GOLDEN SHRIMP BRUNCH CASSEROLE
During the '40s, Mother had a close group of friends whose husbands or sons were off to war. To ease their worries, the group frequently met for lunch. This was one of my mother's favorite lunch recipes. I recall the scent of melted cheese baking and the custard-like souffle.

- In a large bowl, whisk the eggs, milk, parsley, mustard and salt. In a greased 11x7-in. baking dish, layer with bread cubes, shrimp and cheese; pour egg mixture over top. , Bake, uncovered, at 325° for 50-55 minutes or until a knife inserted in the center comes out clean. Let stand for 10 minutes before serving.

CHEESE AND BROCCOLI STRATA
This is a good dish to serve at a brunch, particularly since all the "hard" work can be done the night before. Note that the cooking time includes a few hours for refrigeration. I think I got this one from the Byerly's cookbook.

Steps:
- Layer bread, broccoli, and 1/2 of cheese in a buttered 9 x 13 baking dish.
- Combine eggs, milk, mustard, spice, and salt; pour over the strata.
- Refrigerate, covered, several hours or overnight.
- Preheat the oven, and sprinkle the strata with paprika.
- Bake, uncovered, for 35 minutes.
- Add remaining cheese to the top; bake until a knife inserted into the center comes out clean (about 10-15 minutes).
- Allow to set for 10-15 minutes before serving.

Steps:
- Whisk together milk, eggs, 1/4 teaspoon salt, Tabasco and nutmeg. Strain through a fine mesh sieve.
- Heat oil in a medium skillet. Add leeks, and toss to coat with oil. Cook over medium heat, stirring occasionally, 4 to 5 minutes or until leeks are soft. Season with 3/4 teaspoon salt. Cool.
- Mix together ricotta, Parmesan, pepper and herbs. Stir in the cooled leeks.
- Grease a roasting pan 9 by 12 by 2 1/2 inches with 1 teaspoon butter. Lay 6 slices of bread in the bottom of the pan. Top with half of the ricotta-leek mixture. Repeat with a second layer. Place the last layer of bread in the pan, and spread the top with the softened butter.
- Pour the custard over the bread, gently pressing top slices into the mixture. Place on a cookie sheet, wrap in plastic and refrigerate overnight.
- Heat oven to 350 degrees. Remove plastic, and sprinkle the top with the cheese. Place in a larger pan, and put on the middle rack of oven. Fill the larger pan with boiling water to come up about halfway on the smaller pan. Bake for 1 to 1 1/4 hours, or until puffy and brown. Allow to cool slightly before serving.

BREAKFAST STRATA
Steps:
- Preheat the oven to 325˚F.
- In a large bowl, whisk together the eggs, milk, salt, and pepper. Fold in the croutons and semihard and semisoft cheeses and set aside.
- In a small skillet, sauté the prosciutto until golden and crisp. Using a slotted spoon, remove the prosciutto from the skillet and let it cool on a plate lined with paper towels. Pour the drippings that remain in the skillet into a 9 × 13-inch baking dish, using a spatula to spread the oil until the dish is lightly coated.
- Add the cooled prosciutto and the green onions and sun-dried tomatoes to the crouton mixture. Gently fold the ingredients until they are evenly distributed. Spoon the mixture into the baking dish and pat it down. (The croutons should form a bumpy surface.) Top with the Parmesan.
- Bake for 35 minutes, rotating the pan after 20 minutes. Bake until the top of the dish is very brown and the middle is springy. Let the strata cool for 10 minutes before serving.
- The strata tastes best the day it is prepared; otherwise, the croutons become soggy.

- Trim crusts from 4 slices of bread.
- Cut slices into 2 triangles each (total of 8).
- Arrange trimmings and uncut bread slices to cover the bottom of a 9x9x2 pan.
- Place cheese slices over the bread.
- Arrange the bread triangles in 2 rows over the cheese - overlap the points slightly on the bases.
- Beat the eggs and blend with milk, onions, salt, mustard and pepper.
- Pour over bread and cheese layers.
- Let stand 1 hour at room temperature or for several hours in refridgerator.
- Bake uncovered at 325 for approximately 1 hour - until knife at center comes out clean.
- Let stand 5 minutes before serving.

