MEXICAN FIESTA CASSEROLE

- 1. Preheat the oven to 350°F. Spray a 9 by 13-inch baking dish with cooking spray.
- 2. In a large skillet, heat the oil over medium-high heat. Add the turkey and cook until browned, 5 to 7 minutes. Stir in the onions and zucchini and cook until tender, about 5 minutes. Stir in the taco seasoning, 2/3 cup water, and the corn. Simmer until thickened, about 2 minutes, then stir in the black beans.
- 3. Spread 1/2 cup of the salsa in the bottom of the baking dish. Lay 4 tortillas over the salsa, and spoon half of the meat mixture on top. Cover with 3/4 cup of the salsa and 1 cup of the shredded cheese. Top with 4 more tortillas and the remaining 3/4 cup salsa. Scatter the remaining 1/2 cup shredded cheese over the top.
- 4. Bake the casserole until the cheese is melted and bubbling, about 25 minutes. Slice and serve, topped with scallions and sour cream.

- Preheat the oven to 450 degrees F (230 degrees C).
- Sprinkle taco seasoning on ground beef. Heat a large skillet over medium-high heat. Cook and stir beef in the hot skillet until browned and crumbly, 5 to 7 minutes. Drain and discard grease.
- Divide pizza dough in half and flatten each half into a thin crust over a nonstick baking sheet.
- Bake in the preheated oven for 3 minutes. Remove but leave oven on.
- Mix pizza sauce, cumin, and salt together in a bowl. Spread 1/2 of the mixture over each pizza crust. Sprinkle beef and Cheddar cheese evenly on top.
- Bake until crusts are crunchy and cheese is melted, 10 to 12 minutes.

- Bring a large pot of lightly salted water to a rolling boil; cook the rotini in the boiling water until the pasta is cooked through yet firm to the bite, about 8 minutes. Drain. Rinse under cold running water until completely cooled; drain thoroughly.
- Whisk the salsa, mayonnaise, sour cream, black beans, Mexican-style corn, red bell pepper, green onions, black olives, garlic powder, cumin, cilantro, salt, and pepper together in a large bowl; add the cooled pasta and stir to coat evenly. Cover the bowl with plastic wrap and refrigerate 2 hours to overnight before serving.

This is a dish that I make about twice a month. My family loves this served with fresh cantaloupe and spanish rice.

Steps:
- saute onion in a small amount of oil until tender.
- Add beef and brown, stirring.
- Drain grease from meat and add taco seasoning packet along with 1/3 cup of water.
- simmer, stirring occasionally.
- Meanwhile, place 3 flour tortillas on bottom of a 9 inch pie pan, spreading tortillas out to cover the entire bottom of the pan.
- Spread 1/2 of the refried beans over the tortillas.
- Add 1/2 of the green chilies.
- Cover with half of the meat mixtureand 1 cup of the cheese.
- Repeat the layers and top with cruched tortilla chips.
- Bake at 350 degrees for 30 minutes.
- top with chopped tomatoes and serve with taco sauce, if desired.
MEXICAN FIESTA BREAKFAST CASSEROLE
We ate this Mexican-inspired breakfast casserole once at a buffet brunch when we were on an organizing group for the church fiestas, and we both liked it so much that I came home and worked on recreating the recipe for our family.

- Preheat the oven to 375 degrees F (190 degrees C). Spray an 8-inch square glass baking dish with cooking spray.
- Heat a medium skillet over medium-high heat. Add chorizo; cook and stir until browned and crumbly, 3 to 5 minutes. Remove from the skillet and drain on paper towels.
- Mix water and dry milk together in a large bowl. Add chorizo, tortillas, eggs, pinto beans, diced tomatoes with green chiles, corn, green chile, pepper Jack cheese, bell pepper, and green onions. Mix well. Pour into the prepared dish.
- Bake in the preheated oven until golden brown and the middle is set, 55 to 60 minutes. Remove from the oven; spread sour cream on top and sprinkle with Mexican cheese. Return to the oven to melt cheese, about 1 minute. Let cool slightly before serving.

