1/4 cup butter
1 large onion, halved, sliced
2 cloves garlic, minced
2 tsp. ground cumin
2 tsp. ancho chile pepper powder
1 qt. (4 cups) water
2 pkg. (6 oz. each) STOVE TOP Stuffing Mix for Chicken
1 frozen turkey (14 lb.) thawed
1/3 cup KRAFT Zesty Italian Dressing
1/2 cup honey, divided
1/2 cup fresh lime juice, divided

Steps:

  • Melt butter in large skillet on medium heat. Add onions and garlic; cook and stir 5 min. Add cumin and ancho powder; cook 1 min., stirring occasionally. Stir in 3 cups water; bring to boil. Add stuffing mixes; mix well. Cover; remove from heat. Let stand 5 min.; fluff with fork. Cool 15 min.
  • Meanwhile, remove and discard neck and giblets from turkey cavities. Free legs from tucked position, but do not cut the band of skin. Place turkey, breast side up, in roasting pan.
  • Heat oven to 325ºF. Stuff turkey with stuffing mixture; turn wings back to hold neck skin in place. Cover breast loosely with foil to prevent overbrowning.
  • Bake 3 hours, basting occasionally with pan juices. Meanwhile, combine dressing and 3 Tbsp. each honey and lime juice.
  • Uncover turkey; continue baking 45 min. to 1 hour or until done (165ºF), brushing with dressing mixture for the last 15 min. Remove turkey from oven; let stand 15 min. before carving. Meanwhile, remove excess fat from turkey drippings and pour into saucepan; add remaining lime juice and honey. Bring to boil, stirring frequently.
  • Serve turkey with warm sauce.

Cantonese people have been expertly roasting poultry of all kinds for hundreds of years, so why not add a Thanksgiving Honey Glazed Cantonese Turkey to the list? If you're looking to mix things up, prepare this turkey with plenty of Chinese flavors and a honey glaze.

13-15 pound turkey ((fully thawed and rinsed clean))
¼ cup ground bean sauce
3 tablespoons Hoisin sauce
4 cloves garlic ((minced))
1 tablespoon finely minced shallot
2 teaspoons minced fresh ginger
1½ tablespoons salt
3 tablespoons Shaoxing wine
1 teaspoon five spice powder
3-4 pieces dried Chinese tangerine peel
3 pounds Yukon Gold potatoes ((peeled and cut into 1½-inch pieces))
1 whole leek ((about 8 oz/225g, chopped and thoroughly washed to remove sand and grit))
⅓ cup hot water
2 teaspoons red Zhejiang vinegar
3 tablespoons honey

Steps:

  • First, thaw your turkey. Make sure you provide plenty of time for this step. It's best to let your turkey thaw overnight in the kitchen sink a couple of days before Thanksgiving (if it's frozen solid) or the day before you're going to cook it (preferably the morning, as it will still need to marinate). When the turkey is completely thawed, remove it from the wrapper, and if the inside of the turkey is still frozen, run some warm water into the cavity and let it sit for a few more hours to thaw. If you're in a hurry, you can soak the turkey in lukewarm water to aid the thawing process.
  • This is the single most important step to ensuring your turkey cooks evenly. Be sure to also remove the giblet package in the cavity and thoroughly rinse the cavity and outside of the turkey. Next, drain all of the water from the cavity, and pat the whole turkey dry with paper towels. You can also let it drip dry on a rack.
  • Make the marinade by mixing together ¼ cup ground bean sauce, 3 tablespoons hoisin sauce, 4 teaspoons minced garlic, 1 tablespoon finely minced shallot, 2 teaspoons minced fresh ginger, 1½ tablespoons salt, 3 tablespoons Shaoxing wine, and 1 teaspoon five spice powder.
  • Rub the turkey down inside and out with the marinade, ensuring all surfaces are thoroughly coated. Work the marinade under the skin where possible. If you think you have too much marinade, use the surplus amount in the cavity. Finish the turkey by placing the Chinese dried tangerine peels into the cavity.
  • Place the turkey in a roasting pan, cover it with plastic wrap, and refrigerate overnight. The next day, take the turkey out 3 hours prior to roasting to bring it up to room temperature.
  • When you're ready to cook the turkey, line the roasting pan with the 3 pounds of chopped potatoes and the chopped leek. Place the turkey on top of the vegetables, breast side down. (We're going to flip it later).
  • Preheat the oven to 425 degrees F, and arrange an oven rack in the lower third of the oven. While that's happening, prepare the glaze. Mix together ⅓ cup hot water, 2 teaspoons red Zhejiang vinegar, and 3 tablespoons of honey. Set aside.
  • Roast your Cantonese turkey for 30 minutes. Then use a basting brush to glaze the turkey with your honey mixture and rotate the pan 180 degrees. Roast for another 30 minutes, and give the turkey another basting with the glaze.
  • Remove the turkey from the oven, and lower the temperature to 325 degrees F. Using a clean kitchen towel and a sturdy roasting fork, flip the turkey breast-side up. Carefully brush off any vegetables that may be stuck to the turkey, taking care not to damage the skin on the breast.
  • Roast the turkey at the lower temperature for another hour and 5 minutes (for a 13 pound turkey) to an hour and a half (for a 15 pound turkey). Glaze the turkey every 15 minutes, and rotate the pan halfway through the second block of roasting time. If the turkey is browning too much, tent it lightly with aluminum foil.
  • The surest way to check if your turkey is cooked through is to use a meat thermometer. The internal temperature of the thigh should register 165 degrees and the juices should run clear (not pink).
  • When your turkey is done, transfer it to a serving plate, cover it lightly with aluminum foil, and let it rest for 20 minutes. Use a slotted spoon to scoop the potatoes and leeks out of the pan. Serve them as-is, or make them into a delicious side of roasted mashed potatoes (just add milk, butter, and salt to taste). Lastly, pour the pan drippings through a fine mesh strainer into a fat separator to make the gravy.

