I made this pie this weekend. It's adapted from The Perfect Recipe cookbook by Pam Anderson. Wow, we agreed it was the best lemon meringue pie recipe we'd ever had. The filling is very lemony sweet/tart and fluffy. The meringue is tall and fluffy/light. Prep times are estimated. It takes a little time, but is well worth it. Lemon meringue pie was first invented in Philadelphia. This recipe represents the Mid-Atlantic U.S. region.

1 1/4 cups flour
1 tablespoon sugar
1/2 teaspoon salt
6 tablespoons unsalted butter, cut into pieces and frozen
4 tablespoons vegetable shortening, frozen
3 -5 tablespoons ice water, as needed
1/2 cup graham cracker crumbs
1 cup sugar
1/4 cup cornstarch
1/8 teaspoon salt
6 large egg yolks
1 1/2 cups water
1 tablespoon lemon zest
1/2 cup lemon juice (fresh from 2 - 3 lemons)
2 tablespoons unsalted butter
1 tablespoon cornstarch
1/3 cup water
1/4 teaspoon cream of tartar
1/2 cup sugar
4 large egg whites
1/2 teaspoon vanilla extract

Steps:

  • Make pie shell: Mix flour, sugar and salt in a food processor, by pulsing a few times.
  • Scatter the frozen butter pieces over flour mixture.
  • Pulse in 1-second pulses about 5 times to mix in butter.
  • Add frozen shortening; pulsing in 1-second pulses until mixture resembles cornmeal with pieces about the size of peas.
  • Slowly add ice water through the processor feed tube, with motor running, one tbsp at a time.
  • When dough forms a ball, stop processing.
  • It should take about 2 or 3 tbsp of ice water to reach this stage.
  • Shape dough into a ball in your flour coated hands, and then flatten into a 4 inch wide disk.
  • Flour disk and wrap in plastic.
  • Refrigerate at least 30 minutes.
  • Generously coat your work surface or pastry sheet with a little flour and about 1/4 cup graham cracker crumbs.
  • Place dough on floured surface, coat with some flour and graham cracker crumbs, and roll into a 9-inch disk.
  • Lift, coat surface with more graham and flour, turn dough, add more graham and flour on top, and roll out to a 13 inch disk.
  • Place into a 9 inch pie pan, and finish edges.
  • Refrigerate crust until firm, about 30 minutes.
  • Prick dough with a fork to prevent bubbling up in the oven.
  • While the oven is pre-heating to 375, put pie crust in freezer.
  • Bake at 375 for 20- 25 minutes, checking occasionally to make sure it's browning evenly and not bubbling up.
  • Lemon Filling: Whisk sugar, cornstarch, and salt together in a large, nonreactive saucepan.
  • Add egg yolks, then immediately but gradually whisk in 1 1/2 cups water.
  • Bring mixture to a simmer over medium heat, whisking regularly, 8- 10 minutes, until thickened.
  • Remove from heat, whisk in zest, then juice, and finally butter.
  • Keep warm until meringue is made.
  • Meringue topping: Mix cornstarch and 1/3 cup water in a small saucepan.
  • Bring to a simmer, whisking occasionally until thickened.
  • Remove from heat when translucent and thickened.
  • Preheat oven to 325.
  • In a large mixing bowl, mix cream of tartar and sugar together.
  • Beat egg whites with whip attachment of mixer until frothy. Add vanilla.
  • Beat in sugar mixture, 1 tbsp at a time.
  • Then drop in cornstarch mixture, 1 tbsp at a time until stiff peaks form.
  • Pour warm lemon filling into pie crust.
  • Distribute meringue evenly over the top, starting with the edges, and then the middle.
  • Make sure it attaches to the crust.
  • Lifting with the back of the spoon, create peaks in the meringue.
  • Bake until golden brown, about 20 minutes.
  • Cool completely before serving.

