Bizcochos Borrachos (Drunken Sponge Cakes) image

This is a light sponge cake drizzled with brandy, lemon and cinnamon. Perfect for snacks or even as a breakfast cake.

4 eggs
1/2 cup granulated sugar
3/4 cup flour
1 teaspoon baking powder
1 teaspoon ground cinnamon, for decoration
1/3 cup granulated sugar
8 ounces water
1 1/2 tablespoons honey
1 1/2 ounces brandy or 1 1/2 ounces rum
1 cinnamon stick
peel from 1/2 lemon

Steps:

  • Preheat the oven to 350 degrees. Generously grease a 8-inch square cake pan with vegetable shortening, then flour it.
  • Separate the yolks from the egg whites.
  • Then, beat the egg yolks in a bowl with the sugar until it forms a creamy mixture.
  • In another mixing bowl, beat the egg whites until they are stiff enough to form a point. Fold in the yolk mixture with a spatula, smoothly and carefully.
  • Fold in the baking powder and flour gradually, a bit at a time.
  • Pour in the batter and bake for 20 minutes, or until it turns golden. Check doneness by inserting a toothpick into the center. If it is clean when pulled out, cake is done.
  • While the cake is baking, make the syrup. In a small sauce pan, pour water and sugar, cinnamon, honey and lemon peel. Bring mixture to a boil, stirring occasionally. Allow to boil 1 minute. Remove from heat and add the brandy and allow the syrup to cool.
  • After the cake has cooled, carefully cut into 9 pieces and place them on a serving plate. Drizzle the pieces of cake with the brandy sauce and then dust the top with cinnamon.

1/4 cup (4 tablespoons) unsalted butter, plus more for greasing
5 ounces bittersweet (non-sweetened) or semisweet chocolate, chopped
1 tablespoon mescal
2 large eggs
2 large egg yolks
5 tablespoons sugar
1 teaspoon pomegranate molasses
1 1/2 teaspoons canela or Mexican cinnamon
Large pinch salt
1 tablespoon all-purpose flour
1/2 cup chilled whipping cream

Steps:

  • Preheat the oven to 400 degrees F.
  • Generously butter four 3/4-cup souffle dishes or custard cups. Arrange on a baking sheet.
  • Stir the chocolate and butter in heavy small saucepan over low heat until smooth. Remove from the heat; stir in the mescal. Cool 10 minutes, stirring occasionally.
  • Using an electric mixer, beat the eggs, yolks, 4 tablespoons sugar, molasses, 1 teaspoon canela powder and salt in medium bowl until very thick ribbons fall when beaters are lifted, about 6 minutes. Sift the flour over the batter; fold in the flour. Fold in the chocolate mixture. Divide the batter among the prepared dishes, filling completely. (Can be made 1 day ahead. Cover loosely; refrigerate. Let stand at room temperature 30 minutes before baking.)
  • Bake the cakes until the tops are puffed and dry and a tester inserted into the center comes out with moist batter still attached, about 15 minutes. Cool the cakes 5 minutes.
  • Beat the cream, the remaining 1 tablespoon sugar and the remaining 1/2 teaspoon canela powder in small bowl until firm peaks form. Top the cakes with the whipped cream and serve warm.

I found this recipe on the Internet and wanted to post it for ZWT5 This recipe has been adapted from the cookbook Elena's Secrets of Mexican Cooking by Elena Zelayeta, and is courtesy of Cynthia Detterick-Pineda of Andrews, TX. There was just something about this torte that made it sound very interesting, perhaps the name? But as the name implies there is a large amount of alcohol in the sauce! Borracho literally means "drunk" and refers, in the culinary sense, to sauces made with alcohol.