GLAZE:
1/2 cup honey
1/2 cup Dijon mustard
1-1/2 teaspoons dried rosemary, crushed

1/2 cup butter, cubed

Steps:

  • Preheat oven to 325°. Place turkey on a rack in a shallow roasting pan, breast side up. Tuck wings under turkey; tie drumsticks together. Bake for 2 hours., In a small bowl, mix glaze ingredients; brush over turkey. Bake 1-3/4 to 2-1/4 hours longer or until a thermometer inserted in thickest part of thigh reads 170°-175°. Baste occasionally with pan drippings. (Cover loosely with foil if turkey browns too quickly.), For stuffing, in a Dutch oven, heat butter over medium-high heat. Add onion and celery; cook and stir until tender. Add stuffing cubes and seasonings; toss to combine. Stir in enough boiling water to reach desired moistness; transfer to a greased 13x9-in. baking dish. Bake, covered, for 1 hour. Uncover and bake until lightly browned, 10-15 minutes longer., Remove turkey from oven; cover loosely with foil and let stand 15 minutes before carving. 1/4 cup lemon juice
1/4 cup lime juice
1/4 cup honey

GRAVY:

Steps:

  • Preheat oven to 325°. In a small bowl, whisk the first six ingredients until blended. Reserve half of the mixture for brushing over turkey; refrigerate until needed., Place turkey on a rack in a shallow roasting pan, breast side up. Tuck wings under turkey; tie drumsticks together. With fingers, carefully loosen skin from turkey breast; drizzle remaining butter mixture under the skin. Secure skin to underside of breasts with toothpicks. 2 teaspoons rubbed sage
2 teaspoons salt
1 pinch dried thyme
1 (16 pound) whole turkey, neck and giblets removed
¼ cup butter
⅓ cup orange juice
⅓ cup orange marmalade
1 ½ teaspoons honey
1 orange, peeled, sectioned, and cut into bite-size pieces

Steps:

  • Preheat an oven to 325 degrees F (165 degrees C).
  • Combine sage, salt, and thyme in a small bowl. Rub half of the sage mixture all over the turkey, then place the turkey in a large roasting pan. Set remaining sage mixture aside. Bring butter, orange juice, orange marmalade, honey, and orange sections to a boil in a saucepan over medium-high heat. Reduce heat and simmer uncovered until thickened, stirring occasionally, 15 to 20 minutes. Stir in the remaining sage mixture. Brush the turkey with the glaze.
  • Bake the turkey in the preheated oven for 5 hours and 30 minutes, basting every 30 minutes. An instant-read thermometer inserted into the thickest part of the thigh, near the bone should read 180 degrees F (82 degrees C). Remove the turkey from the oven, cover with a doubled sheet of aluminum foil, and allow to rest in a warm area 10 to 15 minutes before slicing.

