IRISH BOILED DINNER (CORNED BEEF)

Irish Boiled Dinner (Corned Beef) image

Mouth watering tender corned beef with corned beef flavored potatoes, cabbage, and carrots. This is my great grandmothers recipe from Ireland. This was served with both Irish soda bread and corn bread at our house.

Provided by Ann Hester

Categories     World Cuisine Recipes     European     UK and Ireland     Irish

Time 6h

Yield 6

Number Of Ingredients 5

1 (5 1/2 pound) corned beef brisket
2 large onions
15 small white (Irish) potatoes
10 carrots, cut into 1 inch pieces
2 heads cabbage, cored and cut into wedges

Steps:

  • Rinse the beef brisket under cold water, and place in a large pot. Add enough water to cover the roast by 6 inches. Peel the onions, and place them in the pot with the roast. Bring to a boil, and cook for about 30 minutes at a rolling boil. Reduce heat to medium-low so that the water is at a gentle boil, cover, and cook for 3 1/2 hours.
  • Remove the lid from the brisket. Remove onions, and cut into wedges. Return them to the pot. Add carrots to the pot, then place the cabbage over the roast. Place the potatoes on top of the cabbage. Place the lid back on the pot, and cook for another 30 minutes, until potatoes are tender. The potatoes should be immersed in the water by now, but if not, keep the lid on so they can steam.
  • Remove the vegetables from the pot, and place in a separate serving bowl. Keep the corned beef in the pot until ready to slice and serve because it dries out quickly.

CORNED BEEF POTATO DINNER

Corned Beef Potato Dinner image

For St. Patrick's Day, I usually prepare this dish instead of the traditional corned beef dinner. This takes less time because it makes good use of the microwave...and it's very tasty. -Brooke Staley Mary Esther, Florida

CROCK POT CORNED BEEF DINNER

Crock Pot Corned Beef Dinner image

The one and only way I prepare Corned Beef. The glaze makes a yummy topping and this will melt in your mouth! I am ALWAYS asked for this recipe, usually by friends that don't like corned beef.

Provided by Shabby Sign Shoppe

Categories     Meat

Time 12h

Yield 4 serving(s)

Number Of Ingredients 10

4 lbs corned beef, with included seasoning packets (buy the cheapest cut, the fattier cuts have more flavor)
water, to cover
1 onion, quartered
2 bay leaves
2 minced garlic cloves
2 lbs baby red potatoes, whole
1 lb baby carrots
1 head cabbage, green, quartered
1 cup light brown sugar
1/4 cup gulden's spicy mustard

Steps:

  • Cover; Place first 4 ingredients in crock-pot. DO NOT add vegetables. Cook on LOW 11 hours (get up early :).
  • Remove meat and transfer liquid to another large pot.
  • To the reserved liquid add potatoes.
  • Cook on medium high stove top for 20 minutes and then add carrots, cook five minutes more, add cabbage and cook an additional 20 minutes.
  • Meanwhilem, mix glaze ingredients. Spread glaze evenly over cooked brisket and bake meat (uncovered) for 30 minutes in oven at 350 degrees.
  • This should be done about the time the vegetables are cooked through.
  • I serve this with Irish soda bread and of course -- beer.
  • (Note *** #8 corned beef feeds 6 adults and 5 kids, also prepare 5# potatoes, 2 # carrots and 2 heads cabbage and double glaze. It looks like a lot when you have it uncooked but meat shrinks about half once cooked. *** There will be leftovers, but you'll be happy then next day! otherwise if you are making this recipe for 1-4 people, stick to original recipe).

PANACKELTY - MY GRANDMA'S BAKED CORNED BEEF AND POTATOES

Panackelty - My Grandma's Baked Corned Beef and Potatoes image

My grandma's recipe, an easy and tasty way mid-week meal made with corned beef, potatoes and onions - simple and packed with flavour. Panackelty is a corruption of the word Pan Haggerty; Panackelty is a baked dish consisting of meat, usually corned beef, bacon or lamb chops, and root vegetables (mainly potatoes and onions) which is left to bake throughout the day in a pot on low heat. Originating in the Sunderland area of North East England, the dish was a favourite of working-class families and was traditionally eaten on Monday as the leftover meat and vegetables from the previous day's meal could be used. A local version of the popular dish of Shepherd's Pie or Cottage Pie. I have a vegetarian recipe for this recipe, Recipe #423399. Historical Note: The families of miners and shipyard workers would often prepare this meal as it could be slow cooked by a housewife during the day while she continued with other household tasks. A hungry worker coming home would also be especially satisfied with the high in fat and carbohydrate content of the dish. There are endless interpretations of the dish, with different families using different ingredients. Other popular panackelty concoctions will include bacon, sausages, black pudding, beef stock, and occasionally pork or lamb chops and additional vegetables such as carrots. The vegetarian version is called Pan Haggerty, and it is thought that the meat version is a corruption of that word.

ROASTED CORNED BEEF AND CABBAGE WITH CARROTS, POTATOES & HORSERADISH CREAM SAUCE

Roasted Corned Beef and Cabbage with Carrots, Potatoes & Horseradish Cream Sauce image

Corned beef and cabbage is traditionally boiled, but I prefer to roast it in the oven. I also toss the vegetables in horseradish butter to amp up the flavor; it makes ALL the difference.