- Squeeze handfuls of spinach to remove as much liquid as possible, then finely chop.
- Cook onion in butter in a large heavy skillet over moderate heat, stirring, until soft, 4 to 5 minutes. Add 1/2 teaspoon salt, 1/4 teaspoon pepper, and nutmeg and cook, stirring, 1 minute. Stir in spinach, then remove from heat.
- Spread one third of bread cubes in a buttered 3-quart gratin dish or other shallow ceramic baking dish and top evenly with one third of spinach mixture. Sprinkle with one third of each cheese. Repeat layering twice (ending with cheeses).
- Whisk together milk, eggs, mustard, and remaining 1/2 teaspoon salt and 1/4 teaspoon pepper in a large bowl and pour evenly over strata. Chill strata, covered with plastic wrap, at least 8 hours (for bread to absorb custard).

CHEESE STRATA
This is an easy breakfast dish-great to make ahead for rushed mornings as it can be refrigerated overnight. Almost any chopped vegetable or meat can be added; just add before the cheese layer. If you're feeding a crowd, just double and use a 9x13 pan. This is adapted from a Mennonite cookbook, More-with-Less.

SARASOTA'S SPINACH AND SHRIMP STRATA
Another recipe out of the archives - no idea where this came from. I often found recipes in the paper, magazines, small book and changed them up and then wrote them on my index card and filed them. Well where ever it originated ... it is a great simple recipe. It is so easy, the only down fall is it has to set over night or all day before baking and then it takes almost a hour to bake. But it is well worth it. I made this a few weeks ago for a friend. Put it together in the am, dropped it off and told her to bake at 350 for 40 -50 minutes. She absolutely loved it and has made it again already.

- Base -- Spray a 13x9" pan with Pam or a non stick spray. Arrange the slices of bread on the bottom, and make sure to cover the entire bottom. Cut smaller pieces to fill in the empty spaces.
- Strata -- Spread the pesto over the bread making sure to coat everything, and then cover with 1/2 the cheese, 1 cup. Layer with the shrimp, spinach, red peppers, onion and finish with the remaining 1 cup of the cheese.
- Egg -- Mix the eggs, milk, salt and pepper well and pour over the casserole. Cover with plastic wrap or foil and refrigerate over night. Eight (8) hours is required, but don't let it cover over 12 hours.
- Bake -- Remove from the refrigerator and let it warm up a bit so It isn't ice cold. Cover with foil if not already and bake in a 350 degree oven, middle rack for 30 minutes. Remove and arrange the tomatoes slices on the casserole and continue to bake covered for another 15-20 minutes (45 min) is the right time for my oven, but just check by inserting a knife in the center. When it comes out clean it is done.
- If you want - you can put the dish under the broiler for just 3-4 minutes to broil the tomatoes, but I don't mind if they aren't browned. It is a nice texture to me to have the fresh tomatoes on the top.
- Serve -- Make sure to let the strata set 15 minutes before serving. ENJOY!
- Prep time includes the overnight rest.

MDM prepared this often from the Alexandria, VA TWIG cookbook, "A Heritage of Good Tastes"; The recipe was contributed by Marjorie Cook. Good with many main dish meats, such as beef, pork, etc. Preparation time includes refrigerator setting time.

- Lightly grease casserole.
- Cut 3 slices of bread into 3 strips each. Fit into casserole. Sprinkle with salt, pepper and 1/3 of the onion.
- Add 1/3 of the cheese. Repeat layers two more times.
- Beat eggs, add milk, Worcestershire sauce and mustard. Pour over bread mixture.
- Allow to set in the refrigerator overnight.
- Take out 2 hours before baking.
- Preheat oven to 325 degrees Fahrenheit, then bake for 50 minutes.
