SPAGHETTI-AND-MEATBALLS CASSEROLE
Eat spaghetti and meatballs by the slice instead of the bowl. Each slab of this kid-friendly casserole has tiny meatballs and pockets of gooey cheese. Add slices of leftover cooked Italian sausage if you have it.

- Preheat the oven to 450 degrees F. Brush a 9-by-13-inch baking dish with oil.
- Bring a large pot of salted water to a boil. Cook the spaghetti according to the package instructions for al dente. Strain, add back to the pot and toss with some oil.
- Meanwhile, make the meatballs: Soak the bread with 2 tablespoons of the milk in a medium bowl, tossing occasionally, until completely soft, about 5 minutes. While the bread softens, combine the beef, pork, 1 of the eggs, 1/3 cup of the Parmesan, the minced garlic, 1 teaspoon salt and a few grinds of pepper in another medium bowl. Add the soaked bread to the meat mixture. Gently incorporate all the ingredients with your hands until well combined.
- Brush a baking sheet with oil, and drop teaspoonfuls of the meatball mixture onto it. Brush your hands with a little oil, roll the mounds into balls and space them out evenly on the baking sheet. Bake until golden brown and almost completely cooked through, about 10 minutes.
- Lower the oven temperature to 350 degrees F. Add the meatballs, mozzarella and sun-dried tomatoes to the cooked pasta, toss to combine and transfer to the prepared baking dish.
- Whisk together the marinara sauce, the remaining 5 eggs, 2/3 cup Parmesan and 1/4 cup milk, the sliced garlic and 1 teaspoon salt in one of the empty bowls. Pour the sauce mixture over the spaghetti mixture, and press the spaghetti into a flat, even layer. Sprinkle the parsley over the top. Cover with foil, and bake until the casserole is hot and almost completely set, about 30 minutes. Remove the foil, and continue baking until the top of the casserole is set, about 10 minutes more. Let cool for a few minutes. Cut into squares, and serve warm.
SUNNY'S EASY CHEESY MEATBALL SUB CASSEROLE

- Preheat the oven to 350 degrees F. Spray a 9-by-13-inch baking dish with nonstick cooking spray.
- Heat the olive oil in a medium skillet over medium heat. Add the onion and green pepper, then sprinkle with salt and pepper and saute until tender, about 5 minutes. Add the garlic and Italian seasoning and cook for another 1 to 2 minutes. Remove from the heat and set aside.
- In a large bowl, combine the meatballs, marinara sauce and cheese. Add the cooked onion and pepper mixture. Mix to combine, then transfer to the prepared baking dish. Top with the crushed croutons. Bake until the cheese is melted and bubbling, 30 to 35 minutes. (If the topping starts to get too brown, loosely cover with foil toward the end of the bake.)

- Preheat oven to 400 degrees farenheit.
- Saute beef and onion until no pink remains in the meat and onions are translucent. Drain. Season with salt and pepper.
- Thoroughly grease a 9" x 13" baking dish. Spread meat mixture into baking dish, then sprinkle with 1-1/2 cups of the shredded cheese. Set aside.
- In a separate bowl, combine the Bisquick, milk and beaten eggs. Stir well, until nearly smooth. Pour over meat mixture.
- Bake for 25 minutes, or until a knife inserted in the center of the casserole comes out clean. Decorate the top of the entree with sliced tomatoes, then remaining cheese. Return to oven for approximately 5 minutes, or until cheese is melted and tomatoes are slightly softened.
- Delicious!

- Cook pasta according to directions.
- Meanwhile, in a Dutch Oven, cook the ground beef, sausage, mushrooms, onion, and green pepper over medium heat until meat is no longer pink; drain.
- Drain pasta; add to the meat mixture.
- Stir in the tomatoes, sausage and garlic spaghetti sauce, salsa, and pepperoni.
- Divide half of pasta mixture between two greased 13X9 in baking dishes.
- Sprinkle each with1/4 cup swiss cheese, 1 cup mozzarella cheese, and 1/3 cup parmesan cheese.
- Spread 3/4 cup three-cheese spaghetti sauce over each.
- Top with remaining pasta mixture and three-cheese spaghetti sauce. Sprinkle with remaining cheeses.
- Cover and freeze one casserole for up to 3 months.
- Cover and bake remaining casserole for 25 minute at 350 degrees. Uncover, bake 10min longer or until cheeses melt.
- To use frozen casserole: Thaw in the refrigerator overnight. remove from fridge 30 min before baking. Cover and bske at 350 degrees for 45 minute Uncover and bake 10 min or until cheese is melted.

- Trim crusts from bread, cut into cubes, cover bottom of a 12x7" casserole and sprinkle with cheese.
- Beat eggs, add milk and mix well.
