2 tablespoons all-purpose flour
1/2 teaspoon salt
1/4 teaspoon pepper
1-1/2 pounds beef round steak, cut into 6 pieces
1 medium onion, cut into 1/4-inch slices
1 celery rib, cut into 1/2-inch slices
2 cans (8 ounces each) tomato sauce

Steps:

  • In a bowl or shallow dish, combine the flour, salt and pepper. Add the steak and turn to coat. , Place the onion in a greased 3-qt. slow cooker. Top with the steak, celery and tomato sauce. Cover and cook on low for 6-8 hours or until meat is tender.

For dinner tonight, try Alton Brown's Swiss Steak cutlets from Good Eats on Food Network, cooked in bacon drippings and smothered in an oniony beef gravy.

2 pounds beef bottom round, trimmed of excess fat
2 teaspoons kosher salt
1 teaspoon freshly ground black pepper
3/4 cup all-purpose flour
1/4 cup vegetable oil or bacon drippings
1 large onion, thinly sliced
2 cloves garlic, minced
2 stalks celery, chopped
1 tablespoon tomato paste
1 (14.5-ounce) can diced tomatoes
1 teaspoon smoked paprika
1 teaspoon dried oregano
1 tablespoon Worcestershire sauce
1 1/2 cups beef broth

Steps:

  • Preheat the oven to 325 degrees F.
  • Cut the meat with the grain into 1/2-inch thick slices and season on both sides with the salt and pepper. Place the flour into a pie pan. Dredge the pieces of meat on both sides in the flour mixture. Tenderize the meat using a needling device, until each slice is 1/4-inch thick. Dredge the slices on both sides once more and set aside.
  • Add enough of the bacon drippings or vegetable oil to just cover the bottom of a 4 to 5-quart Dutch oven set over medium-high heat. Once the oil begins to shimmer, add the steaks to the pan, being careful not to overcrowd. Cook until golden brown on both sides, approximately 2 minutes per side. Remove the steaks to a plate and repeat until all of the steaks have been browned.
  • Remove the last steaks from the pot and add the onions, garlic, and celery. Saute for 1 to 2 minutes. Add the tomato paste and stir to combine. Next add the tomatoes, paprika, oregano, Worcestershire sauce and beef broth and stir to combine. Return the meat to the pot, submerging it in the liquid. Cover the pot and place it in the oven on the middle rack. Cook for 1 1/2 to 2 hours or until the meat is tender and falling apart.

3 lbs boneless eye of the round steak
1/2 cup coconut flour
2 tablespoons tapioca starch*
1 tablespoon salt
1 teaspoon garlic powder
1/2 cup onion (diced)
2 tablespoons coconut oil (for browning steaks)
2 cups beef stock
8 ounces white mushrooms
1/2 teaspoon pepper
1/2 teaspoon salt
2 cans full-fat coconut milk (chilled)
2 tablespoons tapioca starch*

Steps:

  • Put two tablespoons coconut oil in a skillet and turn on to medium heat.
  • In a small bowl, combine the coconut flour, tapioca starch, salt and garlic powder. Mix well.
  • Dredge the steaks in the flour mixture and place them in a hot skillet. Allow them to brown on the first side, 1-2 minutes, then flip the steaks and allow them to brown for 2 minutes on the other side.
  • Place the browned steaks in a slow cooker. Top with diced onions.
  • Pour the beef stock, mushrooms, pepper and salt in a blender. Blend for 30 seconds on medium speed, or until the mushrooms are chopped to the size you'd like.
  • Pour the mushroom sauce over the steaks.
  • Cook on high for 5-6 hours or low for 7-9 hours until the steaks are tender.
  • minutes before serving, open the chilled cans of coconut milk and scoop out the hardened cream into a bowl. Reserve the clear coconut water for another use.**
  • Mix the coconut cream with 2 tablespoons tapioca starch. Add this to the slow cooker and allow the coconut cream to "melt" in.
  • Allow the coconut cream to heat through. Mix gently just before serving.

A great way to cook round steak so that its very tender and flavoursome. Its a hearty meal for winter and nice served with crusty bread. In case you're wondering - the recipe doesn't originate from Switzerland. This method of preparing a tougher cut of meat to become nicely tender is referred to as 'swissing' and that's where the name comes from.