4 eggs, separated
1/2 cup sugar, divided
1 cup all-purpose flour
1 teaspoon baking powder
1/4 teaspoon salt
1/3 cup butter, melted and cooled
1 teaspoon pure vanilla extract
chopped nuts (or grated coconut) (optional)
2 cups sugar
2 cups water
1/2 cup brandy, rum (or sherry)

Steps:

  • Preheat oven to 375 degrees F. Lightly grease and flour a 2-quart casserole dish.
  • In a large bowl, beat egg whites until frothy; gradually add 4 tablespoons of the sugar and continue beating on high speed until they form peaks with tips that stand straight when the beaters are lifted.
  • In a separate bowl, beat the egg yolks with the remaining sugar until they are a creamy lemon color. Fold the yolk mixture into the beaten whites until just blended.
  • In a medium bowl, sift together flour, baking powder, and salt. Gently fold in the flour mixture into the egg mixture. Gently drizzle in the melted butter and vanilla. Pour into prepared baking dish and bake for approximately 30 minutes or until lightly browned on top; remove from oven.
  • While the cake is baking, prepare the rum Sauce.
  • When the cake is done baking, make holes all over the top of the warm torte with an ice pick or skewer and pour the Rum Sauce over it. Before the Rum Sauce is all absorbed into the cake, sprinkle generously with chopped nuts or grated coconut.
  • For the Rum Sauce:.
  • In a large saucepan over medium-high heat, boil the water and sugar until the candy or digital thermometer reaches 235 degrees F. or until it forms a soft ball when a little of the mixture is dropped in cold water. Remove from heat stir in whatever liquor you are using; pour over the top of the warm cake.

Posted this on request for "cognac-marinated turkey". Total cooking time usually ranges from 2 to 3 hours depending on the size of the turkey. Prep time is a guess, and does not include marinating time. Serving size is also an estimation.

1 small turkey
salt and pepper
10 -15 cloves garlic
6 tablespoons butter
2 tablespoons cognac
3 cups chicken broth
1 cup red wine

Steps:

  • Defrost turkey.
  • Remove giblets and wash with cold water inside and out.
  • Pat dry.
  • Sprinkle with salt, pepper and coriander inside and out.
  • Tie the wings and drumsticks.
  • (Ordinary sewing thread will work just fine) Peel the garlic cloves and crush.
  • Mix the crushed garlic with the butter and the cognac.
  • Rub this paste all over the turkey and return the turkey to the refrigerator to marinate for an hour.
  • Preheat oven to 350 degrees.
  • Baste the turkey with the chicken broth and wine.
  • Do it gently so you don’t rub off the garlic paste.
  • Cover the turkey with aluminum foil and roast for about 90 minutes, basting frequently with wine and chicken broth.
  • If your oven isn’t very accurate turn the pan a few times during baking.
  • After about 90 minutes of cooking remove the aluminum foil cover.
  • Sprinkle with paprika all over and raise the oven temperature to 500 degrees.
  • Stop basting.
  • This will allow the turkey skin to brown and crisp.
  • Continue cooking until the skin is crisp and not watery or greasy.
  • Flip the turkey so it crisps on the other side as well.
  • If you are butchering your own turkey feed it two glasses of wine or cognac the day before.
  • It really does make a difference in the cooked flavor.

This simple drunken apple cake recipe, whose Germanic origin is reflected in its name, is out of the ordinary. When it is cut, you see three layers of cake enclosing two bands of creamy apple mixture, which can be gooey or custard-like in places, depending on how the batter and apples have been distributed. It makes a wonderful pudding, served while still warm from the oven, although it is equally delicious when it cools and sets'

1 1/2 lbs tart apples (about 5 medium-sized apples)
1/3 cup granulated sugar tblsp sugar
1 tablespoon sugar
1/2 cup heavy cream
2 cups all-purpose flour, plus more for the pan
2 1/2 teaspoons baking powder
1/4 teaspoon salt
11 tablespoons unsalted butter, at room temperature, plus more for the pan

Steps:

  • Make the apple filling: Peel and core the apples. Cut each apple into 8 wedges and then cut each wedge lengthwise into slender slices.
  • In a bowl, combine the sugar and cream. Add the apples. Set aside until needed.
  • Make the batter: Preheat the oven to 325°F (160°C). Butter the pan and dust with flour.
  • Sift the flour with the baking powder and salt and set aside.
  • Beat the butter and sugar in a large bowl, either with an electric mixer or by hand, until smooth and creamy. Add the lightly beaten eggs to the butter mixture in 4 batches, scraping down the sides of the bowl and beating well after each addition. Gently fold in the flour in 4 batches, adding the rum and water with the third batch. Stop mixing as soon as the last batch of flour is incorporated.
  • Divide the batter into 3 portions. You can eyeball it, but each portion should be about 1 cup or so. Scrape 1/3 of the batter into the prepared pan and smooth the surface. Spread half the apple mixture evenly on top, leaving a 1/2-inch plain border around the edge and smoothing the slices so they're neatly level. Scrape another 1/3 of the batter on top of the apples and smooth the surface, spreading the batter all the way to the edge of the pan. Spread the remaining apple mixture evenly on top of the batter, and then top the apples with the third and final batch of batter, smoothing it all the way to the edge of the pan, which will be quite full.
  • Bake the cake for 1 1/2 hours, or until a skewer inserted into the center of the cake comes out clean. Let cool in the pan for 15 to 20 minutes, then release the sides of the pan and transfer the cake to a wire rack to cool completely. Your drunken apple cake will keep at room temperature for up to 4 days.

Bake a classic Mexican tres leches cake, sometimes called milk cake, for an afternoon treat or coffee morning - it gets its name from the three types of milk used

flavourless oil , for the tin
4 eggs , separated
200g caster sugar
1 tsp vanilla extract
200g plain flour
1 tsp baking powder
100ml milk
410g can evaporated milk
200ml sweetened condensed milk
300ml double cream
2 tbsp icing sugar
pinch cinnamon

Steps:

  • Heat oven to 180C/160C fan/gas 4. Lightly oil and line the base and sides of a 20cm square cake tin.
  • Put the egg whites in a large bowl with a pinch of salt. Beat with an electric hand whisk until foamy, about 3 mins. Keep mixing while you add 150g of the sugar, a spoonful at a time, until thick and glossy.
  • In another bowl, mix the egg yolks, remaining sugar and vanilla (no need to clean the beaters first) for 2 mins, or until pale and foamy. Add the flour, baking powder and milk to the egg yolks, and use a spatula to fold everything together.
  • Add a large spoonful of egg white to the cake mix, beat together to loosen the mixture, then gently fold through the remaining egg whites with a large metal spoon (being careful not to over-stir so you don't knock out too much air), until you have a smooth batter.
  • Pour into the tin, smooth the top and bake for 40-45 mins until a skewer inserted into the centre comes out clean. Mix together the evaporated milk, condensed milk and 3 tbsp of the cream.
  • Leave the cake to cool for 10 mins in the tin, then ease a knife around the sides. Poke holes over the surface with a skewer, then pour over half the milk mixture. After 5 mins or so, most of it should have soaked into the cake. Leave for another 5 mins, then transfer to a plate and pour over some of the remaining milk until it starts to leak a little. (Any leftover milk that won't soak into the cake can be served on the side.) Leave to cool.
  • Whip the remaining cream and icing sugar together until holding soft peaks. Spread the cream over the cake and sprinkle with a little cinnamon. Can be made and chilled a day ahead. Serve in squares with any remaining soaking milk.

  • In a medium saucepan, combine all of the ingredients and bring to a boil. Reduce heat and bring to a slow boil for about 15-20 minutes or until syrup thickens. Set aside. (This can be made while the cake is cooking to save some time.).
  • For cake:.
  • Heat oven to 350 degrees.
  • In a small bowl, combine sifted flour, baking powder, and salt. Set aside.
  • In a medium bowl, beat egg whites and sugar until fluffy.
  • In a large bowl, beat the egg yolks. Add water and vanilla. Fold in egg whites and sugar. Slowly add the dry ingredients and mix well.
  • Pour batter into a greased and floured 9-inch round cake pan. Bake for about 45 minutes.
  • Remove cake from pan and place on a round serving dish.
  • Pour sherry or port wine and previously prepared syrup over the top. Sprinkle with cinnamon.
  • Serve with Cuban coffee or espresso.
