STIR-FRIED SESAME SHRIMP AND SPINACH

Stir-Fried Sesame Shrimp and Spinach image

The classic Chinese way to clean shrimp and ensure a succulent flavor and crisp texture, says Grace Young, author of "Stir-Frying to the Sky's Edge," is to use a combination of salt and water, either dousing the shrimp in two rinses of heavily salted water or rubbing the shrimp with salt, then rinsing with water. If you don't eat salt, then just rinse the shrimp with plain water. I recommend bunch spinach for this; you don't have to stem it, just cut away the base of the leaves and rinse well.

Provided by Martha Rose Shulman

Categories     dinner, weekday, main course

Time 15m

Yield 3 to 4 servings

Number Of Ingredients 10

1 pound large shrimp, peeled and deveined
Salt to taste
1/8 teaspoon sugar
2 tablespoons canola oil or light sesame oil
1 tablespoon minced ginger
1 tablespoon minced garlic
1/4 to 1/2 teaspoon crumbled dried red chili
2 tablespoons sesame seeds
1 generous bunch spinach (about 1 pound), stems trimmed at the end, rinsed in 2 changes water
2 teaspoons dark sesame oil

Steps:

  • Place the shrimp in a large colander and rinse with water. Sprinkle generously with salt and toss together for about a minute. Rinse with water and repeat. After rinsing one more time, drain on paper towels. Pat dry with more paper towels.
  • Combine 1/4 to 1/2 teaspoon salt (to taste) and the sugar in a small bowl and place close to your wok.
  • Heat a 14-inch flat-bottomed wok over high heat until a drop of water evaporates within a second or two when added to the pan. Swirl in 1 tablespoon of the oil by adding it to the sides of the pan and swirling the pan, then add the garlic, ginger and chili flakes and stir-fry for no more than 10 seconds. Push to the sides of the pan and add the shrimp in one layer. Let cook undisturbed for 1 minute, then add the remaining oil and stir-fry for 1 minute.
  • Add the sesame seeds and spinach and stir-fry for 1 minute, until it has begun to wilt but the wilting is still uneven. Add the salt and sugar, sprinkling it evenly over the spinach, and continue to stir-fry until the spinach has wilted but is still bright and the shrimp are cooked through and bright pink, about 2 more minutes. Remove from the heat, drizzle on the sesame oil, toss together and serve, with rice, noodles or other grains.

EASY FRIED SPINACH

Easy Fried Spinach image

This is a dish I stumbled across while I was in China and tried to emulate. Of all my various original recipes, this is the one of my families favorites. It is simple, requires few ingredients and is easy and fast.

Provided by roteir

Categories     Side Dish     Vegetables     Greens

Time 15m

Yield 6

Number Of Ingredients 4

¼ cup canola oil
¼ cup unsalted butter
2 (10 ounce) bags fresh spinach leaves
8 cloves garlic, thinly sliced

Steps:

  • Melt the butter with the canola oil in a large skillet over medium heat until it stops bubbling. This allows the water from the butter to evaporate. Add the garlic; cook and stir for about 2 minutes, until it is just beginning to brown. Put in the spinach leaves and cook for about 5 minutes while stirring, until the leaves are dark and are about 1/4 of their original size.

Thai Stir-Fried Spinach With Garlic and Peanuts image

A lovely Thai stir-fried spinach in a garlicky sauce topped with peanuts or cashews that's bursting with flavor. Simple to make and so scrumptious.

Provided by Darlene Schmidt

Categories     Side Dish     Dinner     Lunch

Time 16m

Yield 4

Number Of Ingredients 12

1 large bunch fresh spinach
4 cloves garlic (finely chopped)
Optional: 1 red chili (sliced, or 1/3 to 3/4 teaspoon dried crushed chili flakes)
1/4 cup chicken or vegetable stock
2 tablespoon oyster-flavored sauce (or vegetarian oyster sauce/stir-fry sauce)
1 tablespoon fish sauce (or 1 1/2 tablespoons soy sauce if vegetarian)
1 tablespoon sherry (cooking sherry works well too)
1 teaspoon brown sugar
1 teaspoon sesame oil
Optional: 1/2 red pepper (sliced thinly)
1/4 to 1/3 cup roughly chopped peanuts or cashews (for topping)
1 to 2 tablespoons vegetable oil

Steps:

  • Gather the ingredients.
  • In a cup, stir together stock, oyster sauce, fish sauce, sherry, and brown sugar. Set aside. Rinse spinach and drain.
  • Heat a wok or large frying pan over medium-high heat. Add 1 to 2 tablespoons vegetable oil and swirl around, then add garlic and chili (if using). Stir-fry 1 minute to release the fragrance.
  • Add the red pepper (if using) and stir-fry 1 minute. Add the spinach and stir-fry briefly, until the spinach leaves are lightly covered in the oil and garlic/chile (about 30 seconds). Add the stir-fry sauce and stir-fry until spinach has cooked down to a nice dark green (stems should still be on the crisp side), about 2 to 4 minutes.
  • Remove from heat and taste-test, adding more fish sauce instead of salt. (If too salty or sweet, add a squeeze of lime or lemon juice. More chile can be added for increased spiciness.)
  • To serve, scoop or slide spinach onto a serving plate or bowl. Top with the remaining liquid at the bottom of your wok/pan. Drizzle over the sesame oil and top with chopped nuts.
  • Serve and enjoy.

  • Chop the spinach into pieces: Remove any thick, tough stems. Chop or tear the spinach leaves into roughly 2-inch pieces. Baby spinach can be stir-fried as is.
  • Heat the wok: Set your wok or skillet over high heat until a drop of water evaporates within a second or two of contact.
  • Add the oil: Pour the oil down the side of the pan. Swirl to coat the bottom and lower sides of the wok evenly.

  • Cook the onion and cauliflower rice: In a large skillet over medium heat, add 2 tablespoons of the oil. When the oil shimmers, add the chopped onion and cook, stirring, for 1 to 2 minutes, or until the onion softens. Add the cauliflower rice and 1/4 cup water to the skillet. Cook, stirring often, for 5 minutes, or until the cauliflower loses its raw taste. Stir in 2 tablespoons of the lemon juice, salt, pepper, and lemon zest.
  • Add the spinach and cherry tomatoes: Stir the spinach into the cauliflower and cook for 3 minutes, or until the spinach barely wilts. Stir in the tomatoes. Taste and add more salt and pepper, if you like. Remove from the heat and set aside while you cook the shrimp.
  • Cook the shrimp: In a nonstick skillet large enough to accommodate the shrimp in one layer, add the remaining 2 tablespoons of oil and the garlic. Set the skillet over medium heat and cook for about 30 seconds, or just until the garlic sizzles. (Start by heating the garlic and oil at the same time in a cold pan to prevent the garlic from burning.) Add the shrimp in one layer. Cook for 1 to 2 minutes on each side, or until the shrimp is opaque in the center. (Exact cooking time depends on the size of the shrimp.) Remove the pan from the heat and sprinkle with the paprika. Stir in the remaining 2 tablespoons of the lemon juice and the parsley. Turn the shrimp to coat it well in the lemony, garlicky oil.
  • Assemble the bowls: In two shallow bowls, divide the cauliflower rice. Top each with half the shrimp and garnish with slices of avocado. Serve warm or at room temperature.