6 large egg whites
1 teaspoon white vinegar
1 teaspoon vanilla extract
1/4 teaspoon salt
1/4 teaspoon cream of tartar
1-1/2 cups sugar
LEMON CURD:
1/2 cup sugar
2 tablespoons potato starch
1 cup water
1/2 cup plus 1 tablespoon lemon juice, divided
3 large eggs, beaten
2 teaspoons grated lemon zest
Whipped topping and fresh berries, optional

Steps:

  • Place egg whites in a large bowl; let stand at room temperature 30 minutes., Preheat oven to 225°. Add vinegar, vanilla, salt and cream of tartar to egg whites; beat on medium speed until foamy. Gradually add sugar, 1 tablespoon at a time, beating on high after each addition until sugar is dissolved. Continue beating until stiff glossy peaks form., Cut a small hole in the tip of a pastry bag or in a corner of a food-safe plastic bag; insert a large star tip. Transfer meringue to bag. On a parchment-lined baking sheet, pipe meringue into twelve 3-in. round disks, building up the sides with meringue to form shells. Bake 45-50 minutes or until set and dry. Turn off oven (do not open door); leave meringues in oven 1 hour. Remove from oven; cool completely on baking sheet. , Meanwhile, in a small heavy saucepan, mix sugar and potato starch. Whisk in water and 1/2 cup lemon juice until smooth. Cook and stir over medium-high heat until thickened and bubbly. Reduce heat to low; cook and stir 2 minutes longer., Remove from heat. Stir a small amount of hot mixture into eggs; return all to pan, stirring constantly. Bring to a gentle boil; cook and stir 2 minutes. Remove from heat. Gently stir in lemon zest and remaining lemon juice. Transfer to a small bowl; cool without stirring. Refrigerate, covered, until cold., Spoon curd into meringue shells. If desired, top with whipped topping and berries.

2 egg whites
1 teaspoon lemon juice
1/4 teaspoon cream of tartar
2/3 cup sugar
1/2 cup purchased lemon curd
1 cup blackberries or 1 cup other berries

Steps:

  • Let egg whites stand at room temperature in a large mixing bowl for 30 minutes. Meanwhile, line baking sheet with parchment paper. Using a pencil, draw eight 2-1/4-inch circles and eight 1-3/4-inch circles about 1 inch apart on the paper.* Turn paper pencil-side down on baking sheet; set aside. Preheat oven to 300 degrees F.
  • Add lemon juice and cream of tartar to egg whites. Beat with an electric mixer on medium speed until soft peaks form (tips curl). Add sugar, 1 tablespoon at a time, beating on high speed about 7 minutes or until very stiff peaks form (tips stand straight) and sugar is almost dissolved.
  • Using a pastry bag fitted with a medium (1/4-inch) round tip, pipe a flat base of meringue onto all of the circles on the paper. Pipe a ring of meringue onto edges of each of the 8 larger meringue rounds, building the sides 3/4 inch tall by piping a continuous coil of meringue to form a small shell. For tops, pipe a coil of meringue on smaller rounds to make a cone shape that resembles the top of a beehive.
  • Bake 30 minutes. Turn off oven. Let meringues dry in oven, with door closed, at least 1 hour. Remove from paper. Place in an airtight container. Store in a cool, dry place up to 1 week.
  • Just before serving, spoon 1 tablespoon of lemon curd into each bottom meringue shell. Place a few berries on lemon curd. Prop top of meringue beehive next to bottom.
  • *Note: For free-form meringue shells without tops, make eight 3-inch circles on parchment. Use back of a large spoon to spread meringue over circles, building up sides to form shells. Bake as directed.

LEMON MERINGUE ROULADE WITH PISTACHIO

This is a great chilled dessert to feed a crowd, and impress them too. Often egg yolks are left over after making meringue, but here they're used to make lemon curd and to give a luxurious filling. This recipe makes more lemon curd than you need to fill the roulade. The extra can be stored in a jar, and given as a homemade Easter present. Equipment: You will need an electric mixer.

5 free-range egg whites
280g/10oz caster sugar
50g/1¾ oz shelled pistachio nuts, finely chopped
icing sugar, for dusting
100g/3½oz butter, softened
225g/8oz caster sugar
5 free-range egg yolks
3 large lemons, juice and finely grated zest
300ml/10fl oz double cream, lightly whipped

Steps:

  • Preheat the oven to 200C/180C Fan/Gas 6. Line a 23x33cm/9x13in Swiss roll tin with greased non-stick baking paper.
  • Whisk the egg whites in a clean large bowl using an electric mixer on full speed until very stiff. Gradually add the sugar, a teaspoon at a time, and still on high speed, whisking well between each addition. Whisk until very, very stiff and glossy and all the sugar has been added.
  • Spread the meringue mixture into the prepared tin, sprinkle with the chopped nuts. Bake for about 8 minutes until very golden-brown. Lower the oven to 160C/140C Fan/Gas 3 and bake for 15 minutes more until firm to the touch. Remove and turn upside down on a piece of non-stick baking paper. Carefully peel the paper from the base of the meringue and leave it to cool for about 10 minutes.
  • To make the lemon curd, put the butter into a heatproof bowl, add the sugar and whisk by hand until combined. Stir in the egg yolks. Add the lemon zest and juice and whisk until smooth. Sit the bowl over a pan of just simmering water and whisk until the mixture has thickened. This will take about 8-10 minutes. Be careful the water does not boil as this will curdle the curd.
  • Reserve 100g/3½oz (about 6 tablespoons) of the lemon curd and set aside. Spoon the remaining lemon curd into a sterilised jar. Seal and label it. It will keep in the fridge for 2 weeks.
  • To fill the roulade, mix the reserved lemon curd with the whipped cream, swirling to give a marbled effect. Spread over the cooled meringue. Lightly score the meringue along one long side, slightly in from edge. Use this to help you fold and start to roll the base. Roll up the meringue tightly, using the paper to help you. Sit it on a plate with the join underneath.
  • To serve, dust with icing sugar and decorate with Easter chicks.

1/2 cup sugar
1/3 cup fresh lemon juice
2 teaspoons lemon zest (finely grated)
2 tablespoons unsalted butter, cut up
3 sheets phyllo dough
1/2 cup butter, clarified
3/8 cup sugar
2 egg whites
3 tablespoons brown sugar

Steps:

  • For curd: Whip eggs and sugar until very light and fluffy with a whip attachment.
  • Gradually mix in lemon juice and rind. Place over boiling water and cook, whisking until extremely thick, about 5 10 minutes.
  • Remove from heat and whisk in butter. Pour into a container, cover with plastic wrap and chill overnight to stiffen.
  • For tart dough:
  • Lay one sheet of phyllo on work surface. Brush with clarified butter and sprinkle with sugar.
  • Repeat the process with the second and third sheets. Cut into 3-inch squares.
  • Lay 18 tartlet molds upside down on a sheet pan. Lay 1 square of phyllo over each pan, then place a second one on top of phyllo to help form tartlet shells. The square corners will spread out flat on the sheet pan.
  • Bake in this upside down position weighted down with another sheet pan at 375 degrees Fahrenheit until golden brown.
  • Let phyllo cool slightly, but while still warm remove from molds. Cool completely then fill with lemon curd by piping with a plain tip.
  • For meringue:
  • Whip egg whites until stiff but not dry then add the brown sugar gradually and continue whipping until stiff.
  • Pipe onto lemon curd with a star tip and brown with a blow torch or under the broiler.

  • Make lemon curd:
  • Cut butter into pieces and in a heavy saucepan cook with zest, lemon juice, and sugar over moderate heat, stirring, until sugar is dissolved and mixture just comes to a simmer. In a bowl whisk together eggs and whisk in lemon mixture until combined well. Transfer lemon curd to pan and heat over moderate heat, whisking constantly, until it just begins to simmer. Pour lemon curd through a fine sieve into a bowl and cool slightly. Chill lemon curd, its surface covered with plastic wrap, at least 2 hours, or until cold, and up to 3 days.
  • Fill tartlet shells in baking cups with lemon curd. Chill tartlets, covered, 1 hour.
  • Preheat oven to 400°F.
  • Make meringue:
  • In a bowl with an electric mixer beat whites with a pinch salt until foamy. Add cream of tartar and beat whites until they hold soft peaks. Gradually add sugar, beating until meringue holds stiff peaks.
  • Transfer meringue to a pastry bag fitted with 1/2-inch plain tip and pipe meringue 2 inches high onto each tartlet, completely covering lemon curd.
  • Bake tartlets in middle of oven 3 minutes, or until meringue tips are just browned, and cool in cups on racks. Chill tartlets in airtight containers at least 2 hours, or until cold, and up to 1 day. Keep tartlets chilled until ready to serve.

  • Transfer meringue to the piping bag. To prevent the parchment paper from sliding, pipe a little of the meringue on the underside of each corner of the paper and ‘stick’ it to the pan. Pipe a 5 cm (or any other size you want, depending on how big or small you want them) round spiral base on the prepared baking sheet, and without lifting the tip, pipe 2-3 circles on top of the outer edge to create a nest.