1 kg round steak
2 tablespoons flour
Salt and pepper
1 onion chopped
400 g can diced tomatoes
1 clove garlic crushed
2 small red chillis finely chopped (optional)
2 teaspoons fresh thyme
2 teaspoons fresh sage
2 teaspoons fresh marjoram
1 cup water approximately
1 beef stock cube crumbled
500 g vegetables of choice e.g.carrot, potato, parsnips, kumara. (use more if desired)

Steps:

  • Chop the vegetables into medium sized pieces and partially cook by steaming or boiling for about 10 minutes. The steak may be cut into smaller pieces if desired. Season the flour with salt and pepper then dredge the steak with it. (An easy way to do this without too much mess is to place the seasoned flour and the steak in a plastic bag, tie the top then shake well to ensure the steak is coated.) Note: At this point you may prefer to brown the onion, garlic, chilli and steak in a little oil in a frypan before adding to the slow-cooker to give a bit more flavour. I usually skip this step, however, mainly to save time and I find it still turns out beautifully. Place half the onion in the base of a slow cooker. Add in the steak and the remaining onion and vegetables. Combine the garlic, chilli and herbs with the tomatoes then pour this mixture over the steak and vegetables. Add crumbled stock cube and enough water so the vegetables are almost covered. Place the lid on the slow cooker and cook on the low setting for 6-8 hours.

One reason is how easy it is and the second reason is the wonderful taste. My husband and I greatly enjoy this meal. I usually serve it over rice with a biscuit or dinner roll. 1/2 cup all purpose flour
4 tsp Mediterranean Herb seasoning, divided (i.e. McCormick's)
1 tsp garlic salt (plus additional as needed)
2 lb cubed sirloin steak
olive oil
1 large green bell pepper (sliced)
1 large sweet onion (cut into thin wedges)
1/4 cup Worcestershire sauce
2 14.5 oz cans fire roasted tomatoes with garlic
1 Tbsp brown sugar
2 bay leaves
1/2 tsp red pepper flakes
3 Tbsp tomato paste (if needed to thicken)
2 Tbsp chopped flat leaf parsley
1/3 cup grated Parmesan or shredded Swiss cheese

Steps:

  • To make the seasoned flour: In a small bowl mix together flour, 1 tsp Mediterranean seasoning and garlic salt. Dust the steaks with seasoned flour on all sides.
  • Drizzle a large skillet with olive oil. Heat to high browning steaks on both sides for around 2 minutes per side. Do not cook through.
  • Meanwhile, arrange green peppers and 1/2 of the onion on the bottom of the slow cooker. Sprinkle with garlic salt and black pepper to your taste.
  • Arrange the steaks on top. Top with remaining onion. Drizzle with Worcestershire sauce.
  • Deglaze skillet with fire roasted tomatoes, brown sugar, bay leaves, 3 tsp of Mediterranean seasoning, red pepper flakes and 3 Tbsp tomato paste.
  • Season with garlic salt and black pepper to your taste. Scrape any brown bits off the bottom of the pan. Pour sauce over the steaks in slow cooker.
  • Cover and cook on low for 6 hours or on high for 3-4 hours.
  • May use tomato paste to thicken the sauce at the end of cooking, if desired.
  • Serve over Swiss Cheese Mashed Potatoes, rice or egg noodles. garnished with fresh chopped parsley and a sprinkle of grated Parmesan or Swiss cheese.

She forgets now how she made it (insert sad face), but I've been making it for a long time, trying to recapture the goodness of her Swiss steak. This is a little twist on it, with pork chops or spare ribs added. Gives it a lovely...

beef round steak
1 large onion
1 large green pepper
1 large can tomatoes (whole or crushed)
2 cans tomato paste (see note in directions)
pinch sugar
worcestershire sauce
1 container of knorr's beef stock or 1/4 cup of penzey's beef soup base
1 or 2 Tbsp a-1 sauce (if you like it, if not omit)
ground black pepper, sea salt
1/2 cup flour
canola oil for cooking meat
3-4 pork chops or country style ribs
1 tsp celery seed