1 chicken
1 onion, quartered
3 garlic cloves, peeled
1 lime, quartered
1/2 lime, juice of
1 teaspoon paprika
2 tablespoons honey
1 tablespoon olive oil
salt and pepper, to taste

Steps:

  • Preheat your oven to 200°C/400°F/Gas 6.
  • Rinse your chicken well, inside and out and dry thoroughly with a paper towel.
  • Stuff the cavity with the quartered lime, onion and the garlic.
  • Rub the olive oil all over the chicken and season with salt and pepper.
  • Place the chicken in a roasting tin and place in the middle of your preheated oven.
  • Roasting time depends on size of chicken.
  • Roast for 20 mins per lb plus an extra 20 minutes for the whole chicken (example: 4 lb chicken: 4x20+20=1hr40mins).
  • Using the juices from the roasting tin, baste the chicken every 30 mins to stop it from drying out.
  • While the chicken is roasting mix the lime juice, honey and parika in a small bowl.
  • 30 mins before your chicken will be done take it out of the oven and brush with the lime& honey glaze.
  • Return to the oven to finish roasting, at the end of the roasting time make sure all juices run clear by inserting a skewer into the thickest part of the thigh.

3/4 cup (1 1/2 sticks) unsalted butter
1/2 cup honey
3 tablespoons (packed) grated orange peel
3 tablespoons (packed) grated lime peel (from about 12 limes)
2 tablespoons chopped fresh thyme
4 teaspoons chopped canned chipotle chilies*
1 tablespoon ground cumin
1 teaspoon salt
Turkey
2 tablespoons (1/4 stick) butter
4 1/2 cups chopped onions
1 22- to 24-pound turkey; neck, gizzard, and heart reserved
2 cups chopped peeled carrots
2 cups chopped celery with leaves
1 1/2 cups chopped plum tomatoes
9 cups (about) canned low-salt chicken broth
Gravy
1 cup (about) canned low-salt chicken broth
1/2 cup all purpose flour

Steps:

  • For glaze:
  • Melt butter in heavy small saucepan over medium heat. Remove from heat. Stir in next 7 ingredients. Freeze until mixture begins to firm up but is still spreadable, about 30 minutes. Set aside 1/2 cup citrus glaze for gravy.
  • For turkey:
  • Melt butter in large nonstick skillet over medium-high heat. Add onions and reserved turkey parts and sauté until onions are very deep brown, about 22 minutes. Add carrots, celery, and tomatoes to skillet and toss to blend. (Glaze and vegetable mixture can be made 1 day ahead. Cover separately and chill. Cover turkey and chill.)
  • Set rack in bottom third of oven and preheat to 400°F. Place small rack in center of large roasting pan. Sprinkle vegetable mixture with turkey parts around rack. Rinse turkey inside and out; pat dry. Place turkey on rack in roasting pan. Starting at neck end, carefully slide hand between skin and breast meat to loosen skin. Rub 1/2 cup citrus glaze over breast meat under skin. If stuffing turkey, spoon stuffing loosely into neck and main cavities. Tuck wing tips under turkey; tie legs together loosely to hold shape. Brush 1/3 cup glaze over top and sides of turkey (not bottom); reserve any remaining glaze. Sprinkle turkey generously with salt and pepper. Cover turkey (not pan) loosely with foil. Roast 30 minutes. Reduce oven temperature to 350°F; add 1 cup broth to pan. Press foil snugly around turkey (not pan). Roast 1 hour 15 minutes. Add 1 cup broth to pan. Roast turkey until thermometer inserted into thickest part of thigh registers 175°F, adding 1 cup broth every 30 minutes, lifting foil to baste with pan juices and removing foil during last 15 minutes to brown turkey, about 3 hours 30 minutes longer if unstuffed or 4 hours 15 minutes if stuffed. Transfer turkey to platter. Tent with foil; let stand 30 minutes (internal temperature of turkey will increase by 5 to 10 degrees). Reserve pan juices.
  • For gravy:
  • Strain pan juices into 8-cup measuring cup, pressing on solids to extract some pulp and as much liquid as possible; discard solids in strainer. Spoon fat from top of juices; discard fat. Add enough chicken broth to pan juices in cup to measure 6 cups.
  • Stir reserved 1/2 cup citrus glaze in heavy large saucepan over medium heat until melted. Gradually add flour; whisk 1 minute. Gradually whisk in pan juices. Bring to boil, whisking until smooth. Reduce heat to medium; boil until sauce thickens slightly, about 5 minutes. Season gravy with salt and pepper. Brush any remaining glaze over turkey. Serve turkey with gravy.
  • Chipotle chilies canned in a spicy tomato sauce, sometimes called adobo, are available at Latin American markets, specialty foods stores, and some supermarkets.