- Bring water and garlic powder to boil in a large saucepan, stir in grits.
- Return to a boil and reduce heat, cook 4 minutes, stirring occasionally.
- Remove from heat.
- Combine flour and cheddar cheese; stir into grits.
- Stir 1 egg into mixture until well blended.
- Spoon mixture into a lightly greased 9" pie plate; press with back of a spoon to form a shell.
- Cook beef and taco seasoning mix in a large skillet until meat browns, drain.
- Spread meat mixture into pie shell.
- Top with 3/4 c Monterey Jack cheese, tomato, olives, and green pepper; set aside.
- Combine 2 eggs and milk.
- pour over pie.
- Bake at 375F degrees.
- for 25 minutes.
- Remove from oven, sprinkle with remaining 1/4 cup Monterey Jack cheese, and let stand 5 minutes before slicing.

- Warm the pita in a toaster oven until fragrant, 1 or 2 minutes; cut in half and open up each half. Heat the beans in a small saucepan over medium heat until hot, and mix in the avocado. Top each pita with 1 tablespoon of feta cheese, and add a dash of hot sauce and a teaspoon of chopped fresh cilantro to each.

- Unfold pie crust; place in 9" pie pan.
- Prick bottom and sides with fork; flute edge.
- Cut 13 (2") triangle pieces from remaining crust; place around crust edge.
- Bake at 425 degrees for 9 to 11 minutes or until light golden brown.
- Cook in large skillet: Brown ground beef, drain.
- Add chili beans, salsa and 1 cup of cheese; mix well.
- Cook over low heat for 2 to 3 minutes or until cheese is melted.
- Fill: Spoon meat mixture into baked shell.

MEXICAN FIESTA BAKE
This recipe is a favorite of my whole family; even the child who hates meat. I like to experiment with different cheeses or different salsas. I think there are supposed to be 6 servings in this dish but because everyone has seconds it serves 5 with no leftovers. For more servings increase to 1 1/2 lb beef and increase corn bread to 2 boxes and cheese accordingly. Bake in 9x9 or larger casserole dish.

- Brown ground beef, and drain excess fat.
- Add water, taco seasoning, and salsa.
- Cook for 15 minutes or until water is reduced.
- Place beef in small casserole dish.
- Sprinkle with 1/3 cup of cheese.
- Mix corn bread according to package directions and add remaining cheese.
- Mix.
- Spread corn bread on top of beef.
- Bake at 400 degree for 20 minutes or until corn bread is golden brown on top.

- Choose one or two proteins, then sides of choice. See linked recipes for directions (except tortilla chips and grilled corn, see below).
- Main Taco Filling Selection: The most convenient big batch protein is Pork Carnitas because it freezes great and only requires a quick pan fry to freshen up, and stays good for several hours (tips are in Carnitas recipe notes). The Shredded Chicken and Beef are almost as good (pork is slightly juicier) and stored similarly. The next simplest is Fish Tacos because it's very quick to cook, then just put them in a serving dish and break into chunks with fork. If you want to use one of the chicken recipes to make ahead, use boneless thigh fillets, cook, then keep whole, cover and cool, reserve every drop of leached juice. Before serving, chop/slice, cover and microwave reheat.
- Taco Fixings: I like to have at least one fresh thing to stuff in tacos (pickled cabbage is my choice in this Fiesta), + a sauce (the Restaurant Style Salsa,) + avocado in some form (guac or slices or in Pico de Gallo) + coriander/cilantro. Chopped white onion is very common in Mexico, and Tex Mex fans such as myself will almost always have sour cream and shredded cheese too!
- Other Sides: Tortillas + things to stuff in tortillas usually makes for a satisfying meal in itself, but to round things out I usually provide a salad or vegetables of some form. Plain grilled corn is very on theme!
