VEGAN VEGGIE LASAGNA
This veggie lasaga is packed with veggies. I started with a tofu mixture from How It All Vegan, and then went from there. (I expect that the nutrition info is off on the cholesterol. Regular lasagne noodles are vegan, and would have no cholesterol..the Zaar nutritional content is showing cholesterol. However, if you use the no-bake lasagne noodles, those are not vegan, so if that is important to you, then keep that in mind.)

Steps:
- Preheat over to 350 degrees.
- In a blender or food processor, combine the tofu, soy milk, oregano, basil, salt, lemon juice, garlic, and onion. Blend until the mixture has the consistency of ricotta cheese.
- Stir in the chopped spinach and set aside.
- In a large saucepan, saute the red pepper, mushrooms, zucchini, carrots in the oil until crisp-tender. (Feel free to add any other veggies that you like. I just use the ones listed as a starting point.).
- Stir in the tomato sauce and water.
- Bring to boil, then cover, reduce heat and simmer for 30 minutes, stirring occasionally. (If you find that the veggie mix is too thin, uncover for last 5 minutes.).
- Cover bottom of lasagna pan with 1/2 cup tomato sauce.
- Layer with lasagne noodles, trimming to fit, if needed.
- Cover with a layer of 1/2 the tofu mixture, then layer of noodles, then layer of 1/2 the veggie mixture, then layer of noodles, then remaining tofu mixture, another layer of noodles, and then top with the remaining veggie mixture.
- Bake, uncovered for 30-35 minutes. Remove from oven and let stand 5-10 minutes before cutting and serving.

Steps:
- Pour 800ml boiling water over the dried porcini and leave for 10 mins until hydrated. Meanwhile pour 1½ tbsp oil into a large saucepan. Add the onion, carrot, celery and a pinch of salt. Cook gently, stirring for 10 mins until soft. Remove the porcini from the liquid, keeping the mushroomy stock and roughly chop. Set both aside.
- Add the garlic and thyme to the pan. Cook for 1 min, then stir in the tomato purée and cook for a minute more. Pour in the red wine, if using, cook until nearly reduced, then add the lentils, reserved mushroom stock and cans of tomatoes. Bring to the boil, then reduce the heat and leave to simmer with the lid on.
- Meanwhile, heat a large frying pan. Add 1½ tbsp oil, then tip all of the mushrooms into the pan, including the rehydrated ones. Fry until all the water has evaporated and the mushrooms are deep golden brown. Pour in the soy sauce. Give everything a good mix, then scrape the mushrooms into the lentil saucepan.
- Stir in the Marmite, then continue to cook the ragu, stirring occasionally, over a lo -medium heat for 30-45 mins until the lentils are cooked and the sauce is thick and reduced, adding extra water if necessary. Remove the thyme sprigs and season to taste.
- Heat the oven to 180C/160C fan/gas 4. To make the white sauce, heat 3 tbsp olive oil in a pan, whisk in the flour and cook for a couple of minutes to get rid of the raw flour taste, then slowly whisk in the soya milk. Cook out until you have a creamy sauce, about 10 mins. Season to taste, adding a good grating of nutmeg.
- Spread a third of the ragu on the bottom of your ovenproof dish, then top with 6 lasagne sheets, followed by another third of the vegan white sauce, then another third of the ragu. Top with the remaining lasagne sheets, then the remaining ragu and finally, spread over the rest of the white sauce. Sprinkle over the nutritional yeast, if using, and bake for 45 mins-1 hr until the pasta is cooked.

