This is easy to make Mexican Flan recipe, it is made using whole eggs, condensed and evaporated milk. Covered with a light sugar syrup. It can also be made using cream cheese or coconut milk, for a different taste and texture.

1 can of condensed milk*
1 can of evaporated milk**
6 eggs
1 8oz pkg. of cream cheese (optional, see note)***
1 teaspoon of vanilla
2 tablespoons of water
1 cup of sugar

Steps:

  • In a medium-size saucepan place the sugar and water, bring to a boil in at high heat until sugar dissolves, when sugar dissolves reduce heat and keep boiling until the syrup gets a light brown-caramel color. This will take about 10 minutes. Pour the caramel in your oven proof pan, swirling the caramel to cover the bottom of the pan evenly. Let cool.
  • Place the rest of the ingredients in a blender and process until you have a smooth mixture.
  • Pour mixture slowly into prepared pan and cover with aluminum foil. For the hot bath. Place the pan inside a large baking pan. Add warm water to the pan until it reaches about 3/4 inch.
  • Bake in a preheated oven at 325 degrees for about 50 minutes or until flan looks firm as in the picture below. Flan will keep cooking while it cools, so do not let longer in the oven. Let it cool.4. Once the flan has cooled run, a knife between the flan and baking pan.
  • Place a large serving plate on top of the pan and invert with a quick move to avoid any liquid caramel to spill from the pan. Slice, serve and enjoy.

1/4 cup water
1 cup rompope
1/2 cup lite coconut milk
1 pkg. (8 oz.) PHILADELPHIA Neufchatel Cheese, cubed, softened
4 eggs
1 tsp. ground Mexican cinnamon (canela)
1/2 cup toasted BAKER'S ANGEL FLAKE Coconut, divided

Steps:

  • Heat oven to 350°F.
  • Cook 3/4 cup sugar and water in saucepan on medium heat 7 min. or until mixture is golden brown and of syrup-like consistency, gently swirling pan every few minutes. (Do not stir.) Pour into 9-inch round pan; cool slightly.
  • Blend rompope, coconut milk, Neufchatel, eggs, cinnamon and remaining sugar in blender until smooth; stir in 1/4 cup coconut. Pour over syrup in pan. Cover; place in larger shallow pan. Add enough water to larger pan to come halfway up side of 9-inch pan.
  • Bake 50 min. or until knife inserted 1 inch from edge of flan comes out clean. Remove flan from water bath; cool completely. Refrigerate 4 hours. Loosen flan from side of pan; unmold onto plate just before serving. Sprinkle with remaining coconut.

This traditional Mexican rompope recipe is made with only 5 ingredients. It is easy to make and all you need is a little patience stirring the eggnog while it boils. In Mexico, people make it with either rum or brandy, but here rum is more common.

3 pints whole milk
2 ½ cups white sugar
2 cinnamon sticks
15 egg yolks
1 cup rum

Steps:

  • Combine milk, sugar, and cinnamon sticks in a large saucepan and bring to a boil over low heat. Continue to boil mixture, stirring constantly, until milk has reduced by a little more than 1/3, about 20 minutes. Remove from heat and allow to cool.
  • Beat egg yolks with an electric mixer until thick and pale. Mix in a little of the warm milk. Pour egg yolk mixture into the saucepan and bring to a boil over low heat. Stir constantly and scrape bottom and sides of saucepan until mixture is thick enough to coat the back of a spoon, 5 to 7 minutes. Remove from heat, fish out cinnamon sticks, and cool to lukewarm. This recipe was given to me by my mother-in-law, who is from Durango, Mexico. I had to beg her for years to give this recipe to me. Finally, she gave it to me for Christmas. I added orange zest, but the original recipe calls for just pure vanilla. You can use almond extract as well.

1 cup white sugar
1 cup whole milk
1 (14 ounce) can sweetened condensed milk
3 eggs
3 egg yolks
¼ cup freshly squeezed orange juice
1 tablespoon grated orange peel
1 tablespoon vanilla extract
1 tablespoon cornstarch
1 cup heavy cream

Steps:

  • Place sugar in a heavy saucepan over medium-high heat, and cook, stirring constantly, until the sugar melts and turns a golden amber color, about 10 minutes. Watch carefully once syrup begins to change color, because it burns easily. Carefully pour the melted sugar syrup into a flan mold. Let cool.
  • Preheat oven to 350 degrees F (175 degrees C).
  • Pour whole milk, sweetened condensed milk, eggs, egg yolks, orange juice, orange peel, vanilla extract, and cornstarch into a blender, and blend for a minute or so, until the mixture is smooth. Pour in the cream, and pulse several times to incorporate the cream. Pour the mixture over the cooled caramel syrup in the flan mold.
  • Line a roasting pan with a damp kitchen towel. Place the flan mold on the towel, inside roasting pan, and place roasting pan on oven rack. Fill roasting pan with boiling water to reach halfway up the sides of the baking dish.
  • Bake in the preheated oven until the center of the flan is set but still slightly jiggly when moved, 45 minutes to 1 hour. Let the flan cool, then refrigerate for at least 4 hours. To serve, run a sharp paring knife around the inside of the mold to release the flan. Invert a plate on the mold, flip the mold over, and gently remove the mold to unmold the flan and reveal the syrupy caramel topping.

Once you have this Rompope, you'll never want the store bought kind again! It's silky, smooth and super delightful!

