SIMPLEST SLOW COOKER BLACK BEANS
Notes: Don't be afraid to make these ahead of time, as they continue to develop more flavor as the beans sit in their cooking liquid. Olive oil is something I always add to my slow-cooker cooked beans (see here). I think it adds flavor, especially once the beans finish cooking and are cooling in the flavorful cooking liquid. Feel free to omit if you wish. Pepper flakes: if you like a little bit of spice, add the the chili flakes; if you don't, omit or use less. 1 teaspoon will not make for especially spicy beans, but there will be a nice kick. To make these in the Instant Pot, into the Instant Pot add all of the ingredients listed below along with 6 cups of water. Start with 2 teaspoons kosher salt. Turn the valve to sealing. Set the IP to Manual, High Pressure, 30 minutes. Let it release naturally for at least 20 minutes. Uncover. Taste. Add more salt (I often add 1 to 2 more teaspoons of salt) to taste.

- Place the beans, onion half, bay leaf, garlic, 2 teaspoons kosher salt, pepper flakes (if using), and olive oil (if using) into a slow cooker. Cover with 8 cups of water. Cover pot. Cook on high heat for 6 to 8 hours or until the beans are done, but start checking at the 4-hour mark - all slow cookers are different and times might vary, too, depending on the age of your beans.
- Taste. Add more salt to taste. I add 2 more teaspoons, but start with 1 or a 1/2 teaspoon and adjust from there. Note: When you first taste a bean, do not expect to be wowed. The beans develop more flavor as they cool in their cooking liquid, which will continue to season them. As noted above, I find they taste even better on day 2.
- Store the beans in their cooking liquid. I love these deli quart containers for this purpose. I freeze the beans in their cooking liquid in these quart containers as well.

- Sort beans and remove any debris. Place beans in a large pot and cover with water 2 inches above the beans. Let soak overnight. Drain water.
- Lightly spray a 6 quart crock pot with a non stick spray.
- Add beans, onions, garlic, jalapeños, seasonings and broth to crock pot. Stir.
- Cover and let cook for 6-8 hours on high.
- Cook rice according to package directions.

- Fill the crockpot with just enough water to cover the beans by an inch.
- Add the rest of the ingredients in and stir to mix.

- In a large frying pan, brown sausage and ground turkey olive oil over medium-high heat. Once cooked, pour into bottom of crockpot. I have a 6.5 quart sized slow cooker. (Crock pot does not need to be turned on yet).
- Turn the heat to medium and sauté onions and bell pepper for ~5 minutes. Stir for 1 minute and then transfer to crockpot.

- Rinse and drain the beans, discard any dirt clumps or rocks. Add to the slow cooker.
- Add the onion, jalapenos, chili powder, onion powder, garlic powder, pepper, chicken broth and water to the slow cooker with the beans. Wait to add the salt.
- Cover and cook on HIGH 6-7 hours. Do not open the lid while they cook, or they will not get tender.
- When the cooking time is done mash about 1/4 of the beans with a potato masher right in the slow cooker. Or you can put a scoop in a bowl and mash with a fork and add back to the slow cooker. This will make the beans creamy, which the slow cooker can't do since the simmer is so low. Add salt to taste, I usually use 1/4 tsp.

While in search of a vegetarian black bean and rice recipe I happen upon several appealing recipes that included ingredients I found inticing and many that did that not. That being said, I took a little here and there from fellow recipezaar chefs, added a dash of a my own from time to time and created...FLAVA!! This dish is quite versatile. - In a large soup pot bring 6 cups of water to a boil. Add 6 bouillion cubes and allow them to dissolve. Reserve 2 cups of water and 2 bouillion cubes for later use.
- Add the black beans and diced green bell pepper. Bring to a boil. Allow beans and pepper to simmer, covered for 1 hour. Cook and stir throughout.
- Prepare sofrito; by placing halved green bell pepper, quartered onions, garlic, oregano, cumin, bay leaf, black pepper and reserved 2 cups water/bouillion cubes in a blender. Blend on low until the mixture is smooth. Add the sofrito to the the large pot of beans and rice simmering. Bring to a roaring boil. Reduce heat to simmer. Cook and stir blending flavors for 1 hour.
- Add salt, as needed, sparkling wine (slowly), red wine vinegar, lime juice and sugar. Continue to simmer, covered for 1 hour, allowing spices to blend. Stir on occasion. Mixture will thicken somewhat.
- Bring mixture to boil. Stir in 3 cups instant white rice. Simmer for 10 minutes. Stir. SERVE!
CROCK POT VEGETARIAN BLACK BEAN CHILI
Steps:
- Gather the ingredients.
- Heat oil in a skillet and sauté onions, garlic, and red pepper flakes. Cook for 1 minute, and then add chili powder and cumin. Continue cooking, stirring, for 2 minutes.
- Add onion mixture to slow cooker along with all remaining ingredients except canned beans and garnishes. Stir well and cook on low for 5 to 7 hours. Stir in canned beans about an hour before serving.
- Serve with your choice of garnishes listed above.
