HEALTHY TOMATO SOUP
Enjoy this vegetable-packed tomato soup for a lovely light family meal, with leftovers for the next day. Serve with bread or our Cheese, Marmite & spinach pinwheels

Steps:
- Heat the oil in a large pan and cook the onion for 8-10 mins until softened and starting to take on a little colour. Add the carrots, garlic, peppers and sweet potato. Cook for a further 10 mins, stirring often and taking care not to burn the garlic. Add the tomatoes, stock, herbs and 1 litre of water. Bring to a simmer. Cover and cook for 20 mins until the sweet potato is soft.
- Use a hand blender to whizz the soup until smooth. Stir in the cream and season to taste. Can be chilled for three days or frozen for up to three months.

Steps:
- Saute onions with olive oil, salt, and pepper until translucent.
- Set aside.
- Dice potatoes, carrots, and celery.
- Set aside.
- In a large sauce pan, whisk chicken broth, crushed tomatoes, and tomato past until smooth.
- Add vegetables and stewed tomatoes.
- Simmer on LOW for 30-45 minutes, or until carrots and potatoes are soft.

3-CAN TOMATO VEGETABLE SOUP
This pantry-friendly soup is as easy on the cook as it is on the wallet. All you need are the three cans (tomatoes, beans and mixed vegetables) and some staple seasonings. To give the soup extra body and a creaminess without adding dairy, mash some of the beans directly in the can. The result is a hearty, satisfying soup with minimal effort.

- Combine the olive oil, Italian seasoning, and onion powder in a medium saucepan over low heat. Bring to a gentle simmer, stirring occasionally, until the spices infuse into the oil, about 5 minutes.
- Add the mixed vegetables, 1/4 teaspoon salt, and a few grinds of black pepper. Increase the heat to medium and cook, stirring occasionally, until everything is well- coated, 1 to 2 minutes.
- Add the tomatoes with their juices, then fill the empty can halfway with water; swirl and add to the soup. Add one-third of the beans along with half their liquid. Simmer for 3 minutes.
- Meanwhile, mash the remaining beans and their liquid with a fork directly in the can until slightly smooth; stir into the soup. Add 2 tablespoons water to the empty can, scrape with a rubber spatula to release any mashed beans, then stir into the soup. Let simmer for 5 minutes. Season with salt and pepper.
- Divide among bowls and enjoy.

If you have fresh tomatoes, use those, & any veggies from your garden will work. I made this last night on a whim to eat a bit healthier after weekend indulging. Very yummy & nutritious!

Steps:
- Heat a little olive oil in Dutch oven. Add chopped onions, carrots, garlic, & celery to sweat for a few minutes. I also added a dried chili pepper i had. Salt & add smoked paprika & stir.
- Pour in vegetable broth, tomatoes, & a little oregano, rosemary, pepper.
- When veggies are getting soft & broth is to your liking, add chopped zucchini & squash. Cook about 15 mins.
- Turn off heat & add chopped greens & fresh basil. I love fresh ground black pepper & use generously.

- In a large pot with boiling salted water cook pasta until al dente. Drain.
- Meanwhile, in a large skillet cook ground beef until no pink remains. Add onions and celery and cook until they are softened. Add salt and pepper to taste. Stir in tomato soup, tomato sauce, and water. Simmer for 10 minutes.

- Heat a large non-stick pan, tip in half the vegetables and the garlic, and cook, stirring, over a high heat until they start to soften - about 5 mins. Tip in the basil, tomatoes, stock cube and 2 cans of water, then blitz with a hand blender to get the mixture as smooth as you can.
- Add the remaining frozen veg, cover the pan and cook for 15-20 mins more until the veg is tender. Ladle into bowls. Serve with the herby ricotta on rye bread.
