Migas Recipe: Mexican Scrambled Eggs with Crispy Tortillas image

This quick and easy Migas recipe is the perfect Mexican breakfast with lightly scrambled eggs tossed with crispy tortillas, jalapenos, tomatoes and cheese.

3 tablespoons vegetable oil
2 corn tortillas (cut into strips or squares)
1 jalapeno pepper (diced)
1 small red bell pepper (diced)
1 small onion (white or yellow, diced)
4-5 eggs (lightly scrambled)
1 medium tomato (diced)
Salt and pepper to taste
½ cup shredded pepperjack or Monterrey Jack cheese
For Serving: spicy chili flakes (extra sliced peppers, avocado, hot sauce)

Steps:

  • Heat the vegetable oil in a large pan and add the corn tortillas. Fry them lightly in the hot oil until they crisp up, flipping a bit, about 4-5 minutes. Remove them from the pan and set them into paper towels to drain. Sprinkle them with a bit of salt while they are hot.
  • Next, add the peppers and onion to the hot pan and cook them down about 5 minutes.
  • Stir in the tomato, then pour in the scrambled eggs. Sprinkle with salt and pepper and stir.
  • Cook the eggs, stirring here and there, about 2-3 minutes, or until the eggs just begin to set.
  • Remove from heat and stir in the reserved crispy tortillas and shredded cheese.
  • Top with spicy chili flakes, extra sliced peppers and avocado. And hot sauce if desired!

2 tablespoons unsalted butter
1 poblano chile pepper, seeded and diced
1 bunch scallions, sliced
1 red jalapeno pepper, halved, seeded and thinly sliced
1/2 cup fresh corn kernels
Kosher salt
8 large eggs
4 cups tortilla chips, slightly crushed
1 cup shredded cheddar cheese (about 4 ounces)
1/4 cup fresh cilantro, torn, plus more for topping
Diced avocado, sour cream and pico de gallo, for topping

Steps:

  • Melt the butter in a 10-inch cast-iron skillet over medium-high heat. Add the poblano, scallions and jalapeno; cook, stirring occasionally, until slightly softened, 1 to 2 minutes. Add the corn and 3/4 teaspoon salt; cook, stirring occasionally, until the vegetables are soft, about 2 more minutes.
  • Whisk the eggs with 1/4 cup water and 1/2 teaspoon salt in a large bowl. Add the eggs to the skillet and cook, stirring constantly with a rubber spatula to form large curds, until the eggs are softly scrambled, about 2 minutes. Add the tortilla chips, 3/4 cup cheese and the cilantro to the skillet; cook, stirring, until well combined, 1 to 2 more minutes.
  • Sprinkle the scramble with the remaining 1/4 cup cheese and top with avocado, sour cream, pico de gallo and more cilantro.

2 cups oil for frying
¼ cup chopped onion
30 (6 inch) corn tortillas, torn into strips
6 eggs, lightly beaten
2 teaspoons salt
1 (7.75 ounce) can Mexican style hot tomato sauce
½ cup water
½ cup shredded Monterey Jack cheese

Steps:

  • In a large, heavy skillet, heat the oil to 350 degrees F (175 degrees C). Carefully stir in the onion and tortilla strips. Fry until tortilla strips are crisp and golden brown. Remove from heat, and drain on paper towels. Drain the skillet, leaving only a thin residue of oil.
  • Over medium heat, return tortillas to the skillet, and stir in the eggs. Season with salt. Cook and stir until eggs are firm.
  • Mix Mexican style hot tomato sauce and water into the skillet. Reduce heat, and simmer until thickened, about 10 minutes. Top with cheese. Continue cooking until cheese has melted.

