All of the flavors you love in street corn and elotes without having to fire up the grill. Got a craving in the middle of the winter when it is too cold to grill? No problem!

Ingredients

¼ cup mayonnaise
2 teaspoons crumbled cotija cheese
1 teaspoon lime juice
¼ teaspoon chili powder
2 ears corn, shucked and halved
4 sprigs fresh cilantro, or to taste

Steps:

Preheat an air fryer to 400 degrees F (200 degrees C).
Mix mayonnaise, cotija cheese, lime juice, and chili powder in a shallow dish.
Roll each piece of corn in the mayonnaise mixture until all sides are covered.
Place all 4 pieces of the corn in the basket of the air fryer and cook for 8 minutes. Garnish with cilantro.

My Mexican friend gave me this recipe for corn on the cob. Street vendors there sell their corn made this way. Cotija cheese can be found in most grocery stores.

Ingredients

4 ears corn, shucked
¼ cup melted butter
¼ cup mayonnaise
½ cup grated cotija cheese
4 wedges lime

Steps:

Preheat an outdoor grill for medium-high heat.
Grill corn until hot and lightly charred all over, 7 to 10 minutes, depending on the temperature of the grill. Roll the ears in melted butter, then spread evenly with mayonnaise. Sprinkle with cotija cheese and serve with a lime wedge.

Cut the corn to the size of your air fryer basket or rack (some might need to be cut in half). Coat the corn with melted butter and season with salt and pepper.
Air Fry at 370°F (190°C) for about 12-16 minutes, turning the corn half way through cooking. Cook until kernels are tender and lightly browned. (Cooking time will depend on size of corn, how full air fryer basket is, & different models/sizes of air fryers).
While the corn air frys, make the cheese mixture. In a bowl combine sour cream, mayonnaise, cheese, smoked paprika, chili powder, garlic powder, cilantro, salt and pepper in a large bowl. Mix until evenly combined.
After corn is cooked, spread the cheese mixture over the corn. Sprinkle with extra crumbled cheese, paprika or chili powder, green onions and/or chopped cilantro. Serve with lime wedges.