Steps:
- Saute sweet and hot sausage in a large skillet over medium heat; stir with a wooden spoon to break up the pieces until the sausage is well browned, about 8 minutes. Set sausage aside. Add the red and yellow pepper to the sausage fat, and saute until softened, 6 to 7 minutes. Set aside. Add the onions to the remaining fat, adding olive oil if necessary. Reduce heat to medium low, and saute until onions are very soft but not brown, 10 to 15 minutes. Set aside.
- Heat the olive oil in a medium pot over medium heat. Add the garlic and crushed red-pepper flakes, and saute until garlic is translucent. Add the canned tomatoes and tomato paste. Reduce heat to low, and let the mixture simmer until it has thickened and reduced, about 30 minutes. Add the reserved cooked sausage. Season with salt and pepper. Remove from heat, and set aside.
- Heat oven to 375 degrees. Spoon 1/2 cup tomato sauce into the bottom of an 8-by-8-inch oven-safe glass dish. Place a layer of fresh lasagna sheets on top. Spread half the ricotta over pasta; cover with spinach. Cover with second layer of fresh pasta. Sprinkle pasta with half the fresh mozzarella and half the Parmesan. Cover with 1 cup sauce and a third layer of pasta. Spread pasta with remaining ricotta, cover with sauteed onions and peppers. Cover with a final layer of pasta, top with remaining sauce, sprinkle with remaining mozzarella and Parmesan. Place in the oven to bake until sauce is bubbling and top is golden brown, 35 to 45 minutes. Serve.
MEGHAN'S EASY LASAGNA
Very easy, flavorful lasagna - a real crowd pleaser! Great for leftovers because it tastes even better the next day - as a matter of fact, you can make it ahead of time and just reheat it. You can also substitute the beef with ground turkey and go with low-fat cheeses - still tastes great.

MEGAN'S LASAGNA
I have made lasagna this way from the first time I made lasagna. There are some people who use cottage cheese rather than ricotta, but it is just not right to me! Grandma W would never forgive me if I didn't make it this way, the true Italian way to her, with ricotta! You can always use the lasagna noodles you don't have to cook...

MEGAN'S INCREDIBLE SAUSAGE SPINACH LASAGNA
This is really good with the combination of sauces. I am even thinking it would make a good vegetarian lasagna (since my daughter is now vegetarian)...if you don't want to cook the noodles, buy the kind that cook while baking.

Steps:
- 1. Cook and cool noodles. Cook and drain spinach WELL. Cook sausage with onion until cooked through and make extremely crumbly so that you can layer.
- 2. Put a little of the combined sauces in the bottom of a 9x13 pan, then put a layer of noodles (this will prevent them from sticking). Cover with 1/3 of the ricotta, then cheese, spinach and a second layer of noodles.
- 3. Layer second layer of ricotta, sausage, and drizzle with both sauces. Top with a layer of noodles, and layer remaining ricotta, sausage, second 1/3 Italian cheese blend, and a last layer of noodles. Sprinkle with Italian seasoning, cover with remaining cheese. Drizzle with remaining alfredo, then cover to edges of the pan with the pasta sauce. Use more if necessary to prevent noodles from burning.
- 4. Bake at 350 degrees 45-55 min. Let stand 10 min.

- First, cook the lasagna noodles according to the package instructions, Make sure to use salty water so the noodles do not stick together.
- While the lasagna noodles are cooking, make the tofu ricotta. Add all of the ingredients including the firm tofu, spinach, nutritional yeast, parsley, lemon juice, garlic powder, Italian seasoning, salt, and ground pepper to a blender and blend until smooth. If needed, add in 1-2 Tbsp oat milk to thin out the ricotta and make it spreadable. When finished, set aside,
- Next, make the puttanesca sauce, Add the olive oil to a cast iron skillet (or any sauce pan) and turn on the heat. Once the oil is hot, add in the shallots & garlic stuffed olive slices and sauté about 3 minutes. Then, add in the sliced sweet cherry peppers, sun-dried tomatoes, and capers and sauté another 5 minutes. Finally, add in the canned tomato sauce and cook over low heat for an additional minute. Remove the pan from the heat and set aside
- Preheat the oven to 350F and layer the lasagna. Start by adding about 1 cup of sauce to the bottom of a 9*13 inch casserole dish. Then, add on 4 lasagna noodles, slightly overlapping so no space remains. Top the noodles with half of the tofu ricotta and use a spatula to evenly spread it over the noodles.