Steps:

  • 1. Bring steak to room temperature and cut into quarters. Tenderize the steak with a meat mallet (sometimes your butcher will do it for you or run it through a cuber). Pound it w/ a mallet until it starts to thin out (you show that steak who's boss, baby!).
  • 2. Lightly salt & then pepper the steak. I pour worcestershire sauce on it at this point & rub in well & let it sit a bit longer. Heat a skillet w/ some oil for browning the steak. Rub the steak into the flour.
  • 3. Fry for a few minutes each side, working in batches, if needed. Brown the pork chops or ribs a few minutes also, (I don't add flour or seasonings to the chops).
  • 4. Meawhile, add about 3/4 of the canned tomatoes to your crockpot. Sprinkle a little sugar over top, and then add the A1, if using. Add 1 can of tomato paste & beef stock, celery seed, and stir. I add more ground black pepper. Add some more salt, if you want. Add half of the chopped green pepper & onions.
  • 5. Add the cooked steak & chops. Top w/ remaining onions and peppers & the rest of the tomatoes. Cook on low for about 6-7 hours.
  • 6. Check & see if your sauce is too thin. If it is, add the rest of the tomato paste & continue cooking until you can cut the steak easily with just a fork. You also can add some garlic to this recipe or chopped carrots. I usually don't just because my mom didn't & I like it how she did it! :)
  • 7. Enjoy!

28 oz -can of diced tomatoes
1 1/2 tsp minced garlic
1 diced onion
1 cup fresh white mushrooms (* or can substitute 10 oz canned mushrooms)
1 whole green pepper, chopped
2 tbsp cornstarch

Steps:

  • Spray inside of slow cooker with non-stick cooking spray. Add steak to bottom of slow cooker.

2 pounds boneless beef round steak, cut into 6-ounce pieces
½ teaspoon seasoned salt (such as LAWRY'S®), or to taste
½ teaspoon paprika, or to taste
⅔ cup all-purpose flour
2 tablespoons vegetable oil, or as needed
1 large green bell pepper, cut into strips
1 large onion, cut into strips
1 large carrot, chopped
1 (10 ounce) can diced tomatoes with green chile peppers (such as RO*TEL®), undrained
½ (15 ounce) can sloppy joe sauce (such as Manwich®)
1 tablespoon Worcestershire sauce
2 cloves garlic, minced
½ cup red wine

Steps:

  • Sprinkle both sides of the steak pieces with seasoned salt and paprika. Place the flour in a shallow dish, and thoroughly dredge both sides of the meat with the flour. Pound the meat on both sides with the tenderizing side of a meat mallet, pounding some of the flour into the meat.
  • Heat the vegetable oil in a large skillet over medium heat, and brown the steaks well on both sides, about 5 minutes per side. 2 pounds round steak
1/2 cup flour
2 tablespoons steak seasoning
2 tablespoons butter
1 onion, sliced
1 can French onion soup
1 can cream of mushroom soup

Steps:

  • Melt butter in a large skillet over medium-high heat. Mix together flour and one tablespoon steak seasoning. Dredge steak in flour. Place steaks in hot skillet. Brown on both sides for 3-4 minutes. Once both sides are browned, place in crock pot on a quarter of the sliced onions. Place remaining onions in skillet to absorb bits left in the pan for a minute or two and then transfer to crock pot. Mix soups together and pour over meat and onions. Sprinkle remaining tablespoon of steak seasoning over the soups. Set the slow cooker on low and cook for 8 - 9 hours. Serve with a side of mashed potatoes or noodles.

To remove, cut each steak in half along the line of gristle and then with a sharp knife, slice off and discard the line of gristle on each piece. Then lay the steaks out on a plate and salt and pepper if cooking right away. If not cooking until the next day, do not season until then.
  • In a large 12 inch skillet with a tight fitting lid over medium high heat, place one tablespoon of oil, all of the mushrooms and the salt. Stir, cover and cook for five minutes. The mushrooms will give up a lot of water. Remove cover and cook for 5-10 minutes until liquid has evaporated and mushrooms get dry and browned. Remove from heat and place in bottom of slow cooker.
