MEXICAN CHEESEBURGERS
Steps:
- Combine all the ingredients in a large bowl and mix well. Heat a large frying pan and add some oil.
- Fry a small amount of the burger mixture to check the seasoning. Adjust if necessary.
- Form the mince mixture into burgers and fry for +- 4 minutes per side until browned and cooked through. When you've flipped the burger the first time, place a slice of cheese on the patty and allow to melt while the patty is cooking.
- Serve on a fresh bread roll with home-made salsa and guacamole.
- Remove the avocado flesh from the skin and mash with the lemon juice, salt & pepper.
- Set aside until you're ready to use it.
- Combine all the ingredients and mix through.

MEXICAN BURGER
This delicious Mexican burger is a great dinner recipe. Made with the best ground beef, homemade taco seasoning and a variety of other ingredients.

Steps:
- Season the beef with 1½ tbsp taco seasoning. Knead thoroughly and shape into a hamburger patty
- Slice the onions in thin rings. Heat skillet and bake the hamburger in the skillet until well done in 10 minutes. Move to the side and pan fry the streaky bacon in 2 minutes take out of the skillet and set aside
- Put the onion rings in the pan and constantly move it around
- Pre heat the oven to 400℉/200℃ to warm the buns in the oven for 5 minutes
- Fry the eggs
- When the burgers are done slice the buns in half and put 2 tbsp of hummus on the bun. Put the burger on top. Then add half of the onion rings, a slice of pickle, 2 slices of bacon, a tbsp of guacamole and finally the fried egg
- Make the burger complete with a large tablespoon of salsa
- Ready to serve

- Place the ground chuck into a skillet over medium-high heat. Cook, stirring to crumble, until no longer pink. Drain the grease from the skillet and reduce the heat to medium-low. Add the onion and butter and season with garlic pepper. Cook, stirring frequently, until the onion is tender. Lay the slices of cheese on top of the meat. As the cheese starts to melt, fold the meat from the edges onto the cheese, keeping some of the meat under the cheese. Keep folding the meat until the cheese has completely melted and everything is well blended. Spoon onto hamburger buns to serve.

I found this in an old BH&G mag, it's a bit different to the other mexican burgers here. My DH just loved this.

- Combine mince, beans, seasoning mix, onion, egg & breadcrumbs in a bowl.
- Divide the mixture into 6 portions and shape into flat hamburger patties.
- Heat the oil in a frypan & cook the patties over med heat for 3-4 mins each side or until cooked through.
- Place a couple slices of cheese on top of each patty. and continue cooking until the cheese starts to melt.
- Toast & lightly butter the hamburger buns. Top the bases with lettuce leaves, a hamburger patty, and a generous spoon of each the guacamole, salsa & sour cream & finish with the bun lid.
- To make guacamole, combine all ingredients in abowl & mix well to combine.
MESSY MEXICAN BURGER
Steps:
- Place the ground beef into a large bowl.
- Add the garlic powder, onion powder, salt, chopped chili pepper, and the egg to the ground beef and mix thoroughly.
- Split the ground beef into two and form the meat into 1/2 pound patties with your hands.
- Add the oil to a frying pan over medium-high heat.
- When the pan is up to temperature cook the patties for 5 minutes on each side (this will result in a medium cook - reduce or extent if you like rare or well done.) Cover the burgers with a lid while cooking to allow cooking through the center.
- Remove the lid and add the jalapeño peppers to the top of the burger then add cheese and set aside to rest while you prepare the bread.
- Slice the ciabatta in half. Yu may need to cut more off to make burger-sized segments depending on the original loaf size.
- Slice through the center of the bread so that you have a bottom and top to the burger "bun".
- Spread mayonnaise over the two bottoms then lay the sliced avocado on top.
- Place the burger on top and add some salsa.
- Put the lid on the burger and enjoy. You may need to push a toothpick down the center of the bun and burger to keep it together when serving.

BIG GOOEY MESSY BURGERS
When my daughter was little she would always ask me to make"those big, gooey messy burgers" (most of us call them sloppy joes) however the tangy sweet flavor always gets huge reviews & recipe requests. I make on stove top then put in the crockpot and I never have any leftovers, my husband, co workers and family often request me to make these, I hope you enjoy them as much as we do.
