- For the fried green tomatoes: Pour the vegetable oil into a Dutch oven or heavy-bottomed pot and attach a deep-frying thermometer. Heat the oil over medium heat to 350 degrees F. Line a baking sheet with paper towels and top with a cooling rack.
- Set up 3 low-sided dishes to make a breading station: To the first dish, add the flour, salt and black pepper and stir to combine. In the second dish, beat the buttermilk with the eggs. In the third dish, stir together the cornmeal and panko.
- Using one hand, dredge both sides of the tomato slices in the seasoned flour, shaking each piece to remove any excess. Next, using the other hand, dip the tomato slices into the egg mixture, allowing it to drip before moving onto the third dish. Using your first hand, coat the tomato slices in the breadcrumb mixture evenly on both sides.
- Working in batches, carefully place the breaded tomatoes into the hot oil. Fry until golden brown and crispy, about 30 seconds per side. Transfer to the cooling rack and sprinkle each slice generously with more salt.
- For the dipping sauce: Put the mayonnaise in a bowl, add the hot peppers and pepper juice, paprika, sugar and salt and stir to combine. Serve the fried tomatoes immediately with the dipping sauce on the side.
MEME'S FRIED GREEN TOMATOES
Every week or so, it seems that the movie Fried Green Tomatoes airs on one of the myriad cable television stations. I watch it every time. It's a sweet story, and unlike most "Southern movies," the accents are not too bad. One of my favorite scenes is when the Kathy Bates character, Evelyn Couch, takes a plate of fried green tomatoes to Ninny Threadgoode, played by the incomparable Jessica Tandy, for her birthday. I like the way she thinks! Don't make the mistake of coating too many tomatoes at a time. The coating won't stick and the tomatoes will become soggy. Set up a workstation with the eggs and dry ingredients leading to the skillet of oil. Your tomatoes will taste better and it will help with cleanup.

- Break the eggs into a shallow bowl and season with salt and pepper. Combine the cornmeal and flour in a second shallow bowl and season with salt and pepper.
- Line a plate with paper towels and set near the cooktop.
- Heat the oil in a large skillet over medium heat. Working a few at a time, season the tomato slices lightly on both sides with salt and pepper. Dip the tomato slices into the egg mixture and shake off the excess. Place the dipped slices in the cornmeal mixture, sprinkle breading over, and press to adhere. Turn over and repeat to coat on both sides. Gently shake off the excess and place without crowding in the heated skillet.
- Fry the tomato slices until they are golden on one side, about 3 minutes, then gently turn them with an offset spatula or metal turner and continue cooking until golden on the other side. Remove them to the prepared plate. Season with salt and pepper and serve immediately.
- Not so long ago, dinner was served at noon all across the South. Midday dinner seems confined to Sundays now, but within the past generation, it was the main meal of the day. This was not a soup-and-salad combination or a sandwich with a bag of chips. Dinner was a full meal of meat, vegetables, and cornbread or biscuits. The women did the cooking in the cool morning before the day became too hot, and dinner was served when farmers needed to escape the hot sun.

- In a deep-fryer, preheat oil to 350 degrees F.
- Season tomatoes, on both sides, with salt and pepper. Place flour and garlic powder in a shallow dish. In another shallow dish, beat eggs with the milk. In another dish, mix bread crumbs with cayenne and paprika. Dredge tomatoes through the flour, then the eggs, and then through the bread crumbs. Add only a few pieces to the fryer at a time, so they can cook evenly, about 2 to 3 minutes. Drain on paper towels and serve with Buttermilk Dipping Sauce:
- In a small saucepan over medium heat, combine the apple cider and brown sugar. Allow to reduce until thick and syrupy. Remove from heat and allow to cool.
- In a medium bowl, add buttermilk, mayonnaise, BBQ sauce and lime juice and whisk well. Add in the scallions and the apple cider mixture. Cover and refrigerate until ready to serve with Fried Green Tomatoes.
FRIED GREEN TOMATO SANDWICHES

- Make the sauce: Combine the mayonnaise, parsley, scallions, hot sauce, Worcestershire sauce, and salt to taste in a bowl. Cover and refrigerate.
- Slice the green tomatoes 1/4 inch thick and place in a large bowl. Combine the vinegar, sugar and 1 tablespoon salt in a saucepan. Put the pickling spice in a tea ball or tie in a square of cheesecloth with twine; add to the saucepan along with the dill. Simmer over medium heat, stirring, until the sugar dissolves, about 5 minutes. Add 2 cups cold water and pour over the green tomatoes. Let sit at room temperature 1 hour, 30 minutes.
- Whisk the flour, cornmeal, chili powder and 1 teaspoon salt in a shallow dish. Whisk the eggs, 2 tablespoons water and 1 teaspoon salt in another shallow dish. Heat about 1 inch of peanut oil in a large skillet over medium heat until a deep-fry thermometer registers 375 degrees F.
- Drain the green tomatoes and pat dry with a paper towel. Working in batches, dredge the green tomato slices in the flour mixture, then dip in the egg mixture and dredge again in the flour mixture. Fry in the hot oil, turning once, until the crust is golden, 3 to 4 minutes per side. Drain on paper towels and sprinkle with salt.
- Spread each slice of bread with some of the sauce. Layer the fried green tomatoes and the yellow and red tomatoes evenly among 6 bread slices. Cover with the remaining bread slices.
FRIED GREEN TOMATOES WITH RIPE TOMATO SALSA

- Sprinkle the flour over a plate. Place polenta into a medium bowl, season and mix well. Place eggs in a small bowl and beat. Lightly coat a green tomato slice first in the flour, dusting off any excess, dip in the egg, then coat in polenta. Repeat with remaining slices.
- Heat a shallow pool of oil in a large frying pan. Fry the coated tomatoes in batches until golden and crisp on both sides, turning them over with a fish slice. As they are done, drain well on kitchen paper and keep warm in a low oven while you fry remaining batches.
- To make the salsa, mix all the ingredients together in a small bowl, then season with salt and pepper. Serve the fried green tomatoes hot, with the salsa spooned over.