1 (28 ounce) can stewed tomatoes or 1 (28 ounce) can plum tomatoes, broken up (drained)
2 tablespoons chopped fresh green chilies
1/2 teaspoon salt
1/2 teaspoon dried oregano
6 eggs
1 1/2 cups monterey jack cheese, cubed
1/4 cup chopped fresh cilantro
guacamole
flour tortilla

Steps:

  • In a 10-inch frying pan, cook bacon until crisp.
  • Remove from pan with slotted spoon and drain.
  • Add onion and garlic to bacon drippings in the pan.
  • Cook until onion is soft.
  • Stir in tomatoes, chilies, salt, and oregano.
  • Bring to a boil, stirring constantly.
  • Continue boiling until sauce thickens, about 15 minutes.
  • Reduce heat to low.
  • Crack eggs and slowly slip into sauce, one at a time.
  • Sprinkle cheese and bacon over the top.
  • Cover and simmer until eggs are set, about 5 to 7 minutes.
  • Sprinkle with the cilantro.
  • Serve with guacamole and warmed tortillas on the side of the plate, if desired.
  • Note: The sauce can be prepared a day in advance.
  • Reheat and slip the eggs in just before serving.

10 eggs
1/2 cup milk
salt (to taste)
pepper (to taste)
2 flour tortillas
2 tablespoons vegetable oil
1/2 onion (chopped)
2 teaspoons garlic (minced)
1 chili (red or green diced or to your taste)
2 tomatoes (diced)
1/2 cup coriander (cilantro leaves)

Steps:

  • Preheat oven to 200°C.
  • Lightly beat eggs and combine with the milk and season well.
  • Cut the tortillas into narrow strips and place on a oven tray and bake in 200C oven until they are golden brown and crisp.
  • Heat oil in a medium pan and add the onion and cook over moderate heat until the onion is tender but not coloured and then add the garlic and the chilli and cook a minute longer.
  • Pour the eggs and cook over a moderate heat, stirring only enough to move the curds from the base of the pan, you want big soft curds.
  • When the egg is almost set, remove from the heat and fold through the tomatoes, tortilla crisps and the coriander and serve immediately.

1 28-ounce can whole tomatoes, drained

1/8 teaspoon smoked or Hungarian sweet paprika
2 tablespoons vegetable oil
2 teaspoons honey
Kosher salt, freshly ground pepper
Assembly:
Vegetable oil (for frying)
9 6" corn tortillas, quartered, or 36 large tortilla chips
Kosher salt
1 cup (4 ounces) crumbled queso fresco or mild feta
1 cup (4 ounces) shredded Monterey Jack
4 large eggs
Finely chopped white onion
Thinly sliced radishes
Chopped fresh cilantro

Ingredient info: Guajillo and New Mexico chiles are sold at some supermarkets and at Latin markets. Smoked paprika is available at most supermarkets.

Steps:

  • For red chile sauce:
  • Place chiles in a medium bowl; cover with 2 cups boiling water. Let chiles soak until softened, about 15 minutes. Drain, reserving soaking liquid. Discard stems and seeds; place chiles in a blender. Add tomatoes, next 4 ingredients, and 1 cup reserved soaking liquid; purée until smooth.
  • Heat oil in a medium saucepan over medium-high heat. Add purée (it will splatter) and bring to a boil. Reduce heat to medium and simmer, partially covered and stirring occasionally, until slightly thickened, about 15 minutes (add more reserved soaking liquid if too thick). Stir in honey and season to taste with salt and pepper. DO AHEAD: Can be made 3 days ahead. Cover and chill. Rewarm before using.
  • For assembly:
  • Place a wire rack on a rimmed baking sheet. Pour oil into a large skillet to a depth of 1 1/2". Prop deep-fry thermometer in skillet with bulb submerged. Heat over medium-high heat until thermometer registers 350°F. Working in batches, fry tortillas, occasionally turning with tongs, until crisp, 2-3 minutes. Transfer chips to prepared sheet and season with salt.
  • Preheat broiler. Toss chips and 1 cup sauce in a large bowl. Transfer half of chips to a large ovenproof platter or skillet. Scatter half of cheeses over chips. Top with remaining chips and cheeses, along with 1/2 cup more sauce. Broil until cheese is golden and melted, 4-5 minutes.
  • Meanwhile, pour oil into a nonstick skillet to lightly coat. Heat over medium heat. Add eggs and fry until whites are set but yolks are still runny, about 4 minutes.
  • Top chilaquiles with chopped onion, radishes, cilantro, and lime wedges. Top with fried eggs and serve with remaining sauce alongside.