Provided by Jennifer Segal

Categories     Dinner

Time 3h20m

Yield 6 - 8

Number Of Ingredients 16

1 (4-lb) flat-cut corned beef with seasoning packet (do not trim the fat)
4 tablespoons unsalted butter, melted
2 tablespoons prepared horseradish
1½ teaspoons salt
¼ teaspoon ground black pepper
6 medium carrots, cut into 2-in chunks
1¼ lb small gold potatoes (about 2.5" in diameter), halved
1 very small green cabbage, cored and cut into ½-inch-thick slices (see note)
2 tablespoons chopped Italian parsley, for garnish (optional)
1 cup sour cream
2 tablespoons prepared horseradish, plus more to taste
1 tablespoon Dijon mustard
1 teaspoon white wine vinegar
¼ teaspoon salt
¼ teaspoon ground black pepper
¼ teaspoon sugar

Steps:

  • Preheat the oven the 325°F. Set one oven rack in the middle position and another in the bottom position.
  • Rinse the corned beef several times under running cold water. (No need to dry it.)
  • Place the corned beef fat side up in a large roasting pan (you'll trim the fat after the meat is cooked). Pour about ⅛ inch water around the meat. Sprinkle the contents of the seasoning packet into the water around the corned beef. Cover the pan tightly with heavy-duty aluminum foil and roast on the middle rack for 3 hours.
  • Meanwhile, in a small bowl, mix together the melted butter, horseradish, salt and pepper.
  • Place the carrots, potatoes and cabbage side by side on a rimmed baking sheet (do not line the pan with foil; the potatoes will stick). Drizzle the horseradish-butter mixture over the veggies and toss with a spatula to coat all of the vegetables evenly, keeping the vegetables separate. Turn the potatoes so that they are cut side down (they'll get crispier that way).
  • After the corned beef has roasted for 1 hour and 30 minutes, place the pan of vegetables on the bottom rack of the oven. Roast the vegetables and continue cooking the corned beef for 1 hour and 30 minutes more, until both the meat and vegetables are tender. Check on the veggies occasionally to be sure they are browning evenly. (The cabbage will brown first, so give it a toss when the bottom pieces look golden. The potatoes and carrots may need to be turned, but only if they are nicely browned on the bottom before the cook time is up.)
  • Transfer the corned beef to a cutting board and let sit until cool enough to handle, about 5 minutes. Cut off the layer of fat on top of the corned beef and discard. Slice the meat against (or perpendicular to) the grain into ¼-inch slices. Arrange the meat on a platter with the roasted vegetables and sprinkle with parsley, if desired. Serve with the horseradish cream sauce.
  • Combine all of the ingredients in a small bowl and stir to combine. Taste and adjust seasoning, adding more horseradish to taste, if desired.
  • Note: You won't use the whole head of cabbage; just use enough to cover ⅓ of the sheet pan.
  • Note: The nutritional information does not include the horseradish cream sauce.

CRISPY CORNED BEEF FRITTERS

Crispy Corned Beef Fritters image

Crispy around the edges and loaded with lots of delish corned beef flavor, these Corned Beef Fritters are always a hit!

Provided by Chef Jenn

Categories     Breakfast

Time 25m

Number Of Ingredients 7

12 ounces canned corned beef
2 cups shredded potatoes (rinsed and squeezed dry)
1/4 cup grated onion
1/3 cup all purpose flour
1 teaspoon baking powder
2 tablespoons butter (divided)
2 tablespoons olive oil (divided)

Steps:

  • Open the pesky and weirdly shaped can of corned beef. Pull the meat out, pop it into a medium-sized bowl and break it up with a fork.
  • Shred the potatoes on a box grater and rinse them with cold water to remove the starch. Give them a good squeeze to remove the excess liquid.
  • Add the grated onion, flour, egg, pepper, and baking powder. Mix well with a fork.
  • Get a large skillet good and hot. I love making these fritters on my Blackstone griddle, but you can use any good heavy-bottomed skillet.
  • Working in batches, melt about 1/2 tablespoon of butter and 1/2 tablespoons of oil in the skillet. When foamy and hot, drop large-ish spoonfuls (up to about 1/4 cup/60 mL) into the hot fat. Flatten them somewhat with a flipper, but don't press them down too much.
  • Cook for 3-4 minutes then flip and cook an additional 3-4 minutes or until they're golden brown and crispy. Set them aside on a plate and tent loosely with foil to keep them warm.
  • Repeat with more oil and butter and work in batches until they're all fried and crispy. Enjoy!

  • Prep. Peel the carrots and cut into 1-inch pieces. Clean the potatoes and cut into 2-inch chunks. Remove the outer leaves from the cabbage and cut into quarters.
  • If you are using store bought corned beef, open the cryovac and dump out all the liquid. If you have made your own corned beef (and you should, it is better than store-bought, click here for the recipe), remove it from the curing liquid.
  • Rinse the corned beef thoroughly. Some packages have some pickling spices in a packet. They can't flavor the meat but they can flavor the veggies. Some cuts have a thick layer of fat on the surface of one side, called a fat cap. Trim it all off. This fat is not like marbling in beef. It cannot penetrate the meat and it brings nothing to the party but calories and it just makes scum. If you bought the point section of a brisket, there is probably a layer of fat on top of a layer of meat, then another layer of fat, and finally another layer of meat. Trim off the surface fat and leave the center fat layer intact. It will be easy to remove after it is cooked.
  • Cook. Place the meat in a large pot along with enough hot water to cover it by at least 1" and put the lid on. Turn the heat to medium low, bring it to a simmer at about 190°F and keep it there for 30 minutes. If you boil it, it will shrink and squeeze out the moisture. Yes, you can make dry meat in a pot of water if you cook it too hot! Beware that the meat is cold, so when it warms the water will slowly move from simmer to boil. Keep an eye on it and try not to let it boil.
