkle with the remaining cheddar and thyme, then roast for 15 mins until hot through and golden.

1 tablespoon active dry yeast
1 teaspoon salt
2 tablespoons sugar
1 cup milk, warmed
1 egg, beaten

Steps:

  • Put 1 cup of the flour in your mixing bowl. Stir in the yeast, salt and sugar. Pour in the warm milk and mix well for three or four minutes on medium. Let stand for about 10 minutes until bubbly.

Two 14 oz bags frozen pearl onions cooked according to package instructions.
2 Tbsp butter
2 Tbsp all purpose flour
1 c half and half
2 Tbsp sour cream
2 Tbsp cream cheese
1 c cheddar cheese (i use sharp)
dried french fried onions (either plain or cheddar cheese, or buttered bread crumbs
paprika (not smoked paprika)

Steps:

  • 1. Melt butter (don't let it turn brown!) Add flour and stir until smooth.
  • 2. Slowly add half and half and stir constantly until smooth and thick (just like a white sauce).
  • 3. Add sour cream and cream cheese.
  • 4. Add 3/4 cup cheese.
  • 5. Stir again until smooth and then add onions.
  • 6. Pour into casserole dish, top with cheese, and add either dried French fried onions or bread crumbs. Sprinkle with paprika.
  • 7. Bake for approximately 20-30 minutes until slightly browned. (Oven temp will depend on whether or not you are baking something else. Only thing that matters is that the top is slightly browned.

1 1/3 cups mayonnaise
2 cups finely diced yellow onions (about 2 medium onions)
1 cup freshly grated Parmesan cheese
1 jalapeno, seeded and diced (optional)
1 teaspoon freshly ground black pepper
2 tablespoons chopped fresh chives, plus more for garnish
Baguette toasts or veggies (such as cherry tomatoes, mini sweet peppers, carrot sticks and celery sticks), for serving

Steps:

  • Preheat the oven to 400°F.
  • In a stand mixer fitted with the paddle attachment, combine the cream cheese, mayonnaise, onions, Parmesan, jalapeno, pepper and the 2 tablespoons chives. Beat on medium speed until combined. (Alternatively, combine the ingredients in a medium bowl and stir until combined.)
  • Transfer the dip to a 9- or 10-inch pie plate or square baking dish, smoothing it into an even layer.
  • Bake the dip until it is dark golden brown on top and bubbly, about 25 minutes.

320g sheet shortcrust pastry
flour, for dusting
200g crème fraîche
1 egg
75g parmesan finely grated, plus extra for the topping
1 lemon, zested and juiced
1 garlic clove, crushed
few thyme sprigs, leaves picked
½ tsp ground black pepper
8 spring onions, trimmed
drizzle of olive oil
green salad, to serve

Steps:

  • Heat the oven to 180C/160C fan/gas 4. Roll the pastry on a lightly floured work surface to a 30 x 30cm square and carefully move onto a baking tray lined with baking parchment.
  • Mix the crème fraîche, egg, cheese and lemon zest in a bowl with a squeeze of lemon juice, garlic, thyme leaves, black pepper and a pinch of salt.
  • Spoon onto the middle of the pastry and smooth into an even 20cm circle. Lay over the spring onions and drizzle with a little oil.
  • Cut the pastry rim every 10cm, then fold over each pastry flap, slightly overlapping them to create a rim that seals in some of the crème fraîche mixture and spring onions. Sprinkle liberally with more cheese, scattering over the pastry too. Bake for 35 mins or until the pastry is golden and cooked through. Serve warm or at room temperature, cut into wedges, with a green salad alongside.

½ cup seasoned bread crumbs
butter flavored cooking spray

Steps:

  • Preheat the oven to 400 degrees F (200 degrees C).
  • Melt 1/4 cup of butter in a large skillet over medium-low heat. Add sliced onions, and cook until wilted and soft, but not browned. Set aside.

1 tsp dark brown sugar
1 tbsp butter
50ml stout
1 tsp English mustard
75g grated cheddar
splash of Worcestershire sauce

2 slices of toast

  • Finely slice the red onions, then tip them into a large frying pan with the butter and a big pinch of salt. Cover and cook on a low-medium heat for 30 mins, stirring regularly. Take off the lid, then scatter with the sugar, season well and cook for 5 more mins until caramelised.
  • Meanwhile, melt the butter in a pan, then whisk in the stout and the English mustard. Stir in the grated cheddar and whisk until melted, then season and add a splash of Worcestershire sauce. Take off the heat, then whisk in the egg. Divide the onions between two toasts, top with dollops of the cheesy sauce, then grill for 2-3 mins until browning and bubbling.