4 cups milk (1 liter) (2% milk or your preferred kind. )
1 large cinnamon stick (or 2 smaller ones)
4 cloves
1 teaspoon vanilla extract
1 12 oz can condensed milk or ¾ cup sugar
½ teaspoon baking soda
1 teaspoon cornstarch
6 egg yolks
½ cup brandy or your favorite alcohol.
Whipped cream
Ground cinnamon
Cinnamon stick
Anise star (for extra cuteness!)

Steps:

  • In a large pot, add the milk, vanilla, cinnamon stick and cloves. Heat over medium-high heat while stirring constantly with a wooden spoon or spatula. This is to prevent the milk to sticking to the bottom of the pot.
  • Once the milk is about to start boiling, add the baking soda, cornstarch, and condensed milk or sugar. Keep stirring all ingredients are integrated well. About 3 minutes.
  • Turn the heat down to medium-low and continue to cook and stir often for about 15 minutes. At this point the milk will reduce about ⅓ and that's okay.
  • Remove from heat and set to cool for 40 minutes before we add the yolks.
  • Important Note: Keep stirring or whisking often to prevent the milk to sticking to the bottom of the pot.
  • Reserve one cup of the liquid/milk and set aside to cool.
  • In a large bowl or cup, whip the egg yolks until fluffy and it does not stick to the whisk. Once the 1 cup milk has cooled, slowly add it to the eggs while whisking at the same time. Make sure the milk is not hot otherwise the eggs will cook and not integrate well into the milk.
  • Continue whisking until fluffy.
  • Now add the egg/milk mixture into the rest of the milk and continue to whisk to integrate all ingredients.
  • Return pot to the stove and heat over medium high eat. Whisking constantly. When it starts to boil, reduce heat to low and cook for about 5 minutes.
  • Remove pot from heat, remove the cinnamon and cloves and cool for about 10 minutes.
  • Add the ½ cup of rum, brandy or whatever alcohol you prefer to use and transfer to a pitcher or jars.

It is traditionally flavoured with vanilla, but this one has a little twist with the cinnamon, also popular in Spain. There is quite a bit of cooling time that's not in the prep. time so please read the recipe before you prepare it. Enjoy!

1 cup sugar
1/2 cup water
2 1/4 cups low-fat milk
3/4 cup fat-free sweetened condensed milk
2 cinnamon sticks (3-inch pieces)
1 teaspoon vanilla extract
orange peel, 1 1-inch wide strip
4 large eggs, lightly beaten
1 egg white, lightly beaten

Steps:

  • Arrange rack in the middle of the oven. Preheat oven to 350°F.
  • Combine sugar and water in a medium heavy-bottom saucepan.Bring to a boil over medium-high heat; cook, shaking the pan occasionally, until golden, 12-15 minutes. Immediately pour the caramel into a deep dish pie glass plate; tilt the pan to evenly coat. Set aside until cool and hard, 8-10 minutes.
  • Meanwhile, combine the low fat milk, condensed milk, cinnamon sticks and orange peel in a saucepan. Cook over medium heat, stirring until almost simmering. Remove from heat; let stand 15 minutes. Remove the cinnamon sticks and peel. Beat the eggs and egg whites in a bowl. Whisk in the milk mixture until combined. Pour into the pie plate.
  • Set the flan in a roasting pan and fill with enough water to come halfway up the side of the pie plate. Bake until the custard is set but jiggle in the centre, 30-35 minutes. Transfer to a rack; let cool 1 hour. Refrigerate the flan for at least 3 hours.
  • To unmold, run the tip of a knife around the edge of the flan. Invert a large, flat plate on top of the flan and flip it over. Lift off the pie plate. Cut the flan into wedges and serve.

1 1/2 cups milk
1/2 cup heavy cream or 1/2 cup whipping cream
1 mexican cinnamon sticks (canela) or 1 regular cinnamon stick

Steps:

  • Heat oven to 325°F.
  • Melt 1/2 cup sugar in small saucepan over medium heat, swirling pan occasionally, until sugar becomes amber in color, 10 minutes (do not stir).
  • Pour caramel into the bottom of a 5-cup souffle dish.
  • Bring milk, cream, remaining 3/4 cup sugar and cinnamon stick to boil in small saucepan over medium heat.
  • Remove from heat; cover and let stand 10 minutes.
  • Meanwhile, whisk together eggs, vanilla and salt in large bowl.
  • Strain milk mixture through a sieve into eggs; whisk to combine.
  • Discard cinnamon stick.
  • Strain mixture again into prepared dish.
  • Place dish in a roasting pan, making sure there is at least one inch of space between the edge of the dish and pan.
  • Add enough hot water to roasting pan to come halfway up side of dish.
  • Bake until custard is just set, 60 to 65 minutes (mixture will jiggle slightly, but that's okay).
  • Remove flan from oven.
  • Let flan cool in hot-water bath 15 minutes.
  • Remove dish from water bath and cool completely on wire rack.
  • Cover with plastic wrap and refrigerate overnight.
  • To serve:.
  • Run a knife around edge of baking dish.
  • Place a serving plate slightly larger than dish on top.
  • Invert flan onto plate. Makes 8 servings. Makes a luxurious finale to your favorite Mexican meal!

  • Preheat your oven to 350°F. Toss ¼ teaspoon of the cinnamon with the coconut flakes in a bowl until they are coated and lightly toast in the oven (about 5 minutes). Remove and set aside.
  • In a small saucepan on medium heat slowly melt the sugar stirring constantly with a silicon spatula or a wooden spoon. The sugar should achieve a golden brown caramel color. Once the sugar begins to melt, do not walk away or you might risk burning it. Once caramelized, pour into the flan/pie pan and tilt to cover.
