BRAISED PIG TAILS

1 cup olive oil
4 pounds pig tails
One 12-ounce can your favorite beer
2 tablespoons chopped fresh ginger
8 cloves garlic, chopped
2 medium carrots, chopped
2 large yellow onions, chopped
1 bunch celery, chopped
8 cups chicken stock or broth
10 sprigs fresh thyme
2 bay leaves
Juice of 1 orange
Salt
4 cups vegetable oil or shortening
1 cup all-purpose flour
Barbecue sauce, for serving
Toasted sesame seeds, sliced scallions and cilantro for serving, optional

Steps:

  • Preheat the oven to 400 degrees F.
  • Heat a large saute pan until hot, then add 3 tablespoons of the olive oil. When the olive oil begins to smoke, carefully place the pig tails into the saute pan. Sear the pig tails until golden, then remove from the pan. Repeat as many times as necessary to sear all the pig tails. Once the pig tails are removed from the pan, carefully add the beer and deglaze the pan.
  • Heat a large oven-safe roasting pan until hot, then add the remaining 3/4 cup plus 1 tablespoon olive oil and cook the ginger, garlic, carrots, onions and celery until caramelized. Add the pig tails, then pour the chicken stock into the roasting pan (there should be just enough liquid to cover the pig tails and vegetables). Add the thyme sprigs, bay leaves, orange juice and two healthy pinches of salt. Cover the pig tails with aluminum foil and braise in the oven for 4 hours. Remove the foil and continue to bake for another 30 minutes. (This will allow the pig tails to gain a beautiful color and for the braising liquid to reduce.) Remove the pig tails from the roasting pan and strain the braising liquid. Refrigerate until ready to use. Once the pig tails are cool to the touch, trim the excess fat.
  • Add the vegetable oil to a large pot and heat to 350 degrees F.
  • Dredge each pig tail in flour and fry until crispy. Toss in your favorite barbecue sauce. Sprinkle with toasted sesame seeds, sliced scallions and cilantro if using.

ROASTED PIG'S STOMACH AKA DUTCH GOOSE

Okay, I know it sounds gross...but, trust me, it only sounds that way!! This traditional Mennonite recipe comes from the Mennonite Community Cookbook that was given to me as a gift. Amounts can vary, since the stomach should be tightly stuffed. I usually use 1 lb bulk sausage and 1 lb. turkey sausage. Sometimes to make this very simple, I buy the hash brown shredded potatoes with onion and peppers. I have never used cabbage, but am sure it's good with that in it too. One of my favorite ways to eat sausage; great with a side salad or fresh green beans. TIP: Since pig stomach is not sold everywhere, you may need to pre-order your pig stomach with your butcher.

1 pig stomach
1 1/2-2 lbs ground sausage
4 -6 cups diced potatoes or 4 -6 cups shredded frozen hash brown potatoes, thawed
1 onion, chopped fine
1/2 green pepper, chopped fine
2 cups shredded cabbage (optional)
1 -2 teaspoon salt
1/2-1 teaspoon fresh ground black pepper

Steps:

  • Make a filling of sausage(s), diced potatoes, chopped onion, pepper and cabbage.
  • Add seasonings and mix well.
  • Wash stomach well. Drain and fill stomach with stuffing.
  • Close opening of stomach securely by "sewing" together using toothpicks.
  • Place stuffed stomach in a roasting pan with enough water in pan to cover bottom and bake at 350F for approximately 3 hours - stomach should be brown (like a done turkey!).
  • Slice and serve.

1/4 cup mustard powder
1/4 cup brown sugar
2 tablespoons cayenne pepper
1 tablespoon salt
1 tablespoon pepper
2 pigs tail, halved
1 tablespoon onion powder
1 teaspoon garlic powder
4 dried arbol chiles, seeded
2 dried thai bird chiles, ground
1 cup plus 1/4 cup distilled white vinegar
3/4 cup honey
3 large garlic cloves, peeled
2 fresh red thai bird chiles, roasted
1/2 tablespoon salt
4 tablespoons salted butter
1/2 cup cambozola cheese or gorgonzola
1 cup creme fraiche
1 ounce chopped of fresh mint
2 tablespoons chopped fresh parsley
1 tablespoon Worcestershire sauce
1 tablespoon vegetable oil
8 ounces Brussels sprouts
2 tablespoons unsalted butter
3 ounces pistachios
1 tablespoon lemon juice
1 pinch salt
1 ounce parmesan cheese, grated

Steps:

  • Special equipment: smoker.
  • Preheat a smoker to 250 degrees F.
  • For the chili rub and pig tails:.
  • Combine the paprika, mustard powder, sugar, cayenne, salt and pepper in a bowl. Add the pig tails and toss to coat. Smoke the pig tails for 3 hours 30 minutes.
  • For the sweet chili glaze:.
  • Combine the onion powder, garlic powder, arbol chiles, dried Thai chiles, 1 cup of the vinegar and 1 cup water in a blender. Blend until smooth, and then strain.
  • Combine the honey, garlic, roasted chiles, salt, remaining 1/4 cup vinegar and 1/2 cup water in a saucepan. Simmer over medium-high heat until reduced to a syrup consistency. Mix in the strained onion-garlic mixture to combine, and then stir in the butter. Bring the sauce to a boil, and then remove from the heat.
  • For the dipping sauce:.
  • Beat the Cambozola in an electric mixer until smooth. Add the creme fraiche and mix until incorporated. Mix in the mint, parsley and Worcestershire.
  • For the Brussel's sprouts:.
  • Heat the oil in a saute pan over medium heat. Add the Brussels sprouts and cook 3 minutes. Turn, add the butter and pistachios and continue to cook until the Brussels sprouts and butter are golden brown, 5 minutes more. Add the lemon juice and salt and toss to coat. Garnish with the Parmesan.
  • Heat a grill pan or grill over high heat. Grill the pig tails to heat through, then toss with the chili glaze. Serve the pig tails with the blue cheese dipping sauce and crispy Brussels sprouts.