175 g maize flour
85 g rice flour
25 g soya flour
1 tablespoon baking powder
1 teaspoon caster sugar

115 g mature cheddar cheese, coarsely grated
200 ml milk, warmed
2 eggs, lightly beaten
40 g butter, melted

Steps:

  • Preheat the oven to 190°C/275°F/gas mark 5. Grease a 900g (2lb) loaf tin and set aside. Fry the onion gently for 10-15 minutes until softened, stirring occasionally. Remove from heat and leave to cool.
  • Place the maize meal, rice flour, soya flour, baking powder, sugar and salt in a bowl and mix well. Stir in the cheese. In a small bowl, beat together the milk, eggs, and melted butter, then add to the flour mixture, stirring to mix well.
  • Reserve about 1 tablespoon of the cooked onions. Stir the remaining onions into the bread mixture. Transfer the mixture to the loaf tin and level the surface. Sprinkle the reserved onions over the top.

Steps:

  • Place flour in large bowl; cut in cream cheese and butter with pastry blender or 2 knives until mixture resembles coarse crumbs. Shape into ball; flatten slightly. Wrap in plastic wrap. Refrigerate 1 hour.
  • Meanwhile, heat oil in large skillet on medium heat. Add onions; cook 15 min. or until golden brown, stirring occasionally. Remove from heat. Set aside until ready to use.
  • Heat oven to 375ºF. Roll out dough on lightly floured surface to 11-inch round. Press dough onto bottom and up side of 9-inch quiche dish or pie plate; trim edge. Whisk eggs, dressing and milk until blended; stir in cheddar, bacon and onions. Pour into crust.
  • Bake 45 to 50 min. or until knife inserted in center comes out clean.

250g plain flour, plus extra for dusting
50g rye flour (or make up the weight with plain flour)
large pinch of cayenne pepper
1 tsp onion seeds
25g parmesan or vegetarian alternative, finely grated
125g cold butter, cubed
1 egg, beaten
40g butter
3 large onions, finely sliced
2 bay leaves
1 tbsp thyme leaves
1 medium potato (about 350g), halved lengthways and sliced
100ml double cream
150g extra mature cheddar, ½ grated, ½ chopped into small chunks

Steps:

  • First, make the pastry. Tip the flours into a medium bowl with the cayenne, onion seeds, parmesan and a generous pinch of salt. Rub in the butter until the mixture resembles breadcrumbs, then pour in half the egg and 2 tbsp cold water and bring everything together using your hands. Knead a couple of times until smooth. Flatten a third of the dough into a disc, then do the same with the remaining dough. Wrap both pastry discs and chill in the fridge for at least 30 mins. Will keep chilled for up to two days.
  • Meanwhile, make the filling. Heat the butter in a saucepan over a medium heat until sizzling, then scatter in the onions, bay, thyme, a large pinch of salt and good grinding of black pepper. Stir, then cook slowly for 10 mins until the onions have cooked down and started to caramelise. Stir in the sliced potatoes, cover and cook for 8-10 mins more, stirring occasionally until the potatoes are soft and starting to break down. Stir in the cream, remove the pan from the heat and leave to cool. Once cool, remove and discard the bay, then fold in the cheese.
  • Roll the smaller pastry disc out on a lightly floured surface to the size of a dinner plate and lift onto a baking sheet lined with baking parchment. Roll out the remaining pastry disc along with any offcuts to a circle about 5cm wider than the first. Spoon the filling into the middle of the smaller circle on the baking sheet, leaving a 4cm border. Brush the exposed border with some of the remaining beaten egg, then drape over the larger pastry circle. Tuck the edge around the filling to enclose it, as if making a giant ravioli. Trim the edge to neaten, then crimp with a cutlery knife handle or fork to seal. Brush the pie all over with most of the remaining beaten egg, and use any trimmings to make decorations, if you like.
  • Heat the oven to 210C/190C fan/gas 7. Bake the pie for 35-40 mins until deeply golden, brushing with the rest of the beaten egg halfway through. Leave to cool on the baking sheet for at least 20 mins before cutting into wedges, or leave to cool completely and serve cold.
