GINA'S BROWN SUGAR MOJITO

- Tear the mint leaves into a glass. Add in the brown sugar and lime juice and muddle the ingredients together with the tip of a wooden spoon. Add some ice and pour in the rum. Fill the rest of the glass with some club soda and garnish with a lime wedge, a mint sprig and a cocktail stirrer.

Steps:
- Muddle the lime juice, sugar and mint leaves in a small jug, crushing the mint as you go - you can use the end of a rolling pin for this. Pour into a tall glass and add a handful of ice.
- Pour over the rum, stirring with a long-handled spoon. Top up with soda water, garnish with mint and serve.

THE REAL MOJITO
This is an authentic recipe for mojito. I sized the recipe for one serving, but you can adjust it accordingly and make a pitcher full. It's a very refreshing drink for hot summer days. Be careful when drinking it, however. If you make a pitcher you might be tempted to drink the whole thing yourself, and you just might find yourself talking Spanish in no time! Tonic water can be substituted instead of the soda water but the taste is different and somewhat bitter.

- Place mint leaves and 1 lime wedge into a sturdy glass. Use a muddler to crush the mint and lime to release the mint oils and lime juice. Add 2 more lime wedges and the sugar, and muddle again to release the lime juice. Do not strain the mixture. Fill the glass almost to the top with ice. Pour the rum over the ice, and fill the glass with carbonated water. Stir, taste, and add more sugar if desired. Garnish with the remaining lime wedge.

The mojito is so sexy and light that it would be a shame not to adapt the Cuban original to the Mexican model. The typical mojito is made with white rum, but a smooth white tequila works perfectly with the wisp of mint and sweetness. - In a mixing glass or shaker, muddle the mint sprigs, lime, and sugar.
- Add the ice and tequila. Cap tightly, shake vigorously, and pour into a 12-ounce glass. Top the glass with soda water and top that with the lemon-lime soda. Garnish with a sprig of mint and a lime wheel.

"The mojito (mo-hee-toe) was concocted in the 17th century by Sir Francis Drake. While crusading around the Caribbean when his stock of whiskey ran dry (which he always drank with mint and a little sugar water), Sir Francis substituted rum for his whiskey and the mojito was born." Officially, however, Cuba claims to have invented the mojito in the teen years of the 20th century. It was one of Ernest Hemingway's favorite libations when he visited La Bodeguita in Havana. Steps:
- Place lime wedges and mint leaves in a pint glass.
- Muddle with the handle of a wooden spoon for 30 seconds.
- Add simple syrup and white rum.
- Fill glass with ice and top off with club soda.
- Shake or stir gently.
- TO MAKE SIMPLE SYRUP:.
- In a small saucepan, combine 2 parts sugar to 1 part water.
- Heat until sugar is dissolved.
- Cool before using (this keeps in the refrigerator for 1-2 weeks).
- For a fruity twist to your mojito, use flavored rum, such as mango, banana, or pineapple.
- NOTE: Muddle means to simply bruise or gently pound the limes and mint leaves to release their juices and essence. You can buy a muddler, which looks like a tiny baseball bat or billy club, at any good restaurant store.
