2 eggs
½ cup diced onion
¼ cup milk
2 tablespoons diced green bell pepper
2 tablespoons diced red bell pepper
1 jalapeno pepper, seeded and diced
2 teaspoons Mexican-style chile powder
1 teaspoon onion powder
½ teaspoon ground cumin
1 dash ground cinnamon
salt and ground black pepper to taste
cooking spray

Steps:

  • Whisk eggs together in a bowl. Mix in onion, milk, green bell pepper, red bell pepper, jalapeno pepper, chile powder, onion powder, cumin, cinnamon, salt, and pepper.
  • Heat a large skillet over medium-high heat; grease with cooking spray. Pour in egg mixture; cook and stir until golden brown, about 5 minutes per side.

These soft and fluffy scrambled eggs are served with Tex-Mex favorites like black beans, tomatoes, onions, and cheese.

3 tablespoons butter
8 eggs
½ yellow onion, (finely diced)
10 oz. Rotel tomatoes and green chilies, (drained well)
1 ¼ cups black beans, (drained and rinsed)
1 cup Monterey Jack cheese, (shredded)
3 Green Onions, (diced)

Steps:

  • Melt the butter in a medium skillet over medium-low heat.
  • Whisk the eggs vigorously until they are completely uniform in color. This allows them to cook evenly but also incorporates air into the eggs which makes the fluffy. Add them to the skillet immediately after whisking.
  • Sprinkle the remaining ingredients over the eggs.
  • Leave the eggs untouched for about 45 seconds. As the eggs begin to set, use a silicone spatula and gently lift the eggs at the edge of the pan and fold them up. The uncooked egg mixture will then be able to seep onto the pan, and those can now set.
  • Repeat by continuing to fold up the eggs that have lightly cooked. You don't want to overmix the eggs, only move them around as needed for them to cook and set. If they're cooking too fast, decrease the heat to low.
  • Once the eggs are cooked and no remaining sections are runny, remove them from the heat immediately, do not overcook them. We want them to remain light and fluffy!
  • Top with diced green onions, serve, and enjoy!

1 tablespoon fat free sour cream
1/3 cup fat-free cheddar cheese
1 -2 tablespoon salsa
1 1/2 teaspoons taco seasoning mix
bell pepper (optional)
onion (optional)

Steps:

  • Combine first 5 ingredients in a bowl and mix to combine.
  • Coat a nonstick skillet with pam cooking spray and heat over medium low heat.
  • If using peppers and onions add to pan and saute for 3 minutes.
  • Add egg mixture and cook until eggs are light and fluffy.
  • Top with additional salsa if desired.

1 tablespoon canola oil
1 small white onion, finely chopped
2 to 3 serrano or jalapeño chilies, minced (more to taste, seeded if desired)
1 garlic clove, minced
3/4 pound tomatoes, cut into small dice, or 3/4 of a 14-ounce can, drained
3 to 4 tablespoons chopped cilantro
Salt to taste
6 to 8 large eggs

Steps:

  • Heat the oil over medium heat in a large, heavy nonstick skillet. Add the onion. Cook, stirring, for about three minutes until just tender. Turn the heat to medium-high, and add the chilies, garlic, tomatoes and half the cilantro. The mixture should sear in the pan. Cook, stirring often, until the tomatoes have cooked down and the mixture is lightly browned, five to eight minutes. Season to taste with salt, and turn the heat down to medium. The tomatoes should not be watery.
  • Beat the eggs in a medium bowl, and add salt to taste and the remaining cilantro. Add to the pan and cook, stirring every few seconds to create large curds, until the eggs are scrambled. Taste, adjust seasoning and serve.

For anyone on the go, this is a hearty, portable breakfast -- eggs wrapped in a tortilla and twisted up in foil. At home, place the pan with eggs and toasted corn tortillas in the center of the table.

18 corn tortillas or 1 bag salted tortilla chips
1 tablespoon vegetable oil
5 scallions (both white and green parts), chopped, or 1/2 cup chopped onion
4 to 6 serrano or jalapeno chiles, minced
1 large or 2 small tomatoes, coarsely chopped
1 1/4 teaspoons coarse salt
1/4 cup chopped fresh cilantro (optional)
1 dozen large eggs

Steps:

  • If using corn tortillas, toast individually over a gas flame on low or in a pan for about 40 seconds per side. Stack on top of each other and wrap in foil or a clean kitchen towel. This will steam the toasted tortillas for pliability.
  • Heat a 14-inch skillet and then add the oil and swirl it around in the pan. Stir in the scallions and chiles. Add the tomatoes, salt, and cilantro, if using. Stir over high heat for about 2 minutes.
  • Crack the eggs one at a time into the skillet and stir. Cook just until the eggs are set, 1 to 2 minutes. Serve immediately: scoop a portion of eggs onto each plate and offer 3 tortillas each, or crumble tortilla chips over the egg mixture.

1 teaspoon olive oil
1/4 red onion, finely diced
1 clove garlic, minced
2 large ripe tomatoes, cored & diced
1/2 lime, juice of
1/2 teaspoon honey
1 pinch dried chili
1/2 teaspoon coriander, chopped
3 -4 large eggs
1/4 cup heavy cream
1/4 teaspoon salt
1/8 teaspoon white pepper
2 -3 drops hot sauce
1 tablespoon butter
sour cream
tortilla chips
1/4 avocado, peeled & diced
2 tablespoons cheddar cheese, grated
1/2 teaspoon coriander, chopped

Steps:

  • MAKE SALSA: Heat oil in medium size pan; gently saute onions& garlic until softened (about 2 mins).
  • Add tomatoes& saute for another 3 or 4 mins.
  • Add lime juice, honey& chilies and continue to cook for another 4 to 5 minutes.
  • Just before serving, add coriander.
  • COOK EGGS: Thoroughly beat eggs with cream, salt, pepper& hot sauce.
  • Heat butter in a non stick pan; add egg mixture& gently scramble.
  • Be careful not to overwork the mixture- if you find the eggs are cooking too quickly, lower the heat& continue to stir.
  • PRESENTATION: Place a dollop of sour cream in the center of each plate.
  • Place about 8- 10 tortilla chips on top of the sour cream.
  • Spoon 4- 5 tbsps of salsa over the chips.
  • Top with scrambled eggs& garnish with avocado.
  • Sprinkle with cheese, coriander& a small dollop of sour cream.

I make this fairly often. It's good, easy, and quick...great anytime of the day. I've used chorizo and sausage with equal success and I've used black beans, pinto beans, and kidney beans in replace of the refried...I just like the chorizo better and the refried beans work well. Great on it's own or as a breakfast burrito filler...ENJOY!

  • Remove casings from chorizo (if any) and cook thoroughly in large pan.
  • Add Rotel's, beans, and eggs.
  • Cook over med-high heat stirring often until eggs are cooked.
  • Add cheese, cover and let sit over low heat until melted.
  • Top as wished or wrap up in a tortilla and ENJOY!
